Homestyle stew recipe and Easy Biscuits too!!

Beef cubes, potatoes, onions, celery and carrots make a great stew.   Mom would buy a huge piece of chuck(3 lb. or larger) trim and cube as much as she could  from a large chuck roast.  Most times she would buy one with a bone in it and  use what she couldn't scrape off that bone and make a pot of beef soup. 

She would make her own noodles which she called haluski (not to be confused with the noodles and cabbage haluski). 

 Grandma taught her how to make noodles. Their recipe was the same for those noodles as those that  they would make for pasta.  Very simple recipe that they new by heart.  No writing down for Grandma but fortunately Mom would decide later in her life to start writing down in a notebook lots of her recipes. I certainly have benefited by that!!

Ingredients:

3 T olive oil or canola
1 to 1 1/2 lb. round or chuck roast cut in cubes
2 stalks celery diced
3 carrots cut in pieces
1 large onion cut in pieces
2 potatoes, skinned and cubed
salt and pepper to taste
1- 32 oz. carton Beef stock or broth
1 pkg. Biscuit Complete (Bisquick)7.5 oz. package mixed according to directions.

Saute onion, celery in oil.  Add beef, carrots and potatoes

Saute until meat and veggies start to brown


Thickened


Thickening gravy
8 T flour
1 cup stock (remove 1 cup after meat is tender and set aside to cool).  Whisk flour into cooled stock and add slowly into the  meat, potato, veggie mixture. Cook on low heat until stew thickens.  Place in casserole and top with Bisquick Biscuits.  Bake at 450 degrees for approx. 15 min. or until Biscuits start to brown.

Mix Bisquick according to directions and place 6 heaping T on top of hot stew

Bake at 450 for approx. 15 minutes or until Biscuits start to brown
