Air Fryer pork chops

I love using my air fryer.  It’s convenient for so many meats.

Today it’s center cut pork for the second time an easy quick recipe. Mine had a little fat on ends which really made them extra tender.

Note: If you use thinner pork chops they will cook very quick so watch time.  Personally a little thicker chop is the way to go.

2 -1/2 inch pork chops **without bone
Olive oil
Salt and pepper.

Generously coat pork with olive oil, salt and pepper.  I have used other spices so you season to your liking.  Note: I have used lemon and pepper seasoning too.

Turn air fryer on 365 or 370 degrees depending on your air fryer.

I used 370 degree temperature for 15 minutes turning chops at 7 minutes and added a few drops more of olive oil.

Moist and super tender.  Thumbs up!



While the pork was cooking I sliced in half small white potatoes, seasoned with olive oil, salt pepper , onion and garlic powder.  Baked 425 25 minutes.

Green beans with butter as a side

Easy cabbage

Repeat performance!




This time I sautéed meat and onion first in pan and then continued in crockpot on low about 4 hours.


I was up early and seem to be moving at a good pace so here’s what’s for dinner in my crockpot.

1 lb. ground lean pork ( you can use beef)
1 whole sweet onion sliced thin
1/2 head cabbage sliced thin.
Salt and pepper.
1-8 oz. can tomato sauce

In a medium pan place 2 tablespoons vegetable oil.  Add ingredients(except  tomato sauce) and brown slightly.  After pork is browned place in crockpot. Place sliced cabbage over pork and then tomato sauce.  Cook on low 4 to 6 hours









I use pork because my grandmother used pork as my mother.  It’s basically piggies in the blanket or stuffed cabbage done in the crockpot.



Delicious!  I ate my dinner as shown.  *** for my hubby I  cooked a small amount of rice and topped it with the cabbage.  Optional:  fresh bread and butter to dip it the delicious flavored juice.

Sliced And seasoned pork tenderloin

Dinner tonight! Sliced  pork tenderloin, buttered carrots and a potato puff.

I sliced the tenderloin and placed in a bag with salt, pepper, garlic and olive oil. Refrigerate until ready to use.

I Dipped the pork In beaten egg white and then into seasoned panko breadcrumbs. Sautéed slowly in olive oil covered slightly.  I added a little water to allow them to steam.

Here’s an easy meal for tonight.

Recipe:

1 small pork tenderloin (about 1 lb.) slice in medium size slices.
3 gloves garlic
Olive oil.

1 to 2 egg whites beaten slightly
1/2 To 3/4 cup seasoned bread panko bread crumbs.

Place pork slices , salt, pepper, garlic and generous amount of  olive oil in a large baggie and refrigerate for a few hours.

Remove from refrigerator.  Dip pork in egg whites and then into bread crumbs. Repeat until all pork has been dipped and breaded.

Place in heated skillet on low to medium. When browned, turn over and repeat.  Add a little water and cover slightly.  Watch so as not to darken too quickly.  Center will be pink( not red).  Cook longer if you prefer no pink.

Note;  If necessary add a little water to skillet to add some moisture.


Another Note:  after browning you can place in baking dish covered at 300 degrees for twenty minutes if desired for added convenience.

Easy pork chow mein






I was very lazy today and I had to go out for a while and didn’t know what I’d make for dinner so my easy way when I don’t know what to make for dinner is put the neat in my crockpot and decide later.  This was very good but just as good using a stir fry method.

My version of easy pork chow mein.  I used my crockpot to cook the pork. I seasoned it with salt, pepper and onion powder.  Cooked on low around 4 hours with 1/2 cup water.  You can use chicken or beef broth.

Cooled and shredded it.

I lb pork tenderloin
Salt pepper onion powder.


3 tsp. Oil
diced carrots
Diced Green onion
Diced celery

Cornstarch to thicken
Drained bamboo shoots and any other vegetables of choice. Mushrooms and water chestnuts optional

Instructions:

Later place oil, diced carrots,celery and onions in a large pan and sautéed until tender.  Add shredded pork. I Used drippings from pork and added water to equal 1/2 cup.  Thickened mixture with 2 tablespoons corn starch whisked with enough water to make a soupy thin paste.  Pour into hot mixture stirring constantly.  Add drained bamboo shoots and water chestnuts (optional)while stirring gently.  It will thicken quickly.

Served over hot rice with crunchy chow mein noodles.

Note;  This recipe can be made quickly with  sliced or chopped pork tenderloin.  Pork stir fries so easily so don’t hesitate to make this recipe using a stir fry method.

 Note: I had carrots, green onions and celery chopped and frozen so not much prep today.  Crockpot saved time (in my opinion) because I wasn’t standing over heat very long.

