Crockpot Pineapple beef

Tonight’s early dinner.

I didn’t feel like making a brown gravy with this roast so I improvised and we enjoyed this crockpot  meal.

Small top round roast, ( about 1 lb. 4 oz.) salt and pepper and seared in oil
and added to my crockpot with one jar pineapple salsa. Slow cooked for about 5 hours.

Removed roast allow to rest for 5 minutes and slice.  Add sliced roast to liquid salsa drippings.

Our side tonight.
Sautéed thin slices of zucchini with onions, salt and pepper.  Served with brown rice.  Easy summer meal. Slight bite to the salsa. Enjoy!!

Pork tenderloin in crockpot

I made this recipe exactly as it was written.  So good that I’ll make it again.

One error my drippings did not thicken as I expected.  Still yummy!  Enjoy!!

2-4 lb pork roast
1 cup broth
¼ cup balsamic vinegar
¼ cup soy sauce
2-4 TBSP honey
2 tsp minced garlic
2 tsp cornstarch

Place tenderloin in slow cooker.( I cut mine in thick pieces) Combine remaining ingredients (except cornstarch) in a 2-cup measuring cup. Whisk together and pour over roast.
Cook on low 10-12 hours for that fall-apart, insanely tender type of meat. (Or on high 6-8 hours.)
Prior to serving, ladle out about 1/4 cup of the juice in the crock pot and strain into a measuring cup.
Whisk in 2 tsp cornstarch. Add in enough juice to make 1 cup.
Microwave on high for 30 seconds and whisk again. Drizzle sauce over meat prior to serving.

Lasagna sauce

Let’s make some hearty lasagna sauce today.

Today it’s a little different than I usually do because I used bulk sausage more than I usually do in a red sauce recipe.

My typical ***meat sauce is usually a  combination of ground beef and pork.

Note:  I used what I had in my pantry today.  It is delicious!

1 -28 oz. red pack crushed tomatoes
1 -28 oz.. Hunts tomato purée  large
1 - 28oz. Happy Harvest crushed tomatoes ( Aldi brand)
1 -15 oz. Hunts sauce
1 - 4 oz. small Happy Harvest tomato paste
3 minced garlic cloves
4 fresh basil leaves

I lb. Bulk ground sweet Italian sausage
1/2 lb.  Bulk ground Hot Italian sausage
1 lb.  Ground Chuck

To assemble lasagna you will need:

A 13 x9 inch casserole dish
Fresh above sauce
1-15 oz. Whole milk Ricotta
1-egg beaten
Shredded or sliced mozzarella cheese
Pecorino Romano cheese for top.

I package Barilla no boil lasagna pasta

Here’s my baked lasagna

Fresh garlic and basil.  3 or 4 minced garlic.  3 large basil leaves.

I fried the ground (bulk) meat in olive oil while breaking it apart.  Added the garlic and then added  the sautéed  ground mixture it my crockpot with fresh basil.  Cooked on high for 2 hours.  Then low for 2hours. Delicious!

Enjoy!

****Note:  this recipe can be made on top of the stove in a large Dutch oven making sure to stir often so it won’t stick to pan. Cover slightly with a lid.

Thinly sliced Roast Beef! One of our family favorites

Updated 7/15/2024

Updated version 12/19/2022

***I used a bottom round beef roast and placed in crockpot.  Added 1 package onion soup mix and water.  Note:  No searing this time.

Cook high 4 hours.

I also strained liquid and made gravy on top of stove.

Approximately 2 cups room temperature strained liquid in a medium pot.
 I Add water to make
the 2 cups if there isn’t enough of drippings.

Whisk approximately 3 T flour into warm liquid and heat on medium until it thickens.

Perfect!

Crockpot recipe of roast below.

2 1/2 lb. Eye round roast.
1 package onion soup mix
1  1/2 cups warm water.

Mix onion soup mix with warm water.  Set aside.

Sear roast in oil on all sides.  Place in crockpot.  Add onion soup mixture.
Cover and cook on low approximately 3 hours or until meat thermometer registers beef. Allow to rest 10 minutes and slice.

Strain drippings.  Add to sliced beef.

This recipe would make awesome warm beef sandwiches (crusty rolls) or thicken juice for gravy or serve with yummy juice and sides.

For those who love beef you can't go wrong with this easy recipe.

1/11/17

A good choice for a family dinner and nothing makes slicing easier than an electric knife! If you like your roasts sliced thin this is the way to go and it makes a great gift.  I love mine!

I love my electric knife!  How many can say that?  If you don't have one it is a must!

For those of us who can't seem to get that roast cut thin enough this is a must have tool.  I have had mine for years and from Biscotti to Roasts this tool works wonders and slices perfectly.

Slice thin
**3 # or more bottom round or eye round roast.  I usually use eye of round.

3 lb.(approx.) bottom round or eye round roast(Sear on top of stove for richer gravy color.
1 to 2 cups beef broth or stock ( I use Swanson)
canola oil
salt and pepper
Onion powder

11/9/2020

Brown roast  in oil on top of stove with a few T of oil  adding pinch of salt and pepper and onion powder.

