Breaded baked Burgers


Today my creative juices were flowing and I decided to make a burger similar to how I made some chicken cutlets the other day.  

I'm still being very diligent about encluding any wheat grain in any of my meals.  Temporarily I think!  I had been experiencing some intestinal discomfort and it was suggested by a nutritionist to start slowly and cut back on anything where wheat was included.  Time to read boxes and make myself aware!!!!  So many foods contain wheat.  Read more about it when you get a chance.  Google has been helpful.

Here's my recent beef(hamburger) recipe.  I just wanted to play to see if I'd enjoy it.  I definitely did!!


1 lb.  ground beef(85 %)
1 tsp. Salt
1/2 tsp pepper
2 cups crushed corn flakes
1 tsp. Parsley
1/2 tsp. Paprika
 1 tsp. Onion powder
cooking spray.

Mix beef with salt, pepper and onion powder.  Make a good size patty. You should be able to get 4 to a lb.

In a bowl place 1 egg and whisk well.  Two if you are using a lot of ground beef.

In a separate bowl.  Place crushed corn flakes.  Season with paprika, parsley and a little more onion powder.

Place beef patty in egg , turn over and dip both sides into egg and then into crushed seasoned corn flakes.

Have a cookie sheet lined with foil(easier to clean up) sprayed well with cooking spray and set oven temperature to 400 degrees.

Place patties on cookie sheet.  Bake and 400 degrees until your desired cooked appearance.  I like mine medium well so mine were of medium size and it took about 15 to 20 minutes.  I turned after approximately 7 minutes. I didn't want any rare meat.

This was not a definite cooking time.  It depends on you.  It's a try and error approach.  

It's a nice change and I'll definitely make these again.  I may add different seasonings..You can too...Use your favorite ingredients to season the burgers or the crushed corn flakes.  Enjoy!

Corn Flake Chicken

I can't believe in all my years cooking I have never used corn flakes as a breading for chicken.  This was a delicious meal and I will use corn flakes as a coating again.

I pulsed the corn flakes to be fine so it will easily coat the chicken.
 





4 lbs. fresh chicken thighs and drumsticks ( I used thin chicken cutlets)
2 1/2 cups Crushed cornflakes
2 tsp. salt
1 tsp. black pepper
1 tsp. paprika
1 tsp. Garlic powder
2 large eggs
1/4 to 1/2 milk
2 T spicy brown mustard
2 T honey
4 T unsalted butter.
cooking spray

Preheat oven to 400 degrees.

Spray pan liberally.




In a large bowl, combine corn flakes and seasonings.  I used small food processor to grind corn flakes to the consistency of bread crumbs

In another bowl place eggs, milk, mustard and honey. Whisk

Place a piece of chicken in the bowl with the egg mixture, toss to coat.  Shake off excess and place in bowl with crushed corn flakes.  Press to adhere and place on sprayed cooking sheet. Repeat until all of chicken is used.

Drizzle with butter and bake 25 to 30 minutes until chicken is no longer pink.

Note:  if using thin chicken cutlets cut back on baking time checking not to over bake.