BBQ Country Style Spare Ribs (Crockpot easy)

All you need is a crockpot and BBQ sauce
 Didn't have a clue what to make so out comes my crockpot and this was super easy and I didn't have to stand over it and wait until it was done.  Basically the most effort was boiling the ribs but that only took 15 minutes so as soon as I placed all in my crockpot off I went to look for flowers.  A good day!   Serve with a side of cole slaw and it's a meal in our house. Enjoy!




Cover ribs with water and Boil for 15 minutes. Drain.  
Place the drained ribs in your crockpot add Barbeque sauce and cook on LOW 6 to 8 hours.

Cover and cook on low 6 to 8 hours or until tender.  Falls apart




2 lb. country style spare ribs
1 large bottle BBQ sauce
1/4 cup or less water(enough to clean out all the good stuff in the jar)
red pepper (optional)


In a large pot place spare ribs and cover with water.  Boil for approx. 15 minutes.  Drain

Place spare ribs in Crockpot and cover with BBQ sauce. Add enough water to swish around bottle and add it too. (Approximately 1/4 cup or less) Cover and cook on low for 6 to 8 hours.  Enjoy!

Air fryer boneless pork chops


Today was my Second time using my air fryer.  The first was making home cut fries in it.  It took a little bit of adjustment to get the correct temperature but they turned out pretty good.  I’ll be working on getting them to brown better but all in all I like this particular air fryer.

This fryer( insignia brand) seems to be perfect for my hubby and I.  It’s the smaller   Size.  Great for us!(2)


Recipe below.  All approximate amounts.

2 Boneless medium thickness pork chops.  

In a small bowl I added sage, rosemary, paprika, salt, pepper, thyme and garlic powder. ( I didn’t measure)

After misting the pork with olive oil I  Seasoned the pork on both sides with the above mix rubbing it in slightly with my fingers.

360 degrees approximately 16 minutes. 

I complemented the pork with  Garlic red skinned potatoes , cole slaw and baked beans. 

 I think depending on size of pork chops and your air fryer instructions it could air fry 2 or 3 pork chops in the 16 to 20 minute range. I used a 370 degree temperature.

My air fryer would fry 3 pork chops comfortably.  Mine is a perfect size for two.

Read your air fryer instructions and look on Pinterest or google for recipes.





Moist, tender and flavorful.

Sausage meatballs with pasta!!!!

 For those who haven't caught this recipe before..This one's for you!!  Make mini ones for Super Bowl..  Spice up your recipe with hot sausage!!!






Repost:  I made these Sausage meatballs again yesterday and they are definitely an easy meatball recipe to make over and over for a nice change to my favorite recipe for traditional meatballs.  No pasta needed!  Some Italian bread might be nice!  Enjoy!!

  Mom always made her own homemade sausage when we were growing up..She would buy fresh pork, grind it in her meat grinder and season it with her special seasonings.  When I was at the market I found some really nice lean mild  Italian sausage so today I'm adding a little of this and that to it making some medium size meatball shapes and baking them for later use..I freeze all types of meatballs because they come in handy for so many quick sauce meals..
I absolutely dislike store bought meatballs..It is just something that I personally can not eat..  You won't see me eating meatballs out for that reason..I know what ingredients are in my meatballs but not in theirs!

*Good quality sausage required.

**Note:  You can make mini meatballs and use as an appetizer in your favorite sauce.

 

Tonight we had Cappellini pasta with some of my sausage meatballs...Bon Appetit!


Mom used to toss her pasta in a pot and serve in a pasta bowl!  We roughed it a bit as the picture demonstrates.




1 lb. mild or hot ground(loose) Italian sausage (store bought or check out my sausage recipe on the blog)
1/2 cup shredded Romano or Parmesan Cheese( I prefer shredded cheese in this recipe but you can use finely grated as well)
1/2 cup plain breadcrumbs
1/4 cup parsley
1 egg

Mix above ingredients.  Bake at 400 degrees until browned slightly..Freeze or add to your favorite red sauce.
Makes approximately 20 medium size meatballs per pound.

Crockpot Barbecue country style spareribs


Easy peasy meal.



It’s Monday and I’m ready for sweet Barbecue sandwiches

Get out your crockpot and here’s the easy recipe,  Enjoy!




1 lb. pork country style spare ribs
1 chopped  or grated onion
1 bottle Sweet Baby Rays barbecue sauce
Cole slaw
Rolls

On a lightly greased cookie sheet place spareribs
Bake at 400 degrees for 10 minutes.

In your crockpot place 1/2 cup Barbecue sauce
Add spare ribs. Top with onion and the remainder of Barbecue sauce



Cook on low 6 hours or high 4 hours . Shred or cut in pieces for sandwiches or serve with side of choice.

