Mock Devonshire Scone cream

Yes I love scones!!! Especially with jam and cream. Since I can't seem to find any devonshire scone cream in my local grocery store I am opting for this mock cream recipe.

Here’s a wonderful recipe that works wonderfully and you can make it in the comfort of your home.  Enjoy!

Mock Devonshire Cream (I found this recipe in Condiments and Sauces)

3 oz. softened cream cheese
1 tablespoon sugar
1/8 tsp. salt
1 cup heavy cream

Beat cream cheese, sugar and salt until well blended..Pour in whipping cream slowly,.  Beat with mixer until cream is stiff.. Store in refrigerator..Makes enough cream for 12 scones...Delicious!!!!

Real cheese Queso Dip

I've been on a roll with new recipes especially for appetizers.  It must be the time of the year. The holidays, cold winter nights and football and basketball games.

I made this one for Christmas and my family went WILD. I mean WILD. They loved it and it's all real cheese. No velvetta here lol.

Creamy, spicy and so fabulous I had to make copies of the recipe to send along with them.  That's how delicious it is.

I made it in the crockpot which can't get much easier.

Here goes;

1/2 lb. Pepperjack cheese(deli counter)
1/2 lb. American cheese  (deli counter)
1 cup whole milk
8 oz. cream cheese softened
1/2 cup sour cream (no low fat in this recipe allowed)
1 can Rotel tomatoes and green chiles
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. chili powder

Note: keep a little more milk on hand to thin if necessary.  It does thicken opon setting.

Combine all ingredients in crockpot on low for 1 1/2 to 2 hours,  stirring occasionally.

*** You can also cook this on top of the stove in a dutch oven and then transfer to crockpot to keep heated on warm.

Enjoy!  We all did....

Three Cheese and Jalapeno dip

Holy Moly here's a new dip to add to your Holiday hot appetizers.

Three cheese and Jalapeno dip
In back is photo of hot sausage dip

My family loved it. That is if you like lots of cheese and a slight bite too.

1- 4 oz. can diced jalapenos or 4 to 6 freshed jalapenos, roasted and diced.
1-8 oz. package cream cheese softened
1 cup sour cream
1 tsp. garlic powder
2 cups shredded cheddar cheese
3/4 cup shredded parmesan cheese(I use pecorino romano)

Topping
1 cup Panko bread crumbs
4 T butter melted
1/4 cup shredded parmesan cheese
1 T fresh or dried parsley (I used dried)

Preheat oven to 375 degrees
Mix cream cheese, garlic powder and sour cream with mixer until creamy. Add cheddar cheese, 3/4 cup parmesan cheese and diced jalapenos. Mix well.

Spread into a 8x8 baking dish.

Combine bread crumbs, melted butter, 1/4 cup shredded parmesan and parsley.

Spread crumb mixture over cream cheese mixture.  Bake 15 to 20 minutes or until hot and breadcrumbs are golden brown.

Enjoy!

Spicy sausage dip or spread

For all the meat lovers out there.

Spicy, loaded with cheese and sooooo tasty that's what this is. Sure fire yummy!

I had a hard time coming up on what to refer this as a dip versus spread explanation.  My hubby and kids scooped it up with nachos and I used it on crackers so you decide what you might like to refer to it as when you make this. It's perfect for New Year's Eve or a football game munchie.

Enjoy!

1+ lb. hot pork sausage
1-10 oz. can diced tomato and green chiles
1- 8 oz. softened cream cheese
3/4 cup shredded sharp cheddar cheese
Large corn chip, scoops, nachos or a solid cracker will work.

Cook sausage in a large skillet until meat crumbles and is no longer pink. Drain well. Drain tomato and green chiles, reserving 1/4 cup liquid. Stir together sausage, diced tomato and green chiles, reserved liquid and cream cheese. Spoon onto lightly greased 1 quart baking dish. Sprinkle with cheddar cheese and bake 350 degrees 20 to 25 minutes or until bubbly. Serve immediately.  Enjoy!

Our 2017 Christmas

Here we are another year and another Christmas to feel extremely grateful and blessed.

We are blessed to have celebrated our 50th wedding anniversary in July and the oldest two of our grandchildren turned 21 this year and are juniors at the same college.  We feel that is so great!  Cousins and good friends.

I’m in a typing mood and feeling so blessed that I’d like to tell you a little more about our five grandchildren.

Our middle grandson is a senior in high school and a computer genius.  He will be off to college next year. He is the one who helped me write a cookbook, get my blog going and has been accepted to the college of his choice.

Our youngest granddaughter is a junior in high school and captain of her high school cheerleading team.  She is also a news anchor on her school daily newsfeed. She’ll be applying to colleges next year.

Our youngest grandson not only excels academically but also is on the varsity basketball team which is amazing since he is a freshman.

We are proud of them and are hoping to see them reach their life goals.

I miss my mom, dad and brother but thank God I have this beautiful family to keep me going. You must remember to have faith because faith is what keeps me going.

It was a Great day if I must say. We had lots to eat and laughed a whole lot. The best time is when we are together as a family.

Counting my blessings.  I love them all.
