Slow cooker beef ribs








4 pounds boneless or bone-in beef short ribs about 8 short ribs •(1 1/2 lbs.*** 1 teaspoon salt • 1 teaspoon black pepper • 3 cups beef broth (1 1/3 cups beef broth)*** • 1/4 cup worcestershire sauce (3 T )*** • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 sprig fresh rosemary • Season the short ribs with salt and pepper. 

Heat a large skillet over high heat. Sear the short ribs on each of the 4 sides for about 60 seconds per side. • Pour the beef broth, worcestershire sauce, garlic powder, and onion powder into a slow cooker and stir together. Place the short ribs into the liquid in the slow cooker. • Place rosemary sprig on top of meat and put the lid on. Cook on low for 6-8 hours, until meat is tender. 

 I adjusted this recipe. 

I had 1.5 lb. of beef short ribs snd I did not use any Rosemary and reduced spice amounts.

After ribs were cooked I removed ribs from broth.I placed them in a pan and covered them with Sweet Baby Rays BBQsauce on both sides.

Bake in 400 degree oven 8 minutes each side to coat the ribs in sauce well

Crockpot Chicken in butter and garlic sauce

It's a rainy, cool fall day here in Pennsylvania and I have been slacking on my cooking.  I cook everyday but have been cooking our favorites so today I decided to try an easy new chicken meal.  Can’t beat the convenience of crockpot cooking!





I love crockpot cooking because it's just for people like me who sometimes need a break from cooking but do love to eat.

Here goes:

2 large boneless skinless chicken breasts
3 large carrots cut in large slices
1 bag Yukon Gold potatoes cut in half
1-14.5 oz can chicken broth
1 stick salted butter(I used 4 tablespoons)and it was just fine
3 Tablespoons minced garlic
1 tsp. salt
pinch pepper
1 tsp. dried thyme
1 tsp. dried parsley

Place chicken in bottom of large crockpot

Microwave butter, garlic , salt, pepper, thyme and parsley for 25 seconds and stir.  
Pour 1/2 of mixture over chicken.

Add carrots and potatoes.  Pour remainder of butter mixture over veggies.

Add 1/2 cup of chicken broth

Cover and cook on high for 3 to 4 hours or low for 6 hours. 

Moist and flavorful!!

Slow cooker flank steak

IMO the difference between a slow cooker and a crock pot is very simple. You can saute or simmer your meat or vegetables first in a slow cooker. It comes in two sections. The cooking pot and the heating element or cradle. The cooking time is very similar to a crockpot and the results are almost if not the same.

1+ lb. flank steak cut in strips
1 shallot sliced thin or yellow onion
2 T chili powder
1 1/2 green or red bell pepper cut into strips
1/4 tsp. oregano
2 tsp. garlic powder
1 tsp. salt
2 T lime juice
1 cup beef broth
1- 15 oz. can black beans rinsed and drained
Salt to taste
2 cups rice
Crispy fried onions(in a can) Optional


In a slow cooker brown sliced flank steak with shallots. Place on heating element and add bell pepper strips, garlic powder, oregano, salt and lime juice.  Add beef broth. Stir.  Cover and allow to cook for 4 to 6 hours on medium heat depending on degree of desired tenderness. Add drained and rinsed black beans 15 minutes before serving.



Spoon and Serve over rice. Top with some crispy fried onions.  Enjoy!

Crockpot rice pudding


An old favorite that my mom made long ago.  She would stand over the stove for more than a hour making creamy rice pudding.  I decided to try her  recipe in the crockpot.  Creamy and delicious and I didn’t have to stand over the stove for an hour or better.  Great solution to those who want a hands free option.

Enjoy!



3/4 cup pudding rice (Arborio)
1/2 cup Sugar
4 cups whole milk
2T butter
Pinch salt 
Pinch cinnamon



Place all ingredients in your crockpot. Stir well.  Set temperature to high.  I stir again after and hour and cook approximately 1 to 1/2 hours. Check after 1 hour and stir.



Note:  if it thickens too much add some milk and stir.

Barbecue Beef sandwiches

I made this recipe using my leftover beef roast. 






Barbecue Beef Sandwiches
2 cups thinly sliced beef
2 Tbs onion Powder
1 Tbs brown sugar
2 tsp paprika
1 tsp chili powder
1 tsp cracked pepper
1/2 tsp salt
1 clove garlic, minced
1 cup ketchup
1/4 cup water
1 Tbs vegetable oil
1/4 cup rice vinegar 


Note: my beef was not tender so I chopped it in my food processor.

Combine ingredients in Crockpot.  Cover and cook on low 4 to 6 hours.   Serve over French rolls or buttered toast.  Makes 4 to 5 servings.


I used buttered toast for a nice twist to a delicious sandwich.

Easy chicken salsa

No fuss Salsa chicken.






Boneless chicken breasts, sliced onions and peppers as well as a Jar of Organic mild salsa.  Layer chicken, peppers and onions then add salsa.  Cook on low 4 hours.  I served it over brown rice! Tasty and easy to make.  Light Summer meal!

