Crockpot loaded chicken

So our weekend has come and gone and yes here is the question once again.  What's for dinner tonight?

Yay a new recipe I'll be giving a try today.  





Here is the beginning of the recipe. I’ve made a few changes as noted with***



  • 1/2 cup chicken broth

  • 3 1/2 tablespoon ranch dressing mix***i used liquid ranch dressing.

  • 2 pounds boneless, skinless chicken breasts

  • 1 1/2 pounds yellow baby new potatoes( ***tiny potatoes) 

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt

  • 1/2 teaspoon freshly ground black pepper

  • 6 ounces cream cheese, cubed at room temperature

  • 1/4 cup ranch dressing

  • cups shredded sharp Cheddar*** ( I used grated white sharp cheddarcheese),divided, plus more for garnish

  • cooked and crumbled bacon to taste( I did not garnish) only orange mild cheddar a pinch to the top of dish.  I’m sure the bacon would really be tasty.

  • thinly sliced scallions for garnish


    Stir together chicken broth and ranch dressing mix in the bottom of a 5-quart slow cooker until combined. Add chicken breasts in an even layer over broth mixture, followed by an even layer of potatoes. Drizzle with oil and sprinkle with salt and pepper.



Cover and cook until chicken is cooked through and potatoes are fork tender, about 2 hours and 45 minutes on HIGH or about 3 hours and 45 minutes on LOW.


Remove chicken breasts from the slow cooker and place them on a cutting board. Let them cool slightly for 5 minutes. Coarsely shred the chicken using 2 forks.

Add cream cheese, ranch dressing, and 1 1/2 cups of the shredded cheese to slow cooker. Cover and cook on HIGH until cheeses begin to melt and potatoes are fully tender, about 10 minutes. Uncover and stir cheese mixture until just about fully combined.

Serve in bowls and top with shredded cheese   Chopped scallions and bacon bits.

Crushed Tortillas and chicken casserole


  • I have started to cook a little more and this recipe was involved a little more 😔 than I realized but I managed a delicious meal for tonight without being exhausted and the result was just what I had imagined. Creamy inside , a teeny bit of heat and a nice crunchy top.


    I followed the recipe but did change a few things.


    After it was baked I opted for sliced peaches as a side since we were still not sure about the dangerous lettuce outbreak.








    ****Note: I used minute rice for convenience 




    Heat oven to 375°. Spray 9 x 13”

    Baking dish with cooking spray 

    Ingredients:

    2/3 cup sour cream

  • 1/2 cup ricotta cheese

  • 3 ounces cream cheese, softened

  • 3 cups cooked chicken, shredded

  • 3 cups cooked white rice ****

  • 2 cups shredded pepper Jack cheese

  • 1 (15 ounce) can black beans, rinsed and drained

  • (10 ounce) can diced tomatoes and green chiles, such as Rotel®

  • (7 ounce) can green chiles( eliminated)

  • 1 teaspoon garlic salt, or to taste

  • 1 cup crumbled tortilla chips ( I crushed sea salt tortillas)

Whisk sour cream, ricotta, and cream cheese in a large bowl until smooth. Stir in chicken, rice, pepper Jack cheese, black beans, tomatoes, green chiles, and garlic salt. Add mixture to the casserole dish, and sprinkle tortilla chips over the top.

Bake in the preheated oven until it starts to firm up, 25 to 35 minutes. ***Garnish with parsley or cilantro, and serve.

Rotisserie chicken patties

Recipe for 3 small patties.  Adjust ingredients for larger amounts. My creation.

Rotisserie chicken is so good to make quick meals!!!

1cup shredded and pulsed rotisserie chicken
I egg
1 tsp. Dried parsley
1/2 tsp. Garlic powder 
1/2 tsp. Onion powder
1 T panko breadcrumbs 
Salt and pepper
Extra virgin olive oil

Mix together all ingredients but olive oil.

In a small to medium skillet add olive oil.  When olive oil has heated add patties.  Fry until browned on each side.

Top with marinara and Pecorino and cover until marinara is warm.

Feel free to add mozzarella cheese if you like.


Note:I BET THEY'D MAKE A GREAT SANDWICH  on A CRUSTY ROLL!!!

Chicken Tomato vegetable soup

Lunch today. Chicken tomato and vegetable soup.  Deli roast beef with Dijon. Perfect lunch for me.

I made an easy version of soup.  Sautéed cartots, chopped uncooked pieces of chicken, onion and celery slowly in olive oil. When tender I added a quart chicken broth and cream of tomato soup.  Brought to a slow boil and added 1 cup dried star pasta and I cup chopped spinach.

. Yummy lunch on this super weird weather day!

Easy Chicken croquettes

Another great and easy recipe using Rotisserie chicken. The ingredients are APPROXIMATE   No time to measure tonight.




11/2 cups rotisserie chicken 
1 can cream of chicken soup (divided)
3 heaping tablespoons soup( remaining soup plus a few tablespoons of milk I used to thin soup
for my drizzle) on croquettes.
1/2 cup breadcrumbs ( 1/4 cup in chicken mixture) 1/4 cup to press chicken patties before frying,

***you can use seasoned breadcrumbs if you desire.

Approximately 1tsp. Onion powder 
I stalk celery.
Butter for frying.

