Beef tips and vegetables aka Beef stew

My version of An old recipe of mine.

Change it up for a new version of beef tips or beef stew.

We’re all getting a little cabin fever so play with a recipe as I do and you’ll add something Different  to please your family.

Make them fresh as I did or buy already prepared .  It really is up to you.

Enjoy!



1 lb.  beef cubes cut in half. (Stew beef)
1small onion diced
4 T vegetable oil
4 T flour or more
Salt and pepper
2 sliced carrots
1/2 cup frozen peas
2 cups beef broth
2 potatoes mashed( to serve stew over)


Cut beef in smaller pieces, toss beef in flour,Salt and pepper.. Set aside.

In a 3 qt. Saucepan place oil. Add onions and cook until tender.  Add floured beef.  Cook stirring frequently until slightly browned. The beef will look coated.

Add beef mixture to crockpot.







In the same pot you cooked beef add 2 cups beef broth and scrape bottom of pan and bring to a boil. Add the heated beef broth to crockpot. Add 2 sliced carrots.

Allow to cook on low 6 to 8 Hours.  Add peas before serving and stir until warmed through.

Serve over mashed potatoes.

Crockpot Baked Ham


Are you in a dilemma of how to make a small boneless ham?

Here’s a suggestion...


Easter ham is a favorite of mine. It's kind of a tradition that I have that if there isn't a ham of some sort in my refrigerator I'm thinking I'm missing something.  Ham is so easy to serve and even when unexpected company stops by whip out the ham and some bread or rolls and yep you have it covered.  

The recipe below is how I made a small half of a boneless ham in my crockpot.  The recipe originally called for several spices I didn't have in my pantry so I just added a few things I did have and it was delicious.


Here is my original post.  I made it for the first time at Christmas.  Enjoy!


I had bought an approximately 3# cooked ham and viewed a few recipes but either I didn't have all the ingredients or they just didn't appeal to me so I put this little beauty of a ham in my crockpot and added a few of the ingredients I happened to have in the house.  I think it's a winner and so easy!

The finished Product!  You're going to love it!!

1- approx. 3# cooked boneless ham
1-10 oz. Sweet and Sour Sauce
1- 6oz. pineapple juice
1 cup chopped peaches(drained) ,dried apricots or other dried fruit of choice

Note: If you are using canned peaches, you do not have to use the juice because there is enough liquid.


Place ham in crockpot.  Mix ingredients and pour over top.  Cook on high approx. 6 hours or low 8 hours. Serve as is with all the good stuff surrounding the plate or:



Note:  After ham is cooked you can strain drippings and thicken sauce with a little cornstarch if you would like.  Serve on a soft or crusty roll or with a baked potato or salad.  Yum

Apple Crisp

Yummy Apple Crisp was a must today!  Enjoy! because we sure did!   A great anytime dish!







  • Directions

  • Preheat oven to 350 degrees F (175 degree C).
  • Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
  • Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
  • Bake at 350 degrees F (175 degrees C) for about 45 minutes.

Apple cinnamon bunt cake

Rainy day baking.  This recipe was found on Pinterest.  

I adapted the recipe to my liking and it is noted in the recipe in red lettering.

Note:  I prefer butter in my recipes so you will see butter was used instead of the oil.  I had the Gala apples and they sliced very nicely so they baked nicely and the cake was baked quicker than expected.





  • 6 to 8 medium Granny Smith apples, peeled and thinly sliced(I used gala apples)
  • 1 1/4 tablespoons granulated white sugar
  • 1/4 teaspoon ground cinnamon
  • 3 large eggs
  • 1 1/2 cups white sugar 
  • 3/4 cup vegetable or canola oil (I used melted butter)
  • 3/4 cup unsweetened applesauce
  • 3 teaspoons vanilla extract
  • 1 1/2 cups all purpose flour

  • Topping: 2 T sugar
  • 1/2 tsp. ground cinnamon







  • Heat oven to 350 degrees.  Spray a bunt or springform pan with nonstick spray.  Line bottom on pan as best with parchment paper.  I cut mine to fit.  I cut a whole in center for opening in bunt pan. Spray again.

    Layer the apple slices in the same direction all around the pan until the apples are about 2/3 up the pan.  Sprinkle cinnamon and sugar over apples.

    In a large mixer bowl place eggs and sugar and beat well.  Add oil(I added melted butter), applesauce and vanilla.  Beat well. Add flour and beat slowly until incorporated.

    Pour batter on top of apples slowly and sprinkle with a little more cinnamon and sugar.  Tap pan to make sure batter goes around apples.

    Bake approximately 1 hour and 20 minutes or until skewer comes out clean.

    My cake was done in an hour.  Test yours.  All ovens are different.

    Allow to cool completely before removing from pan.  I did not so mine stuck slightly.

    It would be a good idea to refrigerate or leave overnight before removing from pan.

    I wanted to serve mine warm with ice cream so being inpatient was not a good idea. It stuck slightly to pan.

     Note: You can easily warm a slice in your microwave if you would like it warm.

    It delicious and not too sweet. Enjoy!

    Meat or cheese Roll ups

    Hi everyone and I hope you are having a good day.

    Along with posting my recipe for the roll ups I also would like to mention some excellent safe preparation suggestions of our meals and cleaning our utensils .  We must be careful and smart with our food.  It is a part of staying healthy.

    During these long days filled with uncertainty you can rely on me and the blog posts I have been sharing with the world since 2011.

    Food is one of our ways of communicating.  Hearty healthy family meals and much care go into my food preparation.

    Staying healthy is of upmost importance.  Making sure our vegetables and fruits are washed well is a must.

    Our knives and cutlery should always be washed in hot water and wiped dry. There is no need to use a dishwasher if you use soap and HOT water.

    We all want to stay safe and keeping our kitchen clean is a must.

    Enough on that as I know most of you are aware of all the above suggestions but it never hurts to give us all a little reminder now and again.   On to the recipe as promised.

    1 box lasagna noodles. Depending on what noodle/pasta I use I either cook them according to directions on box or if they are the noodles/pasta you do not have to cook, I soak them in warm water for ten minutes to allow some flexibility.  

    Todays noodles/pasta are (according to box )you need not boil them but since I was making roll ups I soaked them in hot water for over ten minutes.  Personally I rather using the regular lasagna noodles for this recipe but I had these and figured I'd give it a go.



    Preferred cooking method for recipe:    use noodles/pasta that you boil according to directions.  

    This recipe made approximately 12 rolls.






    Meat filling roll ups
    1 box lasagna pasta
    1/2 lb.or more ravioli meat mixture(check side bar for labels)

    1/2 lb. ground beef
    1/2 lb. ground pork
    2/3 cup bread crumbs
    1/2 cup Italian cheese or more
    salt and pepper
    1 egg slightly beaten
    1/3 cup chopped spinach


    Meatless cheese roll ups
    1 container ricotta
    1 egg yolk
    1 tsp. dried or fresh parsley
    1/4 cup cooked and drained spinach
    1/2 cup shredded mozzarella
    1/2 cup grated Pecorino Romano cheese.
    Pasta sauce of choice.(I had my homemade meat sauce so I used it for convenience).

    Boil lasagna noodles according to directions.  Drain and slightly rinse. Place a sheet or two of waxed paper on cutting board.  Place lasagna noodle on wax paper and spread filling.  Roll and place in a casserole dish.  I used an 13x9 in baking dish.

    Cover with a generous amount of pasta sauce and bake at 350 degrees covered for approximately 30 minutes.  Remove cover and allow to stay in oven another 5 minutes.  Remove from oven and serve.
