Sticky beef meatballs!

I’ve made sticky chicken with cubed chicken but never with ground beef so today’s recipe is just that.  Sticky chicken meatballs!

They’re good!  I have some for leftovers tomorrow.  I only drizzled the sauce on what I felt we’d be eating today.

***NOTE:  Ps.  You can substitute ground Turkey or chicken in this recipe!










1 lb. beef
1/2 cup breadcrumbs 
1 tsp.  Salt 
1/4 tsp. Pepper
1 egg beaten
1small grated onion or 1tsp. Onion powder 
1/2 tsp. Garlic powder 
2 tsp. Soy sauce
2 T brown sugar 
***Chopped Chives or scallions for garnish
***Sesame seeds for top

Mix  (but chives and sesame seeds)above ingredients just until incorporated.

On a medium size cookie sheet spray with cooking oil.

***Set oven temperature to 400°.

My meatballs are about the size a tablespoon of meat.

Place meatballs on cookie sheet and Bake for 15 to 20 minutes until
Slightly browned.

While meatballs are baking make the sauce.

In a small dish put

1/4 cup rice vinegar 
2 T honey 
2 T brown sugar 
2 T soy sauce 
1/8 tsp. Hot sauce
2 T water
2 T cornstarch 
Whisk all until blended 
Steamed rice (I used minute rice) for convenience 

In a small pot place sauce ingredients 
Cook on medium stirring constantly with whisk until thickened 

Remove meatballs from oven and place on cooked rice.

Drizzle sauce over meatballs.  Garnish with chives and sesame seeds.

Meatloaf again!













I just love playing with a meatloaf recipe.  My mom would never nor would my mother-in- law but me I’m adventurous….

Today I went against it all and used dried spices for the first time.  Shame on me !   

Seriously.  My original recipe calls for basic ingredients and fresh chopped onion for sure but today no to that and I added garlic powder which mom never did.

I made 2 loaves and a small mini loaf for our dinner today.  

The others I carefully made into loaves, wrapped in clear wrap and then freezer paper and labeled for later use.

Below are ingredients for 2 lb. of beef.

2 lbs. 93% beef
1 T salt
1tsp. Onion powder 
1 tsp. Garlic powder 
1 T dried parsley 
2 eggs beaten well
1/2cup milk
11/4 dried Panko breadcrumbs 
Chili sauce to coat top of meatloaf.

Bake 350 uncovered for 1 to 1/2 hours or until
Meat thermometer says beef well.

Top with chili sauce, ketscup or today I used a Thai sweet and spicy sauce.   So yummy!

Served with Beef r Roni and green beans.

How to make an easy meal with ground beef

Hi:

Dinner! I  Seasoned (salt and pepper) ground beef  placed in a pot with a small amount of vegetable oil and added a whole sliced sweet onion.  After it was browned I placed it in crockpot with 1/2 cup sauerkraut , 1/2 head sliced cabbage and some of my marinara  sauce.  It took approximately  4 hours on high heat.  6 hours on low.

Note:  you can make this meal in a Dutch oven on top of the stove.  Varying heat.  Cover to allow cabbage to cook.

Over Freshly mashed potatoes.  Sooo yummy! Salt and pepper to taste!

And if you dare to add a green salad and some fresh bread and butter.  Mmmmmm mmmm good !

Salisbury Steak Meatballs





It is getting harder and harder to come up with easy meals that require little work and can be made from start to finish in a little over an hour.

I had bought some fresh ground round steak at the store the other day and I had intended on making some burgers with it but wanted something a little different.

It's over 6 years that I have been bringing recipes from my kitchen to yours and I'm needing some assistence for some variety.  I'll be adapting recipes I think are of interest and easy to make for a little change. Hope you continue to like what you see and find a few more selections for dinner at your house.

I adapted a recipe to my liking and it's a nice change.

l lb. lean ground round (I'm sure you can use lean chuck or lean beef too)
1 tsp. salt
pepper to taste
1/2 cup seasoned breadcrumbs
1 T. ketscup
1 tsp. dry mustard
1/4 cup beef broth
dash of Worcestershire if you like(I eliminated it)






1 T butter
1 T. olive oil
 1 medium onion sliced thin
2 cups beef broth

Mix meat mixture and form into meatballs size balls.

In a large deep skillet on medium to low heat place butter and olive oil.  Place meatballs and fry until browned on all sides. Remove meatballs from skillet and drain any excess grease.

In the same skillet place thinly slice onions and fry slowly until browned and slightly tender while scrapping pan. Add 2 cups of beef broth and simmer for a few minutes. Add meatballs and simmer until meatballs are warmed.  