Yummy!

Honey Pork Roast


  • Another crockpot recipe to add to my list.  I didn't add as much oregano(preference) and didn't add the Parmesan cheese.  It didn't seem to go with this recipe IMO.  
Make it to you and your families taste preferences. Oregano has never been a favorite of mine.  I think it can overpower a recipe so I always cut back on it slightly.  

It could be my memory of oregano goes back to when I was a young girl and we had a pizza restaurant  next to where my family had a small grocery store.  We ordered pizza from there frequently cause who doesn't like pizza lol.  Anyway for some reason on the table would be large shaker bottles with oregano in them and I used to load my slice with a lot of it.  Why?  I don't have a clue other than it seemed to be what we did at that time so now I don't like it.  I guess that's the best explanation I can give you. 






I adapted this recipe to our likes.  I only had (one ) 1 pound tenderloin and I did not add oregano.  We do not care for the intense flavor.  Be careful and adjust your amounts if necessary.

Thank followed this recipe and adjusted amounts to size if my tenderloin and I also added 1/4 of a green pepper to add to our taste.  I also am serving buttered carrots and rice with this meal.







  • 3 to 4 pounds pork loin roast
  • 2 tablespoons dried oregano
  • 2 tablespoons dried basil
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • 2 tablespoons garlic, minced
  • ½ cup honey
  • 2 tablespoons olive oil
  • ¼ cup soy sauce
  • *1/2 cup Parmesan cheese

DIRECTIONS

  1. Place roast in crockpot.
  2. In a medium bowl, combine the dried oregano, dried basil, black pepper, salt, minced garlic, honey, soy sauce and *Parmesan cheese, and mix well.
  3. Pour the sauce over the pork loin roast into the slow cooker.
  4. Cover and cook on low for 6 to 8 hours.
  5. Remove the cooked pork loin roast from the slow cooker, reserving the liquid. Shred the meat.
  6. Add the reserved cooking liquid to a saucepan and bring to a boil. Reduce the heat and simmer until reduced and thickened.
  7. Pour the reduced, thickened sauce over the shredded meat and serve.

Country style spare ribs

Easy weeknight dinner.

I love spareribs and this is one of the ways I prepare them.

Enjoy!

Approximately 1 lb. country style pork spare ribs trimmed.
1/2 + bottle Sweet Baby Rays honey barbecue sauce

Grease a cookie sheet with vegetable oil.  Turn oven to 325.  Place spare ribs on cookie sheet and cover.

Bake 30 to 40 minutes covered.  Remove cover, top spare ribs with Barbecue sauce and bake an additional 10 minutes.









Remove from oven.  Finger licking good!

Cole slaw is a good side or unsweetened applesauce. Yummy!

Serve with fries.  Mine are homemade.

3 large skin removed potatoes cut into slices. Rinse well and dry with paper towels.  Place 1/3 cup vegetable oil on a cookie sheet. Preheat oven to 450 degrees .  Place cut potatoes on cookie sheet and bake for 15 minutes. Turn over with spatula and bake 30 to 40 minutes more or until potatoes are tender. Season with salt and whatever seasonings your family enjoys!

Note:  you can leave skins in potatoes if you scrub them thoroughly.

Italian jambalaya






I've been in a crazy baking and cooking mode and they're all new recipes and just in time for fall friendly family meals.




  •  1 lb. sausage, casings removed cut in slices
  •  
  • 2 skinned and boned chicken breasts, coarsely chopped (about 1 lb.)
  •  
    2 boneless center-cut pork chops, chopped (about 1 lb.)
      1 cup total red and green peppers , onion and celery diced(mine were frozen)
        2 cloves garlic minced
          1/2 tsp. Italian seasoning
            1 tsp. salt
              1/2 tsp. pepper
                2-10oz. cans diced tomatoes with green chiles
                  1-6 oz. can tomato paste
                    1/4 cup water
  • Brown Italian sausage in a Dutch oven over medium-high heat, stirring often, 5 minutes or until sausage is browned  and is no longer pink. Remove sausage from Dutch oven

    Using a slotted spoon, remove sausage reserving drippings in Dutch oven.
    Step 2
    Cook chicken and pork in hot drippings in Dutch oven over medium-high heat, stirring often, 4 to 5 minutes or until browned on all sides. Add frozen onion mixture and next 4 ingredients, and sauté 5 minutes. Stir in diced tomatoes and green chiles, tomato paste, 1/4 cup water, and Italian sausage; cover, reduce heat to low, and cook, stirring often, 20 minutes
    Stir hot cooked orzo into jambalaya just before serving, or serve over hot cooked pasta. Garnish, if desired
  • Hot cooked orzo or other pasta (about 8 oz., uncooked)