Place chicken , onion powder and celery in food processor.  Process until
Fine. Add 3 (approximately)Tablespoons cream of chicken soup and breadcrumbs. Stir until blended.  Make patties. REFRIGERATE UNTIl ready  TO USE.

Instructions:

Using a food  process or chop about 11/2 cups chicken until fine.

Add about 1 teaspoon onion powder and I stalk celery.  Process until fine.

To the chicken add

about  3 heaping tablespoons of cream of chicken soup and about 1/4 cup breadcrumbs stir until blended.. 

After making approximately 5 to 6 patties;

On a piece of wax paper add about another 1/4 cup of breadcrumbs and gently pat croquettes on each side with the breadcrumbs. 


Fry patties in a generous amount of butter… oh so yummy!


I Added a little milk to remainder of chicken soup and used it as gravy to top the patties.


 Potato and salad as our sides.






Delicious meal!

Crispy baked chicken

Since eggs are so pricy I’m trying to substitute plain yogurt for when eggs are needed in a recipe.

The chicken was tasty and tender and the panko breadcrumbs made the chicken seem like fried.  Win win!




  • Buttered Lima beans,applesauce and Rice pilaf added to this quite easy dinner!


    1 1/4 cup Panko breadcrumbs 

  • 1 teaspoon salt

    Pinch pepper 

    1/2 tsp. each garlic powder, onion powder and dried parsley 

    2T plain yogurt ( you can use less but I coated my chicken heavily)

  • 4 T melted butter

  • 2 large skinless, boneless chicken breast filets 



Rub chicken breasts well with plain yogurt , then press into seasoned Panko mixture until coated. Arrange chicken in the prepared buttered baking dish.NOTE BELOW!

***Place 2 T melted butter in bottom of baking dish 



 preheat the oven to 425 degrees .

Place seasoned chicken in buttered baking dish.


After 20 minutes turn chicken breasts and pour over chicken the remaining  2 T of melted butter.

Bake in the preheated oven until chicken breasts are no longer pink in the center and the juices run clear, approximately 40 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

Slow cooker cheesy chicken





 



Day 2 new recipe 

2 large boneless chicken breasts 
1 tsp. Garlic powder 


1 tsp. Basil
1tsp. Paprika (optional)
Salt and pepper

1 jar marinara sauce (I use Rao)
1cup half and half
I cup cheese blend
1 cup parmesean cheese 

  1. Place the seasoned chicken in the bottom of your slow cooker.
  2. Mix marinara sauce and half and half 
  3. Pour the marinara sauce over the chicken, ensuring it’s fully coated.
Cover and cook on low heat for approximately 4 hours. High for approximately 3 hours. Make sure chicken has an internal temperature of 165° F. Chicken should be fork tender.

I am serving this delicious dish with polenta and a salad. Enjoy.

Quick chicken pot pie


Today’s smaller size chicken pot pie 1/19/2026







We enjoy chicken pot pie  and I mostly make it in fall and winter.

Today’s was a quick imo meal.

I had rotisserie chicken in my freezer so I had it defrosted overnight not really knowing what I was going to make with it.

Today it came into place with all the ingredients handy.

So it’s Short cut chicken pot pie!

Note: I usually use my own cooked chicken and broth that I thicken with flour.  This was an easy game changer. I used cornstarch …to thicken it. 

It was thinner than I usually make mine so next time I’ll increase the cornstarch to more.  The amount is corrected in my above recipe,  I used 2 T cornstarch and I believe 3 T would thicken it better.  I also would add the extra carrot and potato for a more hearty a pot pie.

2 +cups of rotisserie chicken shredded , 
1- 15 oz. can of chicken broth, 
1 cup of milk 
1 regular size can of cream of chicken soup 
3 tablespoons of cornstarch.
1 tablespoon of butter

One small onion, grated
One to 2 carrots shredded fine
2 small diced potato 

In a medium size pot place butter on low heat.  Add, onion, carrot and potato .  Simmer for a few minutes.

Add chicken broth.  Cook until you are sure potato is tender.  Add cream of chicken soup and milk. Stir and Cook slowly.  

In a separate dish add cornstarch and Make a thin paste of cornstarch with a little of your soup mix.  Slowly add to soup mixture.  Bring to a light boil. Add shredded chicken and stir until thick.


As you can see I tried to strain the cornstarch and made a little mess.


****In a separate bowl add 1 1/2 cup Bisquick mix
2/3 cup milk. Stir until milk is absorbed.

Place soup mixture in a buttered casserole dish.  Add dollops of  dumpling size spoonfuls to top of hot mixture

Biscuits:

1 1/2 cups Bisquick mix.  Approximately 2/3 cups of milk
Mix with spoon. NOTE:Mixture will be lumpy and thick. If too thick add a little more milk. Drop by tablespoons into boiling soup .

Bake 425 approximately 20 minutes or until slightly browned.

Homemade chicken salad

















Served with pepperincini slices and red beets. Crackers to scoop up the salad!

Recipe below:

 I use the whole breast of a rotisserie chicken cut in small cubes or shredded.  
1/2 cup chopped celery,
 1/2 tsp. Onion powder or onion granules.

 In a medium size bowl place half mayonnaise and half miracle whip and a pinch of salt, pepper and paprika. Mix well.   Toss with chicken, celery and onion powder.

 I judge the amount of mayo and MW to the consistency we ENJOY.

  We like mild pepperincini on top.