After you have seared/browned your roast, add broth, cover and bake in  350 degree oven for approx. 2 1/2 hours or until meat thermometer reaches desired temperature.  Remove from oven . Take roast from pan and cool slightly. It will slice better when it has rested a bit.

** Gravy: In the pan that has the drippings, skim any fat and add enough cold water to equal 2 cups. (if you have more drippings you will have to adjust flour amount). Whisk together while adding 5 T. Wondra quick mixing flour.  Place on medium heat and stir constantly until thickened and bring to a boil for approx. 1 minute.

Crockpot easy!  Follow recipe above).  Place roast in a crockpot after seasoning, add broth/stock and depending on how long you will be out either set on high for 3 to 4 hours or low for 6+ hours.

Remove from crockpot, thinly slice and serve Au jus with sides of choice.

Crockpot country style ribs, my way

I decided to try my own recipe for my country style boneless spareribs and we were very pleased..

Approximately I lb.  Boneless style country style spareribs
1/2 cup Sweet Baby Rays Barbecue sauce
1/2 cup regular Gingerale

Brown ribs on cookie sheet in oven at 425 for about 10 minutes

In your crockpot on high,  add sauce and gingerale.  Stir to combine. Place browned spareribs making sure ribs are covered with sauce mixture.. Add more gingerale if necessary.

I cooked on high for 2 hours and then 2hours on low.  Pulled apart ribs with two forks . Easy to shred.  So tender!

Cook 4 to 6 hours depending on desired cooking temperature.

Pile on roll adding some sauce!  Add French fries as a side.  Cole slaw would have been nice but I didn’t have the ingredients for it.

Enjoy!

Chicken meatballs

Updated photos 5/6/2024

If you’re looking for using chicken instead of beef for your next meatballs here’s my new recipe.

In my opinion ground chicken seasonings have to be bumped up for flavor and moistness.  Chicken can be dry and you’d like your meatballs to be as moist as possible.

I lb. Healthy ground chicken
1 egg beaten
2 cloves minced garlic
3/4 to 1 cup  seasoned panko breadcrumbs
1/2 tsp. Onion powder
1 tsp. salt
Some pepper
1/2 cup pecorino Romano cheese
1/4 cup dried parsley
A little chicken broth(optional)

Mix all above ingredients. Mixture will be soft so rub a little olive oil on the palms of your hands to roll easier.

Place meatballs (you decide what size) on parchment paper lined cookie sheet.

Note:  One lb. Of ground chicken usually makes about 1dozen large meatballs.

Bake 400 degrees for 15 to 20 minutes . Remove from oven.

After cooling  freeze meatballs in large freezer bags until needed.

Todays meatballs I added to my fresh sauce.

Enjoy!

Crockpot steak Pizzaiola, my way

New photos of Steak Pizzaiola 10/9/2023

Gold mashed potatoes , pizzaiola garnished with pecorino Romano and mozzarella.  Side of buttered baby broccoli.  Yummy!

Round steak was used today for the meal.

A good recipe I created today with a pound of thick cube steak I had in my freezer.

Thaw meat or microwave on quick defrost.

***Note:for this recipe a cheaper cut of meat can be used.

Approximately 1pound round steak cut in medium size pieces.I.
1 medium onion sliced thin
Olive oil
Chopped fresh basil (dried can be substituted)
Chopped fresh parsley(dried can be substituted)
1/2 tsp. Dried oregano ( I don’t care for it but if you do that’s your choice)
2or 3 minced garlic cloves
Salt
Black or red pepper( ***if you like a bite to your sauce use red pepper)
1 -28 oz. can purée or crushed tomatoes

1.  Sauté onion in oil until it starts to brown and caramelize slightly.  Add minced garlic and cook slowly.  Toss basil and parsley into mixture slowly.  Remove from heat and place in a small dish.

2.  In the same pan you cooked the onion/garlic add the 4 (approximately)medium pieces of steak.  Cook on medium heat with some salt until slightly browned on each side.

3.  Add browned steak to crockpot.  Top with onion, garlic, basil, parsley mixture on top of steak and add tomatoes.

4.  Set crockpot heat on low and allow to cook approximately 6 hours or until steak is tender.

Serve over pasta or as I did smashed potatoes.  We had steamed Brussel Sprouts as our side.

Enjoy!

Red Beef stew

This recipe is super easy and so delicious.  Summers here and I’m multi tasking by using my crockpot so I can have a meal ready for later while I do laundry.  Mom’s Monday meal was homemade soup as many of our mom’s did.

1lb. Stir fry beef pieces or beef cubes ( your beef will cook quickly ).
I medium onion diced
Salt and pepper
1-15 oz. tomato sauce (3 small Aldi sauce) or use crushed tomatoes
2 cans water
I clove minced garlic
2 potatoes cubed
3 carrots cubed
1/2 lb. green beans (aldi frozen) (optional)

Sauté beef and onion in a little oil.
Drain any unnecessary grease.  My beef was super lean.

Add tomato sauce , carrots and water.  Cook on low 6 hours or high 4 hours.

Note;  I use my microwave to par cook my cubed potatoes and green beans in salted water. Drain and add to sauce 1 hour before serving.

Yummy!  Enjoy!

Adding more veggies is always an option,

Fresh Italian bread for sure!  Yummy!
