Bagel pizza





My version of a pizza bagel.

6 large bagels cut in half (12 half slices)
I jar pizza sauce or marinara sauce
1/2 lb sliced American cheese
4oz.  Shredded mozzarella
Sliced pepperoni, Chopped cooked sausage or topping of your choice.

Bake 400 degrees In toaster oven until cheese melts.  Approximately 5 to 7 minutes.

Italian jambalaya






I've been in a crazy baking and cooking mode and they're all new recipes and just in time for fall friendly family meals.




  •  1 lb. sausage, casings removed cut in slices
  •  
  • 2 skinned and boned chicken breasts, coarsely chopped (about 1 lb.)
  •  
    2 boneless center-cut pork chops, chopped (about 1 lb.)
      1 cup total red and green peppers , onion and celery diced(mine were frozen)
        2 cloves garlic minced
          1/2 tsp. Italian seasoning
            1 tsp. salt
              1/2 tsp. pepper
                2-10oz. cans diced tomatoes with green chiles
                  1-6 oz. can tomato paste
                    1/4 cup water
  • Brown Italian sausage in a Dutch oven over medium-high heat, stirring often, 5 minutes or until sausage is browned  and is no longer pink. Remove sausage from Dutch oven

    Using a slotted spoon, remove sausage reserving drippings in Dutch oven.
    Step 2
    Cook chicken and pork in hot drippings in Dutch oven over medium-high heat, stirring often, 4 to 5 minutes or until browned on all sides. Add frozen onion mixture and next 4 ingredients, and sauté 5 minutes. Stir in diced tomatoes and green chiles, tomato paste, 1/4 cup water, and Italian sausage; cover, reduce heat to low, and cook, stirring often, 20 minutes
    Stir hot cooked orzo into jambalaya just before serving, or serve over hot cooked pasta. Garnish, if desired

Homemade Belgium waffles

Why buy a box mix to make Belgium waffles when homemade are super easy.

Today’s recipe was so good.   It made about 7 large waffles and we ate a few as a late breakfast.

You can eat them with butter and syrup, fresh berries,cinnamon or powdered sugar.  I pureed a container of raspberries to top them because hubby likes raspberries.

Hubby added whipped cream to his.  Real whipped cream!!

I saved several and I’ve been toasting them in the toaster oven... omg I love them with fresh butter.  Great!!

 It an excellent breakfast or evening meal suggestion.  They freeze well too.

  Storing:  Use wax paper or parchment in between layers then I place them in a large freezer bag for later.  Enjoy!






2 1/4 cup flour
1 tsp. Baking powder
3 tablespoons sugar
1/2 tsp. Salt
2 large eggs separated
1 tsp. Cinnamon
1/2 cup vegetable oil
2 cups milk
1 tsp. Vanilla








Pre-heat your waffle iron.  Spray with cooking spray before turning on heat.

Place dry ingredients in a large bowl.

Separate eggs.  

Add egg yolks and vanilla to dry ingredients along with vegetable oil using a hand mixer.  Slowly add milk to mix.

In a separate bowl using a hand mixer beat egg whites until stiff.

Using a wire whisk or spatula gently incorporate egg whites into all ingredients.   

Note:  I used a 1/2 cup measuring cup as my gage for the amount to use to get a nice size waffle.

Ciambellone..... Italian coffee cake

In our house it's not Christmas unless you make Ciambellone.





I loved making this and I know this will be a well received...Yummy, light and just the right cake to top off a meal..Coffee or tea anyone? 11/29/11

 Bringing out the Italian in me...Love this Italian Coffee cake and I think you will too!!!

The holidays bring to mind lots of favorites ..An old favorite that I remember eating at my Aunt Anna's was Ciambalone . It was the favorite Italian coffee cake.. Ciambalone and Biscotti were two of her best recipes..

I looked and looked and couldn't find her recipe but I found one that seems to be very similar to hers.. It was in a very old cookbook from a Junior Women's club I belonged to..Lots of Italian ladies contributed to it so this is as close to Aunt Anna's that I can get.It's in the oven now!!!  Happy Baking!

Ps.  I’m somehow thinking hers may have had wine in the recipe or WINE WAS ON HER TABLE!

4 cups all purpose flour
4 tsp. baking powder
1 tsp. salt
1 + tsp. anise seed or anise or orange flavoring(I love anise)
1 cup sugar
5 eggs
5 tablespoons butter or margarine
1 cup milk
rind and juice of 1 large orange
1/2 cup chopped walnuts
**1/2 cup diced maraschino cherries ( I used a whole jar)

Note:  I felt that this recipe could use more cherries and a little coarser walnuts..Having said that my opinion is that this is a great cake to serve and it is not too sweet..Just perfect! A cup of Java by its side!!   Enjoy!

Note:  Don't Overmix
Beat softened butter (or vegetable shortening) at medium speed with an electric mixer until creamy. Gradually add sugar, continuing to beat until light and fluffy. These steps are important because they whip air into the cake batter so it will rise during baking. Add eggs, one at a time, beating just until the yolk disappears. Overbeating the eggs may cause the batter to overflow the sides of the pan when baked or create a fragile crust that crumbles and separates from the cake as it cools.



Mix eggs, shortening, sugar,salt, rind of orange and its juice
Add dry ingredients alternating with milk
Fold in cherries and nuts and mix with a wooden spoon until blended
Pour into greased and floured 2 qt. tube pan( I used Bunt pan)
Bake 375 degrees for 1 hour..

Cool in pan for 20 minutes on cooling rack.  Turn over and cool completely before slicing.

I'm nut sensitive so it's More cherries and walnuts if you like.

Chiffon cake


Hi everyone and fall is in the air some days and some days we'll be still getting full sunshine and warm weather.  I can easily put myself in a baking mood when there is a crisp nip in the air so today I decided after seeing my friends Chiffon Cake on my Facebook Group page.

  Note:  Yes I have a page called We like to bake and cook group.  It's a very creative food group and we share photos of what we make and recipes.  We even share some gardening tips and photos.  Check us out we'd love for you to join the group.

On on to the recipe.  Anne is an excellent baker and cook so I knew her recipes would be good.  Also she is the kind of person that's honest about her recipes and we all like that.  

I'm hoping you can see the recipe clearly since I didn't re-type it.  If you can't see it well try enlarging it.  

It's delicious alone with some powdered sugar sprinkled or with some fresh berries and cream..Enjoy!

We loved it!!!!

Note:  Do  not spray pan....Also I used a bundt pan and it was difficult to remove.  My suggestion is as Anne did say use a spring form pan for best removal.
