Christmas 2023

Merry Christmas!




Our day was just beautiful.  We started the day by taking our time relaxing and enjoying a quiet morning with coffe and my homemade biscotti.


The afternoon was spent enjoying our son and his family.

My daughter in law did a great job making lasagna, ham, turkey breast , fresh green beans and scalloped potatoes.

We enjoyed seeing our granddaughters and their boyfriends too.  With their jobs ;visits are pretty much obsolete so this year was really was special.









A surprise of oven roasted chestnuts made our day.  It’s an Italian trad.

Boil and broil lobster casserole


Tonight we were blessed to have a quiet and uneventful evenings.

Easy lobster casserole, baked potatoes , Cole slaw and some fresh bread.

I could not ask for a better evening.  Miss my family but life must go on.

Everyone is safe , well and happy so we have  no complaints just plenty of grace and gratitude.

***Lobster casserole.

Boil frozen lobster tails in vinegar and red pepper for 15 minutes after lobster tails have turned red.

Remove and drain lobster on paper towels until cooled.  Remove shells.

Note:  FYI: to remove shells.


I boil my lobster tails, drain and allow to cool.  I then crack the shell (I press down on side of tail using a clean dish towel )and the lobster removes from the shell easily.  In a separate pan I place 1stick of butter, 2 minced or i tsp. Garlic powder,1tsp. Dried Parsley and a pinch of paprika.  Simmer until the Butter is melted.

In a casserole I place tails. Pour butter mixture over tails and place in oven not too close to coils.  Broil for a few minutes making sure to not allow  the Tails to brown too much.  You can sprinkle seasoned breadcrumbs if desired watching carefully not to burn the crumbs.



Place shelled lobster tails in baking dish and pour butter mixture over tails 

Broil on lower rack until slightly browned.

Stuffed Dates with almonds

Updated recipe.


This was a first try and it was easy.  Hubby loves  dates so I figured I'd give the dates a whirl and stuff them with a few almonds.

I did almost but not exactly as the recipe below says and I remember my Mom doing it the same way. 

Hubby said they tasted delicious so I think I'll serve some for Christmas.

Very easy to do with great results. 

Pitted dates 
Whole almonds( choose smaller size almonds)
Confectionery (powdered sugar)

 



Here's the recipe I followed.

Preheat an oven to 350°F.

  1. Place the nuts on a baking pan in the middle rack of the oven. Bake

  2. for 15 minutes stirring frequently.

  3. Cool for 10 minutes before use.

  4. Place one almond inside the date. Roll in powdered sugar if

  5. desired. Place on wax paper-lined baking sheet and refrigerate for at least 1 hour before serving. Sprinkle with powdered sugar.
