Pizza Sauce


Here I am yet again trying to master my hometown pizza recipe.  I did find nice flatbreads that had substance(not too thin) to use as a crust.  2 to a package and the bottom ingredients are perfect for two flatbreads or one large pizza.








Pizza Sauce
2 T. Butter
2 T. Olive oil
1-15 oz. can petite diced tomatoes (pulsed in food processor)
1 tsp. onion powder
1 tsp. dried basil
salt and pepper to taste
pinch baking soda(optional)

In a deep pan place butter and olive oil.  Allow butter to melt and blend with olive oil sauteing until starting to sizzle.  Add processed tomatoes, onion powder salt and pepper.  Note:  you can used crushed tomatoes for your convenience. 
Allow ingredients to simmer on low until tomatoes begin to reduce slightly.  Taste test.....If you find the tomatoes taste raw add a pinch of baking soda and stir.  The tomatoes will foam slightly...no worry and continue to cook for another few minutes.  Start to finish approximately 20 minutes.

While sauce is simmering shred cheese with your hand shredder. 

Pizza Topping
1/2 lb. American cheese shredded(buy a 1/2 lb. piece and shred)

1/4 lb. mozzarella cheese shredded(I bought already shredded
 mozzarella but fresh mozzarella would be better) . Grate cheese on a dish or piece of wax paper. Blend cheese together after grating with hands to even the ratio of cheese.  The key is to have the mozzarella cheese help to hold the cheese together when it's placed on the crust and baked.  Go easy on the mozzarella.

Add any other topping you might enjoy(cooked chopped sausage, thinly sliced peppers,mushrooms or pepperoni).  There are many toppings to choose from.  Make the pizza your way! Use can use a pizza pan, a pizza stone or if you are lucky enough to make your own crust why not try a cookie sheet pan.  Back home we call pizza in a sheet pan a tray of pizza.

Bake 400 degrees approximately 10 to 15 minutes or until cheese melts completely.

Flatbread pizza





I’ve been working on trying to perfect a perfect flatbread pizza.

This brand has a crust that is easy to satisfy your tastebuds.

I found it at Aldi’s grocery store.  Once you add your toppings and bake it for 5 to 10 minutes it’s as close I to a tasty pizza  as you can get. We like a crusty pizza but not cracker like and this is great!

You can make bruschetta using this crust too!  The options are many.

Here’s my topping recipe.  You can add to it if you like.  Enjoy!! 

We definitely did.  Back to Aldi I will go to pick up more of these flatbreads.

My recipe is as follows:

  I use Hunts or your preferred brand of diced petite tomatoes.

  This recipe makes 2 flatbread pizzas.

1- 15 oz can diced (I used diced today.)or you can use crushed tomatoes.

  I drain the tomatoes slightly and using my food processor blend until crushed.  ( you could probably used crushed tomatoes instead if you want.  To the tomatoes Add about 3/4 tsp.dried basil, 1 tsp. Onion powder,  salt  and  pepper to your taste. Stir well.

In a medium pan place about 1 tablespoon olive oil and 1  tablespoon  butter and cook on low and wait for it to simmer. Once simmering I add tomato mixture , cook on low for approximately 40 minutes.  It will reduce slightly.

Note: While simmering I put a pinch of baking soda in the tomato mixture. Pinch as 1/4 or less baking soda.

Stir well.  It will sizzle so keep stirring.  It will remove the acid from the tomatoes and sweeten the sauce.  No sugar necessary. That removes the acidity and no sugar is needed to sweeten it.

 I have worked and worked trying to perfect my pizza sauce.  We don’t care for oregano or garlic so I don’t use it.  Our hometown pizza is not loaded with extra seasoning.  The cheese is white American and a little mozzarella to hold it.  We love it.  I hope you try it and let me know.❤️

Note:The 15 oz can of tomatoes should be great for one large pizza or two flatbread crusts.  We make this recipe on this flatbread or in a tray shape using my homemade pizza dough recipe but this is definitely a quick option. (cookie sheet pan).

Grammy's Special Pizza!


Come and get it!  My special pizza!!!  No mozzarella for me!!






 **This recipe will make one large pizza or 2 personal pan pizzas.  Feel free to double recipe as needed.

1 pre-baked pizza shell or 2 small personal size pizza shells

1 cup fresh pizza sauce (use 1 can (15 oz) diced or petite diced tomatoes(with onions) and cook to reduce to your desired consistency) while adding 1 - 8 oz.Hunts sauce and
special seasoning (basil, onion powder, garlic powder, red pepper(optional)salt and black pepper and a pinch of oregano).












Directions:  Place small amount of olive oil in medium pan.  Add diced tomatoes, juice and all and Hunt's sauce.  Season with 2 leaves fresh or1/2 tsp. dried basil, 1/2 tsp. onion powder, 1/4 tsp. garlic powder,1/4 tsp. red pepper(optional) or more, pinch of salt, black pepper and oregano). Simmer until tomatoes and juice reduce to thicken.

 Depending on what type tomatoes you use you may need to add a pinch of sugar. It is not necessary but if you like a sweeter sauce add a   pinch to it.  (Note:)  You can place tomatoes in food processor if necessary if you prefer less chunky tomatoes..

Topping: 1 lb. special cheese, no mozzarella for me! (Grated American or Cooper sharp American and Brick cheese. (Brick cheese will help hold the cheeses together).(Suggestion:  1/2 lb. brick cheese, 1/2 lb. American or sharp american. 1 lb. total for large pizza).

****Note: If you want to make a white pizza topped with sliced tomatoes using this cheese mix works well too!

optional:  grated Italian cheese, sliced green peppers or pepperincini.

  Bake 375° either on oven grilles or in pan until cheese is melted.