To thicken mixture if you like you can thicken mixture before adding meatballs with a little cornstarch.


Serve with mashed potatoes.

Easy hamburgers in gravy!

Today my grandson's went golfing with Poppy and Grammie  had lots of catching up to do with her cookbook orders so when Poppy called and said the boys were coming for dinner quick hamburgers in gravy came to mind. I make mine small so they cook quickly and make sure to brown them a bit so your gravy will be a nice brown color. Make sure to scrape bottom of pan with a wooden spoon to loosen bits of brown pieces while adding the water to the pan.  Easy recipe and gravy instructions below!

They love gravy!!!!!!!!!!!!!!

1 1/4 lb. natural lean beef ground
salt
pepper
parsley
onion powder
Vegetable oil
1 sliced medium  onion

In a large pan place some vegetable oil.  Mix beef with salt, pepper ,parsley and onion powder to taste.   Make several small to medium size patties.  Cook patties and onions until browned on each side making sure to brown so the bottom of your pan has some color.  After patties are cooked remove from pan and set aside.

To the pan add **2 cups cold water or 1 cup cold water and 1 cup beef broth ( **you can add all broth )a little more flavor with broth).  Stir well to loosen up any brown drippings.  Add 4 T flour in a small dish with some of the cold water whisk and  add to liquid.  

Turn heat to medium and continue to whisk u til mixture thickens. 

 Add cooked hamburgers and cook slowly in thickened gravy.  Serve over bread with potato or vegetable of choice.

Loaded Enchiladas! my recipe





Today since our youngest grandson was visiting us I decided to make a new version of a basic enchilada recipe using some of his favorite add/ins.

I would have added chiles’ too but I didn’t have any so this worked out delicious anyway.  

1lb. Ground beef
Taco seasoning pack
1/2 cup water
1 can black beans rinsed 
1 can drained corn
1/2 can refried beans
1/4 cup+hot sauce
2 cups  shredded cheddar cheese
1/2 cup mozzarella cheese(optional) I had some so I added about 1/2 cup.
1package large flour tortillas 
1large can Enchilada sauce
Sour cream, chives (optional)
Cooked white or saffron rice 

Sauté beef in 2T vegetable oil until beef is browned.  Add seasoning pack and water.  Stir and allow to bring to a low simmer.  Remove from from heat.  Add refried beans, stir until blended with beef.  Add corn , hot sauce, rinsed black beans and 1cup shredded cheddar cheese. Stir.

Spray 9x13” baking dish with cooking spray. 

Place 2 large Tablespoons of beef mixture and fold tortilla.  Place in greased 9x13” baking dish.  Recipe makes about 10 to 12 tortillas.
Top enchiladas with  Enchilada sauce and remainder of shredded cheese. Bake 350° 20 to 30 minutes uncovered.

Quick Hamburger Crescent Ring Meal

Yesterday I went to the grocery store and bought a pretty big order because I am planning some new recipe dinners and desserts this week.  Fall is on it's way and I am pumped again to get some new recipes to you.

I had some time to glance over a few of the recipes I thought would be easy for those who need to change their summer menu and are thinking fall and comfort foods. Note:  It is a very good idea to check and mark the items you need for a recipe before you go to the store.  It will save you loads of time in the long run.


I saw this recipe that was made with crescent rolls, went to look it up and couldn't find it so here is what I came up with.  Tasty meal!  For a large family you'll have to buy 2 or 3 pkgs of crescent rolls because this meal is a grab and go type and it will be gone 123.

Hubby and I were fine with one package and I did have enough meat mixture to make two with the amount of ingredients I have listed below.









Instructions:

  1. Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun). 

Spoon the beef mixture over the short ends of the triangles closest to the ramekin. Cover the beef with the cheese slices. Top the cheese with the pickle slices. Remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely but should cover the pickle slice). Repeat with the remaining triangles (there will be some gaps where you can see the beef mixture)











1 1/4 lb. ground beef
1 medium onion grated
4 oz. cream cheese
1/2 cup pepper cheese
canola oil
salt and pepper
1 pkg. crescent rolls

Brown beef and onion in oil.  Add salt and pepper, cream cheese and pepper cheese. Stir until the cheese has melted.  Set aside to cool or refrigerate until ready to use. I think I could have done a little better in presentation as I was hurrying to get this on the table.  The filling was a quick thought
so I am sure you could change the pepper cheese to another cheese if you prefer.

Place on ungreased baking sheet.  Bake 375 degrees 15 minutes or until browned.  Yummy!

Note:  I cut up a fresh tomato and seasoned it to our liking and spooned it into the center of the ring.  Hubby thought it was mighty fine.

