Chocolate, Banana and chips muffins!

I managed to get these muffins in the oven before our power went out today!  Whew! I am a happy camper right now.

I am always looking for a quick breakfast bread.  I seldom eat cereal or eggs so today I played around with my original banana bread recipe and here's what I came up with.  Light in taste and texture with less fat and sugar this recipe will be nice change for my easy and healthier on the go breakfast.

 I did this by cutting out out some of  the sugar and butter and adding unsweetened applesauce.   I'll freeze some too for later use.  I like to store lots of easy breads, scones and muffins in my freezer.  Coffee, tea or your favorite juice will make it perfect! and I find them to be filling. If you are cutting calories eliminate the white or chocolate chips. Enjoy!

Original recipe below is for reduced fat muffins/bread .  Note: **** for regular muffins.


1 3/4 cup all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
pinch salt
1/3 cup sugar
2 eggs
2 tablespoons melted butter
1/2 cup natural applesauce
1/4 cup Hershey's cocoa
3 tablespoons skim milk
2 mashed ripe bananas
1/4 to 1/2 cup white or semi sweet chocolate chips (optional)

This recipe can be made with any milk.  I used skim for a reduced fat content as well as the applesauce.
****if you are not using the applesauce you can use 1/3 cup softened butter in its place.


Beat sugar, butter, chocolate and applesauce until blended.  Add eggs, flour, baking powder, baking soda and milk. Beat until well blended.  Add mashed bananas and (chips if desired).  Bake 350 degrees in lined muffin pans or small well greased mini loaves.  Cool slightly and remove from pan.
