Crockpot chicken Tikki Masala

We liked it. First taste we both said "it's different" lol at the same time. As we ate more we kept saying "this is really good".  My husbands last few comments were" it was delicious ".  So I'm happy to give it a thumbs up. 

It's a Very simple recipe. 

3 nice size boneless , skinless chicken breasts. 

I jar(16 oz.) Tikki Masala sauce. Water. Enough to rinse inside of bottle.

4 small sweet peppers cleaned. 

1/2 cup water. 

Placed all in crockpot covered on low for 4 hours. I was pleasantly surprised. It's a little spicy but I didn't load my chicken with the sauce. Served over white rice.👍 M.j.😋



Crock Pot Corned Beef!! and a Happy St. Patrick's Day to everyone!


I really like Reuben sandwiches so today was my first try with a crockpot version so we could have delicious Reuben Sandwiches for dinner and it was made so easily with the spices because there was a packet of seasoning mix inside.  I couldn't have made it any better even if I tried.

A good day for this because the wind is blowing, rain is coming down and I'm having a very lazy day so it worked out perfectly!

  Mom never made a beef brisket and neither did my mother- in- law so I'm breaking the pattern and we are having corned beef tonight. The only time I have eaten corned beef was when I ordered it at a restaurant. This particular roast had the seasoning packet with it so it was a breeze to put all in the crockpot and add the seasoning packet.

 Sure was super easy and it helped that the brisket was only 2 lbs.  I don't think we could eat it every day.  Just sayin.  Of course the package said to add carrots, potatoes and onions to the bottom of the crockpot, place the roast on top and add enough water to cover the roast. I then added the seasoning package.

I did add everything to the pot but I didn't have potatoes but that was ok since my intention was to make a luscious corned beef on marbled rye sandwich. Enjoy!

2 lb. beef brisket roast
seasoning packet that came with the roast
Carrots
onions
potatoes optional
sauerkraut
swiss cheese
Russian dressing
Marbled rye bread

If you want to make Reuben Sandwiches and don't want to make this recipe you can go to the deli and buy some there. I  wanted to try it in my crockpot  so I did  buy a corned beef roast that had a seasonings packet; cover roast with water and set to low or high depending on your time frame.

  I used high because I hoped we could have it for dinner tonight and it did work out perfectly. Tender and tasty for sure. It was ready to eat in 5 hours at a high setting on my crockpot.

Adjust recipe time to your needs. If you are going to be out all day set it on low for about 8 to 10  hours depending on size.

After the roast has rested for a few minutes, with a large serrated knife cut into thin slices. 

I toasted the bread and added the beef, cheese, sauerkraut and Russian dressing.  Yum!  You can microwave the sandwich for about 10 seconds before you add the sauerkraut to melt the cheese slightly.

Crockpot Barbecue country style spareribs


Easy peasy meal.



It’s Monday and I’m ready for sweet Barbecue sandwiches

Get out your crockpot and here’s the easy recipe,  Enjoy!




1 lb. pork country style spare ribs
1 chopped  or grated onion
1 bottle Sweet Baby Rays barbecue sauce
Cole slaw
Rolls

On a lightly greased cookie sheet place spareribs
Bake at 400 degrees for 10 minutes.

In your crockpot place 1/2 cup Barbecue sauce
Add spare ribs. Top with onion and the remainder of Barbecue sauce



Cook on low 6 hours or high 4 hours . Shred or cut in pieces for sandwiches or serve with side of choice.

Yummy!

Honey Pork Roast


  • Another crockpot recipe to add to my list.  I didn't add as much oregano(preference) and didn't add the Parmesan cheese.  It didn't seem to go with this recipe IMO.  
Make it to you and your families taste preferences. Oregano has never been a favorite of mine.  I think it can overpower a recipe so I always cut back on it slightly.  

It could be my memory of oregano goes back to when I was a young girl and we had a pizza restaurant  next to where my family had a small grocery store.  We ordered pizza from there frequently cause who doesn't like pizza lol.  Anyway for some reason on the table would be large shaker bottles with oregano in them and I used to load my slice with a lot of it.  Why?  I don't have a clue other than it seemed to be what we did at that time so now I don't like it.  I guess that's the best explanation I can give you. 






I adapted this recipe to our likes.  I only had (one ) 1 pound tenderloin and I did not add oregano.  We do not care for the intense flavor.  Be careful and adjust your amounts if necessary.

Thank followed this recipe and adjusted amounts to size if my tenderloin and I also added 1/4 of a green pepper to add to our taste.  I also am serving buttered carrots and rice with this meal.







  • 3 to 4 pounds pork loin roast
  • 2 tablespoons dried oregano
  • 2 tablespoons dried basil
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • 2 tablespoons garlic, minced
  • ½ cup honey
  • 2 tablespoons olive oil
  • ¼ cup soy sauce
  • *1/2 cup Parmesan cheese

DIRECTIONS

  1. Place roast in crockpot.
  2. In a medium bowl, combine the dried oregano, dried basil, black pepper, salt, minced garlic, honey, soy sauce and *Parmesan cheese, and mix well.
  3. Pour the sauce over the pork loin roast into the slow cooker.
  4. Cover and cook on low for 6 to 8 hours.
  5. Remove the cooked pork loin roast from the slow cooker, reserving the liquid. Shred the meat.
  6. Add the reserved cooking liquid to a saucepan and bring to a boil. Reduce the heat and simmer until reduced and thickened.
  7. Pour the reduced, thickened sauce over the shredded meat and serve.

Italian Seasoned Rump Roast






My hubby loves beef and it must be tender so crockpot cooking works for us.  When you use a crockpot you do not have to use the best cut of beef.  I have learned by experience a lean cut of most roasts with a little marbling works well.








