Baking for the holidays: Part 1

I Can't believe it's November already!  Summer flew by in a flash so I am thinking cookies and desserts to make for Thanksgiving or Christmas.. 

I have a few that quickly come to mind... I'll call them my favorites!!!!! and will post them to share.  

I'll start with Lemon sponge Pie ( add this pie to your pie list)..Mom has made it for years and now I make it..It is a wonderful addition and a nice refreshing pie to eat after you've had your turkey feast.  Enjoy!!  Happy Holiday Baking!!!


LEMON SPONGE PIE


¾ CUP SUGAR
2 TABLESPOONS FLOUR
JUICE AND RIND OF 1 LEMON
2 TABLESPOONS BUTTER(SOFTENED)
3 EGGS SEPARATED
2 CUPS WHOLE MILK
1 UNBAKED PIE SHELL

ROLL OUT PIE SHELL AND PLACE IN PIE PAN .. FLUTE EDGES SET ASIDE

CREAM SUGAR AND BUTTER, ADD FLOUR, EGG YOLKS, LEMON  RIND AND JUICE.. ADD MILK, FOLD IN BEATEN EGG WHITES THAT HAVE  BEEN STIFFLY BEATEN.. FOLD GENTLY INTO MIXTURE(USE LARGE SPOON OR SPATULA).. BAKE 35 TO 40 MIN. OR UNTIL CENTER IS SET.. CHECK WITH A BUTTER KNIFE ..IF IT COMES OUT CLEAN IT IS DONE. TOP WITH WHIPPED CREAM..
