My recipe chicken piccata





My way to make easy Chicken Piccata.

IMO to make good chicken even better is to filet it with a thin knife and using a mallet pound them until desired thinness.

Quality chicken, good ingredients make cooking a breeze.  No special skills required.


Today’s lighter version of chicken piccata served with Farfalle.  2/20/24







6 thin boneless chicken cutlets(pounded to desired thinness)
3 T olive oil
1 T butter
1/2 cup flour
1 tsp. Onion powder 
1tsp. Salt
Pinch pepper


1-14 oz. can chicken broth
2 lemons squeezed
2 to 4 tsp. Capers rinsed and drained

1/2 lb. cooked spaghetti



Update:  Todays meal with parsley potatoes !



In a large skillet place olive oil and butter and heat until butter melts.

Place flour, salt, pepper and onion powder in a large zip lock bag.  Place cutlets in bag individually to coat evenly and lay on a platter.  Place coated chicken in heated pan on low to medium heat  and brown on each side.

Remove chicken from pan and set aside.  Return to pan and add 1/2 cup chicken broth to deglaze pan.  Stir to loosen all pan drippings.  Add juice from two lemons and capers.  Allow to simmer until broth starts to reduce.  Add cooked chicken and the remainder of broth.  Allow chicken to heat and serve over 1/2 lb. cooked spaghetti.  Toss spaghetti with chicken broth mixture.

Chicken Enchiladas

What a day!  I wanted to make something creamy today so I checked my archives and remembered how delicious this was.  Yummy!  

You’re gonna like it!






8 Flour Tortillas ( I used Azteca) or if you prefer use corn Tortillas 
2 tablespoons butter or margarine
1/2 cup green onions chopped
1 clove minced garlic
1/2 sliced black olives
1- 4oz. drained diced green chillies
1/2 cup sour cream
1 10 3/4 oz. cream of chicken soup
1 1/2 cups chicken (use canned chicken if desired)
1 cup shredded cheddar cheese
1/4 cup milk

Heat oven to 350 degrees..In medium saucepan melt butter, saute onion and garlic in butter until tender..Stir in 1/2 of the sliced olives(reserve the other for top),
green chillies, sour cream and soup; mix well..Set aside 3/4 cup of the soup mixture..To remaining sauce in pan, stir in chicken and 1/2 cup cheese..

Warm tortillas as directed on package. Fill tortillas with chicken mixture; roll up..Place seam side down in ungreased baking dish..In a small bowl, combine reserved 3/4 cup soup mixture and milk; spoon over tortillas..Bake for approx. 30 minutes until bubbly..Serve, sprinkle with remaining cheese and black olives..Enjoy!!!!You can make them in a 13x9 inch pan or as I have done this recipe many times I switch baking dishes for fun. I change my pans depending on who I'm having to dinner or if it's the two of  us :).

Breaded baked Burgers


Today my creative juices were flowing and I decided to make a burger similar to how I made some chicken cutlets the other day.  

I'm still being very diligent about encluding any wheat grain in any of my meals.  Temporarily I think!  I had been experiencing some intestinal discomfort and it was suggested by a nutritionist to start slowly and cut back on anything where wheat was included.  Time to read boxes and make myself aware!!!!  So many foods contain wheat.  Read more about it when you get a chance.  Google has been helpful.

Here's my recent beef(hamburger) recipe.  I just wanted to play to see if I'd enjoy it.  I definitely did!!


1 lb.  ground beef(85 %)
1 tsp. Salt
1/2 tsp pepper
2 cups crushed corn flakes
1 tsp. Parsley
1/2 tsp. Paprika
 1 tsp. Onion powder
cooking spray.

Mix beef with salt, pepper and onion powder.  Make a good size patty. You should be able to get 4 to a lb.

In a bowl place 1 egg and whisk well.  Two if you are using a lot of ground beef.

In a separate bowl.  Place crushed corn flakes.  Season with paprika, parsley and a little more onion powder.

Place beef patty in egg , turn over and dip both sides into egg and then into crushed seasoned corn flakes.

Have a cookie sheet lined with foil(easier to clean up) sprayed well with cooking spray and set oven temperature to 400 degrees.

Place patties on cookie sheet.  Bake and 400 degrees until your desired cooked appearance.  I like mine medium well so mine were of medium size and it took about 15 to 20 minutes.  I turned after approximately 7 minutes. I didn't want any rare meat.

This was not a definite cooking time.  It depends on you.  It's a try and error approach.  

It's a nice change and I'll definitely make these again.  I may add different seasonings..You can too...Use your favorite ingredients to season the burgers or the crushed corn flakes.  Enjoy!























Red Beef stew


This recipe is super easy and so delicious.  Summers here and I’m multi tasking by using my crockpot so I can have a meal ready for later while I do laundry.  Mom’s Monday meal was homemade soup as many of our mom’s did.

1lb. Stir fry beef pieces or beef cubes ( your beef will cook quickly ).
I medium onion diced
Salt and pepper
1-15 oz. tomato sauce (3 small Aldi sauce) or use crushed tomatoes 
2 cans water
I clove minced garlic
2 potatoes cubed
3 carrots cubed
1/2 lb. green beans (aldi frozen) (optional)

Sauté beef and onion in a little oil.
Drain any unnecessary grease.  My beef was super lean.

Add tomato sauce , carrots and water.  Cook on low 6 hours or high 4 hours.

Note;  I use my microwave to par cook my cubed potatoes and green beans in salted water. Drain and add to sauce 1 hour before serving.

Adding more veggies is always an option,

Tuscan or Italian pork tenderloin

Healthy and delicious!




Easy Sunday meal!


1 lb.. pork  tenderloin 
Dry Tuscan rub or Italian rub”
Olive oil

Rub olive oil over tenderloin.  Season, wrap in plastic wrap and refrigerate until use.

Note:  you can also marinate pork in Italian salad dressing as well.  Cover and marinate turning occasionally .



Spray at 13x9 inch pan with cooking spray.

Season pork generously and bake covered 400 degrees approximately 20 minutes covered.
  

Remove tenderloin from oven.  Remove cover.  Bake another 5 to 10 minutes or until light pink or no pink in center.
