Peanut butter chocolate krispie bars



Snack attack.  Home by my lonesome craving sweets so I had all the ingredients to make some peanut butter, chocolate rice krispie treats.  No grands around so I guess it'll be me to dig into them and give some to the neighbors.  

Enjoy my friends!

3 Tablespoons Butter
1 (10 ounce) bag Marshmallows
¼  Cup Peanut Butter(2 heaping tablespoons)
5 Cups Rice  Krispy Cereal
4 regular size Hershey Bars 
Optional**1¼ Cups Chocolate Chips (semi-sweet, milk, or dark) (melted) I did not top my bars but you certainly could easily.

Line an 8-inch × 8-inch baking pan with parchment paper or foil and spray it with non-stick cooking spray.
Melt the butter over low heat in a large saucepan. Add the marshmallows and stir until they're completely melted. Stir in the peanut butter and mix until it's smooth.
Add the cereal to the marshmallow mixture and stir until it's completely combined. Working quickly, (use a little butter or cooking spray on your hands) to press half of the cereal mixture into your prepared baking pan.




Arrange the Hershey Bars on top of the cereal layer in a 4×4 grid. Add the remaining half of the cereal mixture over the peanut butter cups and press (use butter on your hands or cooking spray so you fingers won't stick to mixture) it into an even layer.
Pour the melted chocolate on top of the cereal and use a spatula to spread it into an even layer. Place the pan in the refrigerator until the chocolate is set, about 1 hour.
Once set, remove the treats from the pan and cut them into individual squares. Store in an airtight container.

Homestyle stew recipe and Easy Biscuits too!!

Beef cubes, potatoes, onions, celery and carrots make a great stew.   Mom would buy a huge piece of chuck(3 lb. or larger) trim and cube as much as she could  from a large chuck roast.  Most times she would buy one with a bone in it and  use what she couldn't scrape off that bone and make a pot of beef soup. 

She would make her own noodles which she called haluski (not to be confused with the noodles and cabbage haluski). 

 Grandma taught her how to make noodles. Their recipe was the same for those noodles as those that  they would make for pasta.  Very simple recipe that they new by heart.  No writing down for Grandma but fortunately Mom would decide later in her life to start writing down in a notebook lots of her recipes. I certainly have benefited by that!!

Ingredients:

3 T olive oil or canola
1 to 1 1/2 lb. round or chuck roast cut in cubes
2 stalks celery diced
3 carrots cut in pieces
1 large onion cut in pieces
2 potatoes, skinned and cubed
salt and pepper to taste
1- 32 oz. carton Beef stock or broth
1 pkg. Biscuit Complete (Bisquick)7.5 oz. package mixed according to directions.

Saute onion, celery in oil.  Add beef, carrots and potatoes

Saute until meat and veggies start to brown


Thickened


Thickening gravy
8 T flour
1 cup stock (remove 1 cup after meat is tender and set aside to cool).  Whisk flour into cooled stock and add slowly into the  meat, potato, veggie mixture. Cook on low heat until stew thickens.  Place in casserole and top with Bisquick Biscuits.  Bake at 450 degrees for approx. 15 min. or until Biscuits start to brown.

Mix Bisquick according to directions and place 6 heaping T on top of hot stew

Bake at 450 for approx. 15 minutes or until Biscuits start to brown

Classic Beef Stroganoff


Please note below is my Version of the Classic Beef Stroganoff (adapted from Betty Crocker's).























Her version is stove top. Mine is crockpot friendly!👍



 It's a new day and a new recipe I'm going to make my own.  I am using the crockpot for this one instead of Betty's way lol.  I'll see how it works out.  May be a keeper.

I started by sauteing my combination pack of stir fry beef and beef cubes in butter with onion first and then added my garlic. 
Drained the beef and Tossed the beef in the crockpot, added the beef broth and set to low and I'm off to lunch with friends

pounds beef sirloin steak ( I used a mix of beef cubes and stir fry beef) that's because I'm cooking it all day so I didn't have to use sirloin)

ounces fresh mushrooms, sliced (2 1/2 cups)(I did not use)

medium onions, thinly sliced

garlic clove, finely chopped

cup butter or margarine 
1 1/2
cups beef broth (from 32-ounce carton)

teaspoon salt

teaspoon Worcestershire sauce
1/4
cup Gold Medal™ all-purpose flour
1 1/2
cups sour cream
3
cups hot cooked egg noodles

Directions 

  • 1 Cut beef across grain into about 1 1/2x1/2-inch strips.
  • 2 Cook mushrooms, onions and garlic in butter in 10-inch skillet over medium heat, stirring occasionally, until onions are tender; remove from skillet.
  • 3 Cook beef in same skillet until brown. Stir in 1 cup of the broth, the salt and Worcestershire sauce. Heat to boiling; reduce heat. Cover and simmer 15 minutes.
  • 4 Stir remaining 1/2 cup broth into flour; stir into beef mixture. Add onion mixture; heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in sour cream; heat until hot (do not boil). Serve over noodles.
Note:  I basically used Betty Crocker's recipe but did the steps differently because of using the crockpot.  I browned the meat, onions and garlic in butter.  Drained it slightly. Placed beef  and beef broth in the crockpot and set the crockpot on low for approximately 6 hours.

 It saved a lot of time which gave me free time to do other things and I didn't have to use sirloin and was able to use stew beef or whatever since I was using the crockpot.

When I came home I removed my beef, thickened the juice with flour and then took it off the stove and whisked in the sour cream and made sure it was warm and added beef.   Ladled it onto large noodles.  It was perfect.

Another quick note.  There really wasn't anything else I wanted to do to change this recipe.  It's really delicious.  Crockpot made it easier for me and probably others who are working or have busy days.  Enjoy!

Cheesesteak stuffed bread

Super-Bowl food suggestion!!!! 

How about this new recipe?  If you like cheese, onion, peppers, steak and bread well this ones for you.








l large loaf Italian or French bread
1/2 onion sliced
1 red pepper sliced
1 green pepper sliced
1 yellow pepper sliced
1 lb. thinly sliced flank steak
salt and pepper 
2 T olive oil separated
2 T. melted butter melted
1/3 lb. sliced American cheese(or your favorite cheese)
mushrooms optional

Place 1 T oil in skillet.  Add peppers and onions. Cook until slightly tender.
Remove peppers and onions from skillet. Set aside. Add one more T olive oil, steak, salt and pepper.  Cook until browned.

Place loaf of bread on large piece of aluminum foil.  Make angled slits (pockets) on top of bread going half way through. 

Brush butter over top of bread.  Fill each slit (pocket) with peppers, onion, cheese and steak. 

 Sprinkle top of bread with Italian seasoning if you like to. 

Cover tightly with foil and bake 375 degrees for 20 minutes. Serve with a side of marinara if you desire.  Enjoy!

Easter 2019









This year Easter was very late so we were able to enjoy the beauty of plenty of forsythia and daffodils.
  Lots of beautiful bouquets were in every store in our area.  It’s a beautiful time of the year especially for those of us who can’t wait for spring.

We were invited to our sons for Easter brunch and our daughter-in-law made a very delicious array of entrees and sides.

We were very happy to get to see everyone, especially our granddaughters, Maddie and Zoe.

The menu included stuffed pecan, raspberry French toast, scalloped potatoes,fluffy scrambled eggs and thick style bacon.  Fresh fruit and bagels too!  Delicious array of mouth watering delights which included fresh lemon cake too!

I was really enjoyed everything and loved all the conversations.  Unfortunately I didn’t get as many food photos as I would have liked.
