Chicken cordon blu casserole

New photo 7/31/2024

served with a side salad.

A few added adjustments as noted..**

You can half this recipe if you are making this for two servings and use an 8” x 8” baking dish.

In my recipe I used a 9” x 13” baking dish.  Basically guessed at amounts to our liking.

It’s a winner! Hubby had seconds!

Note:  white cheddar cheese made this casserole a WINNER!!!

 8 oz cooked chicken cubed
8 ounces deli ham, cubed
8 oz. UnCooked wide egg noodles) cooked au’dente) and drained **
8 ounces Swiss cheese, cubed(I used white cheddar) and only used 4 oz.)**
1 (10.5 ounce) can reduced-fat, reduced-sodium cream of chicken soup)( I used regular cream of chicken soup)**
  • 1/2 cup 2% milk (I used whole milk)**

  • 1/2 cup light sour cream) I used regular sour cream)**

    Topping:

  • 2 tablespoons butter

  • 1/3 cup seasoned bread crumbs( I used regular panko breadcrumbs)

  • 1/4 cup grated Parmesan cheese

Preheat oven to 350°.  Light grease 9x13 in. Baking dish.

Place cooked noodles in greased baking dish. Top noodles with cooked chicken and ham . (Note I used rotisserie chicken and deli Tavern  ham).**

Mix together condensed soup, milk, cheese and sour cream in a medium bowl until combined; spoon over noodle mixture in the casserole dish.

Melt butter in a skillet over medium heat; cook and stir bread crumbs and Parmesan cheese in hot butter until crumbs are well coated, 2 to 3 minutes. Sprinkle over casserole.** I did in microwave
Instead of stove. Easier imo.

Bake 350° for approximately 30 minutes. Allow to set for 5 minutes and serve with your favorite side dish or salad.

**if you want casserole to look a little browner on top. Broil for 2 or 3 minutes on high watching carefully to not burn.

Adapted to our liking from allrecipes

Ham Steak with pineapple and cherries! So easy and so good!!

I'm cooking for myself tonight!  Hubby is out and it gives me an opportunity to cook something that I like and he really doesn't care for.  Tender, sweet ham!! I do love ham and it is a one pan meal!!

I had bought a lean looking thicker slice of ham at the market last week which I was planning to make a small pot of bean soup with.

All that changed when this popped up
In my mind. What was going to be ham and bean soup
became this.  I added a par cooked skin removed sweet potato to the ham etc. into what I really felt like eating which was ham, baked with brown sugar, pineapple and cherries.  Doesn't that sound good?

Note:  added a quartered sweet potato( I microwaved the potato slightly) and added a pinch of pepper and Wow it was so delicious!

Easy, Easy meal and I have leftovers for tomorrow!  I baked  everything with the brown sugar, pineapple and cherries in a small oven pan at 350 degrees for approximately 30 minutes.. Enjoy!

I used pineapple tidbits, maraschino cherries and sprinkled about 2 tsp. brown sugar..

Quick easy and so delicious!  Enjoy!

Happy Cooking from my kitchen to yours!!

Savory Clafoutis

Hi and welcome.

I've been working on getting together a few new recipes I  think would be of interest.

This particular recipe I thought would be very easy and a nice change for you.

We tend to make the same recipes over and over and I am guilty of it.  We know what works for our family and I know my hubby and he will try a new recipe and give his opinion.

He enjoyed this very much and I included hot sausage to give it a punch.

You can use ham, bacon or even prosciutto in it.  It all depends on your taste.

This recipe is similar to an Impossible Pie type dish if you are aware of what that is. It makes its own crust.

Note:  ONLY use 1 cup of cooked ground sausage.  I used more and it was too thick.  I wanted more of a custard texture with some sausage mingled in it.  Mine was a little too meaty..

 Enjoy!

