Baked honey glazed salmon

I made this as a half recipe.  I suggest you double the sauce recipe though because it’s delicious and extra sauce is a good thing!

Check my note at the bottom of recipe for changes.


Good recipe!





  • 4 boneless salmon fillets
  • 2 tbsp unsalted butter - melted
  • 2 cloves minced garlic
  • 2 tbsp honey
  • ½ tsp dried parsley - or 2 tsp fresh parsley, finely chopped
  • ¼ tsp salt
  • ¼ tsp pepper
  • pinch paprika
  • 1 lemon sliced into half-moons

  • Place the salmon fillets, skin-side-down on the baking tray.

  • In a small bowl, mix together the melted butter, garlic, honey, parsley, salt, pepper, and paprika.
    2 tbsp unsalted butter, 2 cloves minced garlic, 2 tbsp honey, ½ tsp dried parsley, ¼ tsp salt, ¼ tsp pepper

    Preheat oven to 400°.

  • Place the salmon fillets, skin-side-down on the baking tray.( I removed the skin)






  • In a small bowl, mix together the melted butter, garlic, honey, parsley, salt, pepper, and paprika.
    2 tbsp unsalted butter, 2 cloves minced garlic, 2 tbsp honey, ½ tsp dried parsley, ¼ tsp salt, ¼ tsp pepper, pinch paprika
  • Pour the mixture over the salmon fillets (don't worry about any of the sauce pooling on the tray).


  • Arrange the lemon wedges on and around the salmon.
    1 lemon sliced into half-moons
  • Place in the oven and bake for 8 minutes.
  • Open the oven and baste the salmon with any of the sauce that has pooled on the tray. Bake for a further 4-7 minutes until the salmon is tender.
  • Serve with your favorite potatoes and green veg.
    I had seasoned acne de Pepe and fresh broccoli.
    ****Note:  I baked the salmon about 10 minutes with half of the glaze.  Then removed from oven and baked another 15.  We like it more on the medium to well done.

Baked Cod












  • 4 

    cod filets, about 1" thick

  • Kosher salt

  • Freshly ground black pepper

  • 4 tbsp. 

    extra-virgin olive oil, plus more for baking dish

  • ****1 c. 

    cherry tomatoes ( I used I cup drained petite tomatoes)

  • 1 

    lemon, sliced, plus more for garnish

  • 2 

    garlic cloves, smashed but not peeled

  • 2 

    sprigs thyme***(I used 3/4 dried thyme)

  • 2 tbsp. 

    freshly chopped parsley, for garnish(I used 1 tsp. Dried parsley)


  1. Preheat the oven to 400° and pat cod filets with a paper towel until dry. Season all over with salt and pepper. 
  2. Step 2Combine olive oil, cherry tomatoes, lemon slices, garlic, and thyme in a 9"-x-13" baking dish. Toss to coat and spread into an even layer. Nestle cod pieces into baking dish. 
  3. Step 3Bake until fish is opaque and flakes easily with a fork, 15 to 20 minutes, depending on thickness of filets. 
  4. Step 4Serve garnished with parsley, more lemon juice, and pan sauce.


Dessert too!


Tip:
placed the lemon slices under the fish. The fish will not stick to the bottom and the lemon will seep into the fish.

Sweet chili Salmon

Easy ingredients make not only an easy meal choice but one that is delicious.

Ingredients:

.92 center cut fresh Salmon
1/2 cup Sweet chili sauce
1/4 cup sweet chili sauce for topping

Marinate Fresh salmon for several hours in the chili sauce.

Bake 400° for 20 to 22 minutes.  Turn broiler on high   Broil for another 2to 4 minutes .  Brush with  remaining .

Serve immediately.  I served salmon over rice pilaf

Buttery Alaskan cod


I made fish tonight.  I almost lol followed a recipe to the tee but not quite.  Alaskan cod fillets from Costco and they were very good.

  Allrecipes doesn’t fail.  I only had saltines(they called for buttery crackers).  After I crushed the saltines I added melted butter, onion powder and dried parsley to them.  I used a large zip bag to crush them.  

I Baked the fillets at 400° for 15 minutes after dipping them in butter.  Then I topped them with cracker mixture and baked another 10.  They were very thick..

Served over brown rice pilaf.  Hubby had corn too!  It was very tasty.  No doubt with all the butter🤣🤣🤣!

I don’t usually care for or make fish very often so this was a major accomplishment and it was really tasty.

Making Seafood Marinara!

Today pasta choice was hubby’s favorite Fettuccine.




Craving a nice seafood meal?  Try this easy marinara and add shrimp, crabmeat or any prepared seafood of choice.

We love shrimp and when I can purchase good quality large shrimp this is definitely a meal both my hubby and I really enjoy!

Marinara sauce is one the easiest pasta sauces to make from scratch..  Using either fresh, or canned tomatoes I make this sauce often because both my hubby and I love it.

Today I made it with canned plum tomatoes and other than having to break the tomatoes up while cooking it made a delicious sauce.  I decided that the sauce was a bit too chunky for my liking so I put it in the food processor to thin it a bit. (or you can use your immersion blender too)  

 1lb. Jumbo cleaned and deveined cooked shrimp ( you can add other seafood favorites too)
1 large can Plum tomatoes cut up or smashed with hands
2T. Butter
1 large onion (1/2 grated and ½ sliced)
1 or 2 cloves garlic chopped( If you like garlic don't hesitate to add more)
½  to 1 tsp. fresh basil or dried
½ tsp. oregano optional
¼ tsp. red pepper flakes
salt and pepper to taste
Freshly grated Pecorino Romano Cheese
Dried parsley for garnish

Saute’ onion , butter and garlic in olive oil  until tender.  Add tomatoes, breaking them or cutting them while adding.  Add garlic, basil, oregano(optional) red pepper flakes, salt and pepper.  Cook over medium heat to bring to a slow boil..

Turn heat to low and simmer until reduced by a 1/3.  Add shrimp and heat for a few minutes.  Serve over pasta.
