Sharing my Wonderful Bacon Cheeseburger loaf!!



When possible I will post these easy loaf recipes on Sunday so it will allow you the time to get your ingredients if you are choosing to make  it on Monday!  Hope that makes some sense to you!!  A first time try!   This meatloaf will certainly be a regular here in our home.. My hubby loves burgers and I am so so about them but thought I'd try something along the lines of a cheeseburger but all in one. Using two pieces of thick cheese in the center and adding bacon bits and a little ketchup this turned out to be a great first time try.  Feel free to add pickles and mustard too if you like.  Just be careful not to add too much.  You want the loaf to seal on the ends with no difficulty.






 Note:  Leftovers are great heated in the microwave!!


Cheeseburger Loaf

1 lb. ground beef
1 medium onion (chopped)
salt and pepper to taste (approx. ½ to ¾ tsp.)
1 egg slightly beaten
½ cup ketchup
¼ cup bacon bits
¼ lb. thickly sliced cheese (mozzarella, velvetta, provolone) American cheese may not stay together well when baked)
2 soft hamburg buns(two slices soft bread can be used as well)

 In a large bowl combine beef, onion, salt and pepper.
 Break buns into small pieces.  Moisten bread slightly with water before adding to beef.
Mix beef mixture and bun pieces, salt and pepper, onion and beaten egg  well until all is blended.  Form one large loaf.  Cut in half.  Flatten into 2 pieces.  Place cheese, bacon bits and a slight amount of ketchup in center

Note:  You can add a few pickles and mustard also if you would like but only a slight amount.. Place top of meat on mixture and seal sides.



 Lightly grease a loaf pan with cooking spray, rub ketchup on loaf and bake 350 degrees 1 hour or more.  Do not cover.
