Mandarin /Pineapple salad?/ dessert?

Do you need a last minute side to take along to a picnic or holiday dessert?

 Well have I got a great easy recipe for you.  It was so easy to make and only a few minutes to prepare.  Refrigerate it for about an hour or even less and you'll make a lot of people love you...

 Four ingredients to make this luscious yummy side or even dessert.  Light, fluffy with fruit mixed through.  It will certainly please guests and you too because it can be prepared so easily. 

If you desire add a few chopped pecans to garnish it.  Not necessary but you who love pecans will certainly like this addition.  

Note:  Great for Brunch or to go along with a yummy ham sandwich. This recipe is a keeper.








Directions: 

I-8 oz. cool whip
1-15 oz. pineapple drained
1-15 oz. mandarin oranges drained

Mix the cool whip and instant vanilla pudding together and add the pineapple and one can of mandarin oranges (save a few for decoration). Drain pineapple and mandarin oranges reserving  a little juice to add if mixture is too thick.

Once done with mixing, place in a bowl and refrigerate for a couple of hours until thickened.
Simple, fresh and delicious! I usually use this mandarin orange salad as a side dish with a meal.  Maybe a burger or a ham sandwich is your delight.  

Can't decide what to make well this is a great last minute food idea. Thumbs up!

Chocolate, Banana and chips muffins!

I managed to get these muffins in the oven before our power went out today!  Whew! I am a happy camper right now.

I am always looking for a quick breakfast bread.  I seldom eat cereal or eggs so today I played around with my original banana bread recipe and here's what I came up with.  Light in taste and texture with less fat and sugar this recipe will be nice change for my easy and healthier on the go breakfast.

 I did this by cutting out out some of  the sugar and butter and adding unsweetened applesauce.   I'll freeze some too for later use.  I like to store lots of easy breads, scones and muffins in my freezer.  Coffee, tea or your favorite juice will make it perfect! and I find them to be filling. If you are cutting calories eliminate the white or chocolate chips. Enjoy!

Original recipe below is for reduced fat muffins/bread .  Note: **** for regular muffins.


1 3/4 cup all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
pinch salt
1/3 cup sugar
2 eggs
2 tablespoons melted butter
1/2 cup natural applesauce
1/4 cup Hershey's cocoa
3 tablespoons skim milk
2 mashed ripe bananas
1/4 to 1/2 cup white or semi sweet chocolate chips (optional)

This recipe can be made with any milk.  I used skim for a reduced fat content as well as the applesauce.
****if you are not using the applesauce you can use 1/3 cup softened butter in its place.


Beat sugar, butter, chocolate and applesauce until blended.  Add eggs, flour, baking powder, baking soda and milk. Beat until well blended.  Add mashed bananas and (chips if desired).  Bake 350 degrees in lined muffin pans or small well greased mini loaves.  Cool slightly and remove from pan.

Cranberry cream cheese roll-up

Another easy appetizer.  Colorful and delicious. 



Cranberry Cream Cheese Roll-ups

4 soft flour tortillas,
 2-8 oz. softened cream cheese,
 1 cup dried cranberries,
4 or 5 green onion sliced thin,
 1/2 tsp. Garlic powder



  Mix cream cheese and garlic in a small bowl. Spread evenly over tortilla. 
Sprinkle cranberries and onion evenly over cream cheese. Lightly press into cream cheese. Roll up tortillas, cut off end and cut each one into ten pieces. 

***(Note) I wrapped them in plastic wrap until I was going to serve them. I won't cut until I am ready to serve.  I made four rolls out of this.  I think these are going to be delicious.  Easy recipe.

7 up Cake

Sweet and buttery this cake is great to eat alone or with your favorite topping..Coffee, tea and a piece of this cake that melts in your mouth is a great cake you can freeze as well..I cut it into slices and pull a few out when I need a quick sweet tooth fix..  I topped the cake with some Orange Frosting...

3 sticks butter or margarine(softened)
3 cups sugar ( I cut down to 2 cups sugar and it was fine)
Beat above for at least 5 minutes or more
Add 5 eggs one at a time beating until all is blended and smooth.
Add 2 teaspoons vanilla extract ( you could use orange or lemon as well)  adding a little rind too!
3 cups flour
3/4 cup-7 up, sprite or gingerale

After beating the above well..Pour into Well greased and floured Bundt pan.. Bake 325 degrees for 1 hour or longer until toothpick inserted in center comes out clean..Sprinkle with powdered sugar..as desired.. Enjoy

Frosting:
2 cups confectionery sugar
1 tablespoons butter(softened)
2 drops red food coloring
2 drops yellow food coloring
1/2 tsp. orange extract
1/4 cup milk

Beat until smooth..Spread on top of prepared cake.

Corn Flake Chicken

I can't believe in all my years cooking I have never used corn flakes as a breading for chicken.  This was a delicious meal and I will use corn flakes as a coating again.

I pulsed the corn flakes to be fine so it will easily coat the chicken.
 





4 lbs. fresh chicken thighs and drumsticks ( I used thin chicken cutlets)
2 1/2 cups Crushed cornflakes
2 tsp. salt
1 tsp. black pepper
1 tsp. paprika
1 tsp. Garlic powder
2 large eggs
1/4 to 1/2 milk
2 T spicy brown mustard
2 T honey
4 T unsalted butter.
cooking spray

Preheat oven to 400 degrees.

Spray pan liberally.




In a large bowl, combine corn flakes and seasonings.  I used small food processor to grind corn flakes to the consistency of bread crumbs

In another bowl place eggs, milk, mustard and honey. Whisk

Place a piece of chicken in the bowl with the egg mixture, toss to coat.  Shake off excess and place in bowl with crushed corn flakes.  Press to adhere and place on sprayed cooking sheet. Repeat until all of chicken is used.

Drizzle with butter and bake 25 to 30 minutes until chicken is no longer pink.

Note:  if using thin chicken cutlets cut back on baking time checking not to over bake.
