Braciole/ A family favorite

Today as I was rolling my Braciole I called our son and said "Come over I'm making your favorite" and he knew exactly what I meant.   My recipe is very basic and I think easy to do.(You just have to try it!)  

Rolling and tying may seem to be challenging but it isn't if you allow yourself some time.  Once you do it, it is a breeze!



Cooks Note:When I make Braciole, I season, roll and tie with twine before browning.




Before adding to sauce either bake or fry until lightly browned.

  Note:  This recipe for Braciole freezes well. I have included some pictures.  Hope they are useful!. Happy Cooking!!!!









Here is my recipe:

2 lb. thinly sliced round steak (trimmed)
1/2 cup seasoned bread crumbs
1/2  cup grated Pecorino Romano cheese
Fresh or dried parsley
1 or 2 cloves minced garlic (garlic powder can be used as well) (about 1/2 tsp. total if using garlic powder)
olive oil to rub on trimmed steak
salt and pepper

Trim and cut round steak into approx. 4 inch slices ..If meat still seems thick, pound on both sides..Rub with olive oil and sprinkle with seasoned breadcrumbs, garlic, salt, pepper and Pecorino Romano cheese.. Roll from wide end in toward center. . You can then cut in half for easier browning or leave as is making sure it will fit in your pan easily.

 I use a toothpick to hold the braciole together until I am ready to tie with thread( I use light colored thread or cooking string )as it is easier to see when you are about to remove.). 

  Bake at 400 degrees until browned..Add to basic sauce and cook for several hours.   You can also fry braciole in a few tablespoons olive oil until they are browned instead of baking them.  I make a basic sauce with tomato paste, tomato puree or crushed tomatoes, garlic, basil, salt and pepper or you can add the braciole to your favorite jarred sauce and cook for 2 to 3  hours slowly until meat is tender..  They also make great sandwiches ! 

 Delicious and a nice change from meatballs in sauce..  


Don't forget the garlic inside and be sure to add some to your sauce..Oh that garlic..just love it!!!



About 2 lb. round steak( I trimmed and cut to size)


Generously sprinkle with above ingredients




Use a long piece of thread or cooking string and put thread under steak and knot on top and keep rolling and tying several times to hold.




In sauce and starting to cook..Will be done in approx. 2 to 3 hours depending on thickness of meat..

Braciole Sandwiches! Luncheon Special!

Braciole sandwiches topped with Red sauce, Italian and Mozzarella Cheese. Oh so good!

When I make a pot of sauce most times I add meatballs, sausage or if my family is lucky Braciole.  Everyone in my family love it. It was one of my mom's specialties(another of Dad's favorite dishes) and I love making them as well.  There are a few pieces of this yummy baked steak left so today I made a great steak sandwich on  great Italian style rolls.

I have heard making Braciole, filling the center with bread stuffing(mom did that sometimes) or placing a hard boiled egg in the center; rolling and cooking it.  One of my friends mother- in- law made hers that way.  I don't care for eggs so my recipe won't include eggs.

 My recipe is easy to do and takes only a few ingredients and a little patience to roll and tie them but they are worth the effort.

Fire roasted tomatoes, garlic and chicken! Crockpot ready!

Another crockpot dish that offers a change of a traditional red sauce by using Hunts fire roasted tomatoes and garlic sauce.  




I had wanted to make a chicken meal for our dinner using my crockpot so I'm playing around with a new item I came across at the grocery store last week.

Using frozen chicken breasts I had thawed overnight I figured today was as good a day to try something new since it was raining and I didn't have a specific meal planned.




1-15 oz.can Hunt's fire roasted and garlic tomatoes
1-15 oz. can organic tomato sauce(you can use your choice)
Mix above together before placing over chicken.
1 medium onion diced
1 sprig fresh thyme
Several fresh parsley leaves
3 boneless skinless chicken breasts
Salt and pepper 

Place chicken in crockpot. Sprinkle with salt ,pepper and diced onions.  Add tomato mixture. Set crockpot to high and cook for approximately 3 1/2 hours or on low for 5 hours. Serve over rice and a vegetable as side.

I made rice pilaf , peas and an extra side of my homemade scalloped potatoes.

Barbeque Meatloaf

When I was working, a friend of mine, Andrea, shared this recipe with me and my family enjoyed it so today I'd like to share it with you.  Sweet and moist and easily served with a side of mashed potatoes or what you choose.  No fuss , add a salad or corn on the cob.  I like to  put a little of the sweet sauce on the potatoes. A nice change from your basic meatloaf recipe and leftovers make a great cold sandwich..The only tweak I do to this recipe is that I use beef and pork..whereas she used all beef.  Hope you try it!

1 1/2 lb. ground beef( I made it today with  ground beef and pork).
1  medium onion, diced (I grate my onion)
1 egg slightly beaten
1 1/2 tsp. salt
1/2 tsp. pepper
1 cup bread crumbs
2 (8 oz. cans) tomato sauce
1 tablespoon Worchestersire sauce
3 tablespoons vinegar
1 tsp. Dijon mustard
3 tablespoons brown sugar
1/2 cup water


Mix, ground meat, onion, bread crumbs, egg, salt and pepper and 1/2 can tomato sauce..Form into a loaf..Spray an  oven proof pan with Pam. Place meatloaf in pan.. Whisk the remaining tomato sauce, vinegar, dijon mustard ,brown sugar, Worchestersire sauce and 1/2 cup water.  Pour sauce over meatloaf.   Bake uncovered approx. 1 to 1/2 hours at 350 degrees..Baste meatloaf every so often with the sauce.

 Baste with sauce every so often.

It won’t last long cake

Hi everyone!  When making this recipe I cut back on sugar to 1 cup.



A new cake recipe.

It's very good. It's moist and it has fruit in it. There isn't anything better than a few ingredients that combined make for a great dessert. In a way it reminded me somewhat of a spice cake.  Personally I would cut back on the amount of cinnamon.

Easy to make cake in a bunt pan or 13x9.  Top with a sprinkle or two of powdered sugar and it makes a great cake to have with a cup of tea or coffee.

IT WON'T LAST CAKE
Ingredients:
3 cups all-purpose flour
1 1/3 cups vegetable oil
11/2 cups white sugar
3 eggs, beaten
1 cup crushed pineapple with juice
1 cup maraschino cherries
2 cups mashed bananas
1 cup chopped pecans or walnuts
1 1/2 teaspoons vanilla extract
2 teaspoons baking soda
1 1/2 teaspoon ground cinnamon
1 teaspoon salt
Powdered sugar(optional)


Directions:
Grease and flour a 9 or 10 inch bundt pan. Preheat oven to 350 degrees F.
Mix all the ingredients together. Pour into prepared bundt pan.
Bake for about 1 1/2 hours at 350 degrees F (175 degrees C).
