Creamy chicken casserole









Tonight’s dinner is for all carb lovers.  It’s Delicious!! And no particular recipe was followed.  I just used what I had available.

I’ll call this casserole Creamy chicken and cheese.  I use the cheese that’s posted in photos.

It really makes this dish so creamy. I recommend this cheese.

Turn oven to 350 degrees while prepping.

My recipe is a guesstimate....

3 cups of homemade chicken broth.  1/2 cup whole milk and 11/2 cups cubed chicken from the broth.  ( soup was made yesterday)

In a medium to large pot on low heat I placed 3 T butter and allowed it to melt.  Then I added 1/2 tsp. Onion powder to butter and 1/2 cup flour stirring continuously to blend.  Note: Don’t worry it will start to clump so immediately add 3 cups chicken broth and 1/2 cup milk while using a wire whisk to blend. Cook on medium heat stirring continuously.

Add 1/2 bag of ***creamy mozzarella cheese to broth/chicken mixture and whisk to incorporate.

Add 1 cup minute rice and stir to mix.

Pour in deep dish casserole .  Top with 3/4 cup sharp cheddar cheese and bake uncovered approximately twenty minutes in 350 degree oven.

Remove from oven and allow to set for ten minutes before serving. It spoons nicely.

I served with buttered carrots.

Any Green vegetable is a good alternative Or fresh fruit.  None of which I had available.  M.j.

Broccoli Cheddar or Chicken Caesar Pizza! Make it your way!!



Ever since my hubby had a Chicken Caesar Salad Pizza he has been driving me crazy to make some.


  I've put it off long enough so today is the day to satisfy our taste buds.  I said OK but  I'd have to please BOTH our taste buds so I am making this pizza half and half.  Half Chicken Caesar and half Broccoli Cheese so we both can be happy!  Enjoy!

Note:  You can easily make this type of pizza with refrigerated pizza dough or your local pizza shop should sell you some of their pizza dough.

 Place dough in pizza pan and pre bake the crust for several minutes or until browned> Remove from oven and add topping.  Put back in oven to melt cheese and it's as easy as  One Two Three!

His!  Chicken Caesar Pizza

This was mine!  Broccoli Cheese  Yummy!

It was really quite easy.

One:   I bought a prebaked rectangular pizza shell to make it easier. I baked it with a little olive oil at 425 until it was golden.  Approx. 10 minutes.  Set aside

Second: I cut up in small pieces two boneless chicken breasts (I used my poultry scissors). I Lightly sprayed a cooking pan and sautéed the pieces that I seasoned with some garlic powder until there wasn't any pink.  I let the chicken breasts cool,

Third: I added 1/3 cup of Light Caesar Dressing and tossed.( You can easily use a store bought chicken and cut some of the chicken into small pieces.

Fourth: In a separate bowl I diced 1 small Roma tomato (I removed seeds)
1/4 to 1/2 cup Romaine lettuce (small pieces)

Fifth: Placed lettuce and tomato into cooled to room temperature seasoned chicken and stir.

After your pizza shell is baked place chicken/tomato/lettuce on top making sure to spoon all with all the salad dressing.  Top with a bit of mozzarella or Parmigiano Reggiano cheese and bake in a hot oven until cheese is melted slightly.  I baked it for about 5 to 7 minutes at 450 degrees.

Note:  I made this pizza half the way my hubby likes it and the other half I made Broccoli Cheese.



Here is how I seasoned the broccoli:

You can use either fresh or frozen broccoli.  Cook until tender with slight amount of salt. When cooked, drain and add several tablespoons olive oil and 2 cloves minced garlic.  Toss and top pizza crust.  Add shredded cheese of your choice.  **I used shredded brick cheese.  I like a little more flavor than mozzarella.  You can you any cheese to your liking..

Zucchini Fritters


Similar to potato pancakes but less carbohydrates
this is a great alternative for those cutting carbohydrates in their diet.  Try adding a doll up of sour cream to enhance the flavor.. 

We enjoyed them as a meal but using them as a side is certainly a possibility.

Note:  adding a bit of salt and onion powder imo was needed.

They are great alone or use them as a side dish. This is a recipe I saved from 2015.

Another peach cobbler






Here’s my easy recipe for a bar type peach cobbler.  Easy to cut in squares after cooling or you can spoon it warm with some vanilla ice cream. Enjoy!

Sprinkle with a little ground cinnamon if you would like.

I was just playing with a basic recipe...





4 large fresh peaches cleaned and diced
1/2 cup white sugar 
1/4 cup brown sugar 
2 T lemon juice
2 T water

Stir gently.  Set aside 

4 T melted butter
1 cup Bisquick 
1 cup milk
1/4 cup sugar 
1 tsp. Vanilla 
Cinnamon optional

Melt butter and place ins 13 x9 inch baking pan.

Turn oven on to 350 degrees

Place Bisquick, milk and sugar in a bowl and whisk until blended.  It will be s thin batter.

Pour batter into casserole over melted butter .

Place peaches gently on batter.  Do not mix.

Place in oven in a 13 x9 inch baking dish and bake for approximately 1 hour.  Check after baking 45 minutes and if not browned place back in oven until top is nicely browned.  Center should be set but still soft.

Meatloaf marinara



It's going to be a good day for meatloaf.  This is my version of meatloaf marinara.  It's good!

Fresh ground chuck and just a few other ingredients made this an easy to make and enjoy meal.  

Also make note...leftovers are yummy....

I lb. ground chuck
1 egg beaten
1/2 cup milk
1/2 cup garlic herb bread crumbs
1 tsp.. Salt
1/2 tsp. Pepper


FILLING

6 to 8 slices of Provolone cheese
Save two slices to top after baking




1/2 to 1 cup marinara sauce( I used Aldi specialty marinara sauce). It’s good!
A few sprinkles of pecorino Romano cheese

Mix meat mixture above with hands until all is incorporated.

Grease a loaf pan.

Place half of mixture in pan.  Press down firmly to ends evenly.

Top with sliced provolone and add the rest of meat mixture.  Bake 350 degrees for twenty minutes covered.  Remove cover top with marinara and bake another 25 to 30 minutes.  Top with remaining cheese and bake another five minutes.  Remove from oven allow to set for approximately 5 minutes and serve.  I served with hash browns for a change.  Hubby enjoyed both.  

Note:  You can easily serve this meatloaf with pasta, potato or a salad.
