Green Beans and potatoes





This has long been a family favorite since way back when.  My mom and grandmother as well as my mother- in- law made this delicious side a lot but mostly in the summer when green beans were plentiful. Pole beans were an Italian favorite or if you could find flat beans were especially a treat. Meaty and tender  I remember growing flat beans in our garden when we were first married.  Such a nice memory.

I don't know if any of you have ever had this or made it but it's very simple to make. Enjoy!

Fresh  green beans and potato salad.

I lb. green beans cleaned and cooked al dente or to your taste (drain)
1 clove minced garlic
Olive oil
White or red wine vinegar to taste
Parsley pinch or so as desired
2 peeled, washed and cooked potatoes cut in cubes (drain)
Salt and pepper to taste

Place green beans and potatoes in a large pot of salted water.  Bring to a boil. Cook until tender, drain .  Add 1 Clove minced garlic or more if you really enjoy garlic, pinch or two of dried parsley and olive oil.  Sauté for a few minutes. Enjoy!

If you choose to make it a salad.  Remove from stove, allow to cool and once it is cool add a splash or two or three of red or white wine vinegar, fresh parsley if possible salt and pepper.  Refrigerate until ready to use.

 **This has to be one of my favorite family recipes.  It was a staple warm in the winter and cold in the summer side dish. 

  ****NOTE:The warm version I did not add the vinegar to it.  Only the COLD version and then I would eliminate the oil but it doesn't affect the taste it is just that when cooled the oil may solidify. Take it out of refrigerator and allow 20 minutes to serve room temperature.

Summer Cobbler: Cherry/Peach

For the Fruit loving Cobbler people.  A great combination of cherries and peaches.  A hit and it's an all in one dessert..Add some vanilla ice cream might make it even better.  Slightly warm with vanilla ice cream!  Yummy!

2/3 cup sugar
1 tablespoon cornstarch
1 cup water

3 cups fresh fruit(any fruit of your choice)
1 cup all purpose flour
1 tablespoon sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3 tablespoons butter
1/2 cup milk

Heat oven to 400 degrees
Mix sugar, cornstarch..gradually add water. Bring to a boil and boil for 1 minute or a bit more.
It should start to thicken. Stir constantly, add fruit and pour into buttered 1 1/2 quart baking dish.  Dot with butter and cinnamon.



For Top:
Stir flour, sugar, baking powder and salt in a bowl..Cut in shortening until mixture looks like "meal"..If you have a food processor use it..if not use a pastry knife to cut through it several times. Add milk..Drop by spoonfuls(heaping)onto hot fruit..Bake 25 to 30 minutes..Serve warm or top with cream for an added touch..

Soup's On: Easy Baked Potato Soup

 

My third day of posting soup!  There must be something in the air.  I LOVE Soup!!  How about you?

This recipe has to be one of the easiest soup recipes and it has to be one of my favorites.  I love potatoes and when I saw this recipe in a Taste of Home cookbook I just had to make it.  I've made other potato soup recipes but this took little time and basic ingredients..(I had the evaporated milk and potatoes).   Enjoy!  Happy Cooking!

1/4 cup butter
1/4 chopped onion
1/4 cup all purpose flour
1 can 14 oz. chicken broth( low sodium if available)
1 can 12 oz. Carnation Evaporated Milk
2 or 3 medium baking potatoes(baked or microwaved)Note: I microwaved them)
salt and pepper to taste
4 bacon strips (I used  Hormel real bacon bits)
1/2 cup shredded cheddar cheese
3 tablespoons sliced green onion optional

**Note:  I haven't tried this but if you would like to try it a bit healthier you can cut back on the butter to 2 T , use fat free cheese and milk and eliminate the bacon bits.

Topped with cheese, bacon and scallion..Delish!!!!!


Melt butter in large saucepan over medium heat.  Add onion, cook for about 1 to 2 minutes or until tender.
Stir in flour. Gradually stir in broth and evaporated milk.  Scoop potato pulp from one potato, mash.  Add pulp to broth mixture.

Cook over medium heat, stirring occasionally, until mixture just comes to a boil.  Dice remaining potato skin and potatoes; add to soup..Heat through.  Season with salt and pepper.. Top with bacon, cheese and green onion..  Serves 4  Note: We used it as a meal..  It is filling  but add a small salad if you desire.  Happy Cooking!

Whoopie Pie Cake

I was craving cake and this recipe looked easy enough. Chocolate cake, creamy filling that will seep over and out the edges..........with a top that's frosted.

Oh my this will certainly satisfy my craving for sure. A Giant Size Whoopie Pie...

After looking through my pantry I couldn't find a Devil's Food Cake mix but I did have a German Chocolate cake mix so I decided it would be fine.  No running out to the store for me.  Leg is still hurting and the weather is nasty so it will do...  It's a lighter chocolate in color cake but I thought I'd frost it  with homemade darker chocolate frosting.  I'm only going to frost the top so the amount below was enough for the top.  If you want to frost the whole cake then double the frosting recipe.  Enjoy!

I'm feeling really good about this cake....YUMMY!

Whoopie Pie Cake

1 chocolate cake mix prepared according to box directions and pour into prepared two 9 inch cake pans and bake for time specified on box.

*I used a German Chocolate Cake mix
Homemade frosting or
1 can milk chocolate frosting(optional)

Filling::
1- 8 oz cream cheese softened
4 T butter softened
2 1/2 cups confectionery sugar
1 -8 oz tub cool whip thawed





Using an electric mixer Blend cream cheese and butter until smooth, add confectionery sugar and mix well.  Fold in cool whip then refrigerate.


After cakes have baked allow them to cool completely.  

Once cakes are cooled place one on a large plate or platter. Place by heaping spoonfuls the filling in the center of the cake then press the top on and then if you want you can smooth out the sides. I did not I wanted it to start to ooze out the sides. YUM












Frosting:

4 T Cocoa
4 T softened butter
2 cups confectionery sugar
1/4 cup + 1 T milk ( the consistency should be just soft enough to spread)

With an electric mixer in a bowl place cocoa and soft butter.  On a slow speed start to mix until cocoa and butter are mixed together well.  Add sugar a little at a time along with milk beating until soft but not a runny consistency.


or you can take a short cut and frost with container of milk chocolate frosting.

God Bless America





Freedom comes at a high price that is for sure.  Those who gave their lives for their country are heroes and we should remember them every day just not Memorial Day, 4th of July and Labor Day.

Great men and women who sacrificed their lives so we can be free of dictators and evil.

Our opinions may change on administration and who is leading our country but there is no doubt that precious lives and limbs have been lost and families who will never be the same because of those who made the ultimate sacrifice so please take a moment out of your busy day and stop and think "we are a free country" because of these dedicated, caring individuals.