Here's the recipe for the Savory  Clafouti (Very adaptable, could use bacon, ham, sausage & various cheeses)

I sauteed in olive oil 1 garlic clove, 1/2 onion, with 1 cup of ground hot sausage.. set aside

In a mixing bowl place 1/2 cup flour.  Add 2 beaten eggs, 3/4 cup cream (or milk) (I used milk),1 tablespoon melted butter, salt & pepper. Whisk well. or you can use your blender to blend it well.

After whisking egg milk mixture add 1 cup grated cream cheese@mozzarella blend,(new blend I saw and bought)and
1 cup grated sharp cheddar & some finely chopped scallions and parsley. ****Note substitute cheese if you like ( gruyere)cheese can be used as well..

Fold sausage gently into milk/ cheese mixture and pour into a 9 inch pie plate. Bake for approximately 25 minutes at 425 degrees depending on your oven.   Note:  You will notice the center is set and doesn't jiggle.

Ham salad

Everyone’s ham salad.

Whether you use ham(from your leftover Easter dinner) or Bologna this is definitely an old favorite of my family.

I’ll bet there are some who remember it made in their home too!  My family called it Monkey Meat!

2 cups ham cut in cubes
Pickle relish or sweet pickles chopped ( several tablespoons)
1/2 cup Mayonnaise
1/2 cup Miracle whip

Place ham and pickles or pickle relish in food processor.  Pulse a few times.  Do not over process. Add mayo and miracle whip With a large spoon and mix together.  If it’s just one of the condiments that’s fine.

Mine happens to be a mixture of the two!

Enjoy!!!!

Serve with crackers, bread or rolls.

Crockpot Baked Ham

Are you in a dilemma of how to make a small boneless ham?

Here’s a suggestion...

Easter ham is a favorite of mine. It's kind of a tradition that I have that if there isn't a ham of some sort in my refrigerator I'm thinking I'm missing something.  Ham is so easy to serve and even when unexpected company stops by whip out the ham and some bread or rolls and yep you have it covered.

The recipe below is how I made a small half of a boneless ham in my crockpot.  The recipe originally called for several spices I didn't have in my pantry so I just added a few things I did have and it was delicious.

Here is my original post.  I made it for the first time at Christmas.  Enjoy!

I had bought an approximately 3# cooked ham and viewed a few recipes but either I didn't have all the ingredients or they just didn't appeal to me so I put this little beauty of a ham in my crockpot and added a few of the ingredients I happened to have in the house.  I think it's a winner and so easy!

The finished Product!  You're going to love it!!

Thanks for visiting my blog and please do come again.  I love seeing new people and making new friends.

1- approx. 3# cooked boneless ham
1-10 oz. Sweet and Sour Sauce
1- 6oz. pineapple juice
1 cup chopped peaches(drained) ,dried apricots or other dried fruit of choice

Note: If you are using canned peaches, you do not have to use the juice because there is enough liquid.

Place ham in crockpot.  Mix ingredients and pour over top.  Cook on high approx. 6 hours or low 8 hours. Serve as is with all the good stuff surrounding the plate or:

Note:  After ham is cooked you can strain drippings and thicken sauce with a little cornstarch if you would like.  Serve on a soft or crusty roll or with a baked potato or salad.  Yum

Happy Baking and Cooking from my kitchen to yours,

Berry Glazed Spiral Ham

I lost my copy of my Better Homes and Gardens magazine so I am going to do this recipe from the top of my head since their recipe is nowhere to be found.

1 spiral ham approx. approx. 10 lbs.
1 cup orange juice
1/2 cup raspberry jam
1/2 cup honey
1/2 cup fresh raspberries(optional) to add to glaze
1/4 cup chopped jalapeno

Place orange juice, raspberry jam and honey in saucepan over low heat.  Cook until blended and syrupy. . Set aside

Brush ham with slight amount of glaze and cover loosely with foil and bake 325 degrees for 1 1/2 hours or until warmed through occasionally basting with glaze.  After one hour or so take foil off ham and baste with remaining glaze(add raspberries to glaze and jalapeno)  and bake at 425 degrees for an additional 10 minutes or until crispy.  Let stand for an additional 10 minutes and serve.