Mini stuffed peppers

This recipe can be appetizer friendly.  A knife and fork is needed.


8 to 12 small mini variegated peppers( cut tops off, remove seeds and wash and dry)
1/2 lb, ground beef or Turkey 
1/2 tsp. Salt and 1/4 tsp. Pepper
I egg
1/4 tsp. Onion powder
1/8 tsp. Garlic powder 
1/4 cup breadcrumbs 
1 quart Marinara sauce
1/4 tsp. Cayenne pepper to add to sauce( optional)
Mix above ingredients and stuff mini peppers

In a large skillet on medium heat place a slight amount of vegetable oil.  Place stuffed peppers and brown slightly.

In a medium size crockpot place 1 qt. tomato sauce( jar sauce is fine)

Add stuffed peppers.  Cook on low approximately 2 hours.  Peppers should be slightly firm.  Remove.  Allow to set slightly.  Serve on a small sturdy appetizer plate with some of the sauce.  Enjoy!

Baked meatloaf! with potatoes and carrots.


Today I made a smaller meatloaf  using 1/2 lb. Ground beef and red skinned potatoes cut in half.  Carrots again because I do like carrots!

All in one meal.  Baked meatloaf with white potatoes and carrots.

I love all in one meals.  Whether it is crock pot handy or in the oven the thought of putting several good ingredients in a pan or pot and coming out with a delicious, easy to do meal ranks top on my list of happy moments.  Call me crazy but finding meals to not only be healthy but also satisfying is not always easy and when you can put them all in one pan or pot I am one happy chick.  LOL  

This one was delicious.  We had leftovers so hubby had some the next day and me too!  Afterall meatloaf is healthy and this recipe had little bread crumbs so it was low in the carb area. The amount of ketscup was minimal so it was a good healthy choice in my book.  Enjoy and feel free to add anything else you'd like to this meatloaf.  I did not add the Worcestershire sauce(not a fav of mine).  And notice no eggs in this meatloaf and it held together perfectly.  YUM






  • 1/2 to 3/4 cup milk (use low fat is you want)
  • 1/4 cup ketchup
  • 1/2 cup crushed saltines or panko bread crumbs
  • 1/2 small onion grated 
  •  1 tablespoon Worcestershire sauce(optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound lean ground beef (chicken or turkey if you desire)
  • 2 small onions, quartered
  • 4 small potatoes, peeled and quartered
  • 4 medium carrots, quartered
  • 1 large green pepper, cut into quarters(optional)
  • parsley for garnish







  1. In a large bowl, combine milk, ketchup, cracker crumbs, Worcestershire sauce optional , salt and pepper. Add ground beef. Shape meat mixture into an 8-in. x 4-in. oval; place in a lightly greased baking pan. Place the onions, potatoes, carrots and optional green pepper around the loaf .
  2. Cover and bake at 350° for 1-1/4 hours depending on your oven. Uncover; bake 15 minutes longer or until there is no longer any pink in the center and potatoes and carrots are fork tender.  Note: mine took a little longer than time  suggested.  I used beef and pork in my adapted recipe.

Crockpot steak Pizzaiola, my way

Gold mashed potatoes , pizzaiola garnished with pecorino Romano and mozzarella.  Side of buttered baby broccoli.  Yummy!

Round steak was used today for the meal.




A good recipe I created today with a pound of thick cube steak I had in my freezer.

Thaw meat or microwave on quick defrost.

***Note:for this recipe a cheaper cut of meat can be used.

Approximately 1pound round steak cut in medium size pieces.I.  
1 medium onion sliced thin 
Olive oil 
Chopped fresh basil (dried can be substituted)
Chopped fresh parsley(dried can be substituted)
1/2 tsp. Dried oregano ( I don’t care for it but if you do that’s your choice)
2or 3 minced garlic cloves 
Salt
Black or red pepper( ***if you like a bite to your sauce use red pepper)
1 -28 oz. can purée or crushed tomatoes

1.  Sauté onion in oil until it starts to brown and caramelize slightly.  Add minced garlic and cook slowly.  Toss basil and parsley into mixture slowly.  Remove from heat and place in a small dish.

2.  In the same pan you cooked the onion/garlic add the 4 (approximately)medium pieces of steak.  Cook on medium heat with some salt until slightly browned on each side.

3.  Add browned steak to crockpot.  Top with onion, garlic, basil, parsley mixture on top of steak and add tomatoes.



4.  Set crockpot heat on low and allow to cook approximately 6 hours or until steak is tender.

Serve over pasta or as I did smashed potatoes.  We had steamed Brussel Sprouts as our side.