Red sauce with Beef cubes

Yesterday I made my homemade sauce with beef cubes. (Simple explanation. Freezer broke so I had to use some items. One being beef stew meat).
I never had done this before and the meat and sauce were quite delicious.
It was approximately 1 lb. lean beautiful beef.
I browned the meat in a pot on top of stove with a small thinly sliced onion in olive oil. After the both were lightly browned I added 2 generous (Large)cloves of garlic sliced very thin. ( I usually use my garlic mincer).
I cooked everything a little longer ( I didn’t drain the meat because it was super lean)and then added all to my crockpot along with 1 large 28 oz. can Tuttorosso crushed tomatoes and 1-15 oz can organic tomato sauce , 1 tsp. Dried basil, and a little extra salt and pepper.
We were busy all day so it cooked from 9 am until about 5 on low. The meat was tender and the sauce was awesome. Every crockpot is different so you should check the meat periodically for tenderness.
I cooked 1 lb. small rigatoni (Delallo brand)until a’dente. We don’t care for overcooked pasta.
Here’s a picture of the sauce and what was left of the pasta. I did separate some plain to make a quick alfredo sauce just in case. Note: the red sauce was so awesome I should have used all the pasta with the red.
House smelled great and of course don’t forget the Pecorino!!!

Seasoned Chicken Ranch, my way

Using the ingredients I had hanging at the hotel I made this easy crockpot chicken meal using ranch dressing.  Hope you like it.  It proves that using ingredients that you may have in your frige and pantry you too can create an enjoyable meal.








2 bonesless chicken breasts cut in large pieces 
1 pkg. Hidden Valley Ranch (dry)
2 T. butter
1/2 cup sliced carrots
1/2 diced celery
1 glove garlic minced
1 chicken flavor rice a roni **Note: (do not use seasoned packet that is enclosed) save for another time
1 -10 oz. can chicken broth
2 1/2+ cups water
1/2 package frozen peas(optional add in 10 minutes before serving)

In a medium size crockpot place chicken, butter, carrots, celery and dried ranch package, add rice r roni (rice and noodles).  Add chicken broth,water, cover and place setting on low or high if you want it to be done quicker.  I did mine on high and it was ready in about 4 hours. 

You may have to add more water or broth to thin.  I like thick so it was fine for us.

Easy and delicious.  Make note if it becomes too thick add more chicken broth or water.

BBQ Country Style Spare Ribs (Crockpot easy)

All you need is a crockpot and BBQ sauce
 Didn't have a clue what to make so out comes my crockpot and this was super easy and I didn't have to stand over it and wait until it was done.  Basically the most effort was boiling the ribs but that only took 15 minutes so as soon as I placed all in my crockpot off I went to look for flowers.  A good day!   Serve with a side of cole slaw and it's a meal in our house. Enjoy!




Cover ribs with water and Boil for 15 minutes. Drain.  
Place the drained ribs in your crockpot add Barbeque sauce and cook on LOW 6 to 8 hours.

Cover and cook on low 6 to 8 hours or until tender.  Falls apart




2 lb. country style spare ribs
1 large bottle BBQ sauce
1/4 cup or less water(enough to clean out all the good stuff in the jar)
red pepper (optional)


In a large pot place spare ribs and cover with water.  Boil for approx. 15 minutes.  Drain

Place spare ribs in Crockpot and cover with BBQ sauce. Add enough water to swish around bottle and add it too. (Approximately 1/4 cup or less) Cover and cook on low for 6 to 8 hours.  Enjoy!

Crockpot Baked Ham


Are you in a dilemma of how to make a small boneless ham?

Here’s a suggestion...


Easter ham is a favorite of mine. It's kind of a tradition that I have that if there isn't a ham of some sort in my refrigerator I'm thinking I'm missing something.  Ham is so easy to serve and even when unexpected company stops by whip out the ham and some bread or rolls and yep you have it covered.  

The recipe below is how I made a small half of a boneless ham in my crockpot.  The recipe originally called for several spices I didn't have in my pantry so I just added a few things I did have and it was delicious.


Here is my original post.  I made it for the first time at Christmas.  Enjoy!


I had bought an approximately 3# cooked ham and viewed a few recipes but either I didn't have all the ingredients or they just didn't appeal to me so I put this little beauty of a ham in my crockpot and added a few of the ingredients I happened to have in the house.  I think it's a winner and so easy!

The finished Product!  You're going to love it!!

1- approx. 3# cooked boneless ham
1-10 oz. Sweet and Sour Sauce
1- 6oz. pineapple juice
1 cup chopped peaches(drained) ,dried apricots or other dried fruit of choice

Note: If you are using canned peaches, you do not have to use the juice because there is enough liquid.


Place ham in crockpot.  Mix ingredients and pour over top.  Cook on high approx. 6 hours or low 8 hours. Serve as is with all the good stuff surrounding the plate or:



Note:  After ham is cooked you can strain drippings and thicken sauce with a little cornstarch if you would like.  Serve on a soft or crusty roll or with a baked potato or salad.  Yum
