Chicken sausage, red and yellow peppers, onions and organic tomatoes



Crockpot or Stove top?  You decide. I made it the crockpot way to allow myself some free time to enjoy the day.

This was a first time making Hot Italian chicken sausage and we really loved the flavor.

A combination of the seasoned sausage and sweetness of the peppers made this a worthwhile meal.

Serve it with some crispy Italian bread or soft rolls.  It was a good choice for a meal lower in fat and calories.

1lb. Hot Italian chicken sausage links
1large can organic diced tomatoes
1small can Sauce
1 red pepper seeded and sliced
1yellow pepper seeded and sliced

Sear sausage ,peppers and onions is a little oil in large pot or oven.

Place a little of the tomato mixture in crockpot .  Add seared  sausage , peppers and onions.

Top with remaining tomato mixture.  Cover.  Cook on low for approximately 4 to 6 hours or high setting for 3 to 4 hours.

Easy Pork Cutlets! Quick delicious Meal!

I'm a pork lover and you'll notice I do post a lot of pork recipes. It's my favorite white meat!  Today when I went grocery shopping I saw some pretty nice looking pork cutlets and quickly decided that they were going to be our dinner for tonight..  Here's a few pictures and the easy recipe.

Pork cutlet, brown sugar glazed sweet potatoes( Hanover Brand) and steamed peas with sliced onions 9/15/13


1 lb. pork cutlets
1 egg slightly beaten
salt and pepper
1/2 tsp. dried parsley
1/2 cup seasoned bread crumbs
canola oil




In a large skillet place 2 tablespoons canola oil.  Season cutlets with above ingredients.  (I use a large piece of wax paper and place bread crumbs, parsley, salt and pepper).  In a large bowl place beaten egg.  Dip cutlets in beaten egg and onto wax paper with breadcrumbs and seasonings.  Immediately place in heated skillet (medium heat).  Cook until browned on each side.  Cover and cook slowly until tender..If cutlets are thin they will cook in less than 1/2 hour..  Enjoy!

 Note:  Just a little helpful hint.  I tried for the very first time the above frozen sweet potatoes.  I have never used anything but fresh sweet potatoes and make my own glaze..I highly recommend these for a quick addition to your meal.  OMG they are wonderful and made this meal even easier.. I have not been paid to say this either!!! haha

Provolone stuffed meatloaf!

Creating some interesting meatloaves has been a hoot! I am sure I'll  tire soon but here's another yummy loaf that was super easy and you can either serve it with a vegetable, salad or maybe even a little pasta.  Note:  I put this together, covered and refrigerated it until I was ready to bake it.

1 to 1/2 lbs. ground pork( you can use meatloaf mix as well)
1 egg slightly beaten
1 tablespoon Italian seasoning
1 to 2 cloves minced garlic
1/4 cup bread crumbs
1/4 cup  grated Parmesan cheese
1/2 tsp. salt
1/2 tsp. pepper
1/4 lb. provolone cheese shredded ( I bought 1/4 piece of provolone and grated it)
Jarred pasta sauce



In a large bowl place pork, Italian seasonings, bread crumbs, salt, pepper,beaten egg and grated Parmesan cheese .

Press half of mixture in sprayed with cooking oil pan.

Place grated provolone cheese.  (You could use thickly sliced provolone too)
I served it with pasta on the side (jarred sauce if desired)

Gently pat remainder of meat mixture on top





Spray a loaf pan with cooking oil.  Place half of meat mixture on bottom.  Press firmly.  Sprinkle shredded Provolone cheese and top with remainder of meat mixture.  Place in 350 degree heated oven and bake approximate 1 to 1/2 until browned and firm to touch. Add a side salad and your meal is complete.  You can top this with jarred pasta sauce and cheese if desired.

Parmigiana Chicken Strips



Hi and a very great day to you.

I didn’t bother to jot down this recipe.  It was on a box of Bisquick type baking mix.

Result!  I’d make them again.  DELICIOUS!! Add a dipping sauce to make it perfect!!