Today I'm seasoning my roast according to a recipe I determined the amounts myself .  No exact  amounts were given to me.

  It actually was made by my son.  How about that?  He's a great cook when he puts his mind to it and I'm a proud mom and give credit where credit is do.  I just love that he enjoys cooking on some days!  

I haven’t taste tested it but if it’s anything like what my son prepared, it’ll be delicious!

Below is my version.  

2.6 lean rump roast
1 packet zesty good seasons Italian dressing
2 cups beef broth
1/2 jar sliced mild pepperoncini
1/4 cup pepperoncini juice.

Mix the beef broth, pepperoncini juice and Italian seasoning pack in a large 2 cup measuring cup.  Top roast with pepperoncini slices.  Pour broth mixture over roast.  I used 1/2 jar of pepperoncini but you can use less or more.  I wanted to have pieces of pepperoncini cook with the roast so when I shred it some pieces will still be in the roast.  Hope you understand what I just said.  Sometimes being wordy can cause confusion....

Cook in crockpot on low 8 to 10 hours.

Adjust recipe to the size of your roast.  Mine will easily serve 3 to 4.  We are moderate eaters.

Serve with rolls for add a few sides to cut out the carbs.  Enjoy!





Italian seasoned chicken meatballs

  Hi and a very Good Day to everyone.

I'm trying to get ahead with meals this week and here's one I have cooking in my crockpot today.


Simmering on low


Meatballs are super easy and you can make them with just about any ground meat you like. Todays are with ground chicken.

Using any ground meat you can easily change a seasoning or sauce.  Make them savory or make them sweet.  You decide.

I make them all ways and season them to a recipe I might decide to make.  I usually use my own suggested amounts and seasonings.  Most are just by our taste.  We are a moderate seasonings family.





This particular one is Italian seasoned.

l lb. ground white meat chicken
1/2 to 3/4 cup plain bread crumbs
1 egg beaten
1/4 cup chicken broth
onion powder(approx 1/2 tsp.) you can add more.
garlic powder (approximately 1/4 tsp.)you can add more.
1 tsp. dried parsley
4 tablespoons parmesan grated cheese  (a first for me) I always use Pecorino romano cheese for my meatballs.
1 tsp. salt
pinch or two pepper 
1-28 oz. can crushed tomatoes.
1 -8 oz. can tomato sauce

In a large bowl blend all ingredients gently.

Place large size meatballs on sprayed cookie sheet

This recipe made 12 large meatballs.

Bake 400 degrees for 10 minutes.

Place tomatoes in crockpot on low.  Add meatballs.  Cook for approximately 4 hours on low.

Serve with a salad, side or rolls.

Porcupine meatballs


Happy and Blessed Day  😊🙏

As I was baking my porcupine meatballs and peppers to give them a start. ( they’re going in my crockpot).  I thought I might instead of red sauce use Bbq sauce” ? I’m guessing they’d be really good.  Also some baked Cornbread to catch the sauce .  Yummy!




I lb. ground beef
I egg
1 tsp. Salt
1/2 tsp. Pepper
1 medium onion chopped or grated
1/2 cup cooked rice
1-28 oz. canned tomato sauce or crushed tomatoes
Thickly Sliced peppers


Mix all ingredients except peppers by hand and form into medium to large size balls

Preheat oven to 400 degrees.  Lightly grease a large cookie sheet.  Place balls in sheet.  Add thickly sliced peppers and bake for ten minutes.

Remove from oven and Place in crockpot.  Add sauce .  Season to taste

Note:  FYI. Why not use your favorite Barbecue sauce and about 1/2 cup water instead of plain sauce.

Crockpot saucy steak

 Crockpot version of my Baked Steak Recipe

I love changing things up a bit and why not try making things a little more convenient. Right?

I have had so many positive responses to my Baked steak recipe that I thought I'd give it a try in my NEW Crockpot.  Yes I bought a new one.  I do have another but it is almost 8 years old and I use it a lot so I wanted to make sure I would be set if it suddenly decided to kick the bucket and died. LOL

I have become a crockpot lover!!!  Busy people need an alternative to oven baking and I'm here to help in any way I can. Honestly a lot of basic recipes are crockpot friendly.

Baked version
I also make this in my oven.  Bake at 350 degrees covered for approximately 1 1/2 hours.







1 1/2 lb boneless round steak (mine was tenderized but it doesn't have to be)
1 onion sliced
4 tablespoons olive oil
Salt and pepper

Sauce :

1 can tomato paste
2 cans 15 oz. tomato sauce
1 cup water
2 to 4 cloves minced garlic( depending of your taste)
1 teaspoon onion powder 
3/4 tsp dried basil

In a medium size skillet place olive oil. Add sliced onion, steak, salt and pepper. Brown meat on all sides.






In your crockpot place 1 small can tomato paste and 2 cans tomato sauce.  Place a little water in cans to gather all that is left in the cans.  Add to sauce 1 cup water .  Place browned meat/onions to crockpot and add 2 to 4 cloves minced garlic.  Cook on low approximately 6 to 7 hours.

Steak with smothered onions





It’s not a quick meal but a crockpot meal.  When you want a meal that everyone can enjoy with basic ingredients and perfect results this one’s on the top of the list.  Easily doubled for a family you can be assured when you come home from work or out for a few hours this will be a welcomed  meal.

It’s a two part recipe.  Meat first, gravy made after meat is cooked.

This meal can be served right from your crockpot or you can thicken the juice to make the gravy.


To make thickened gravy :

Remove meat from pot.  Set aside


2 to 3 tablespoons flour
1/4 cup beef broth
Whisk together to make thin paste
Add to remainder of broth whisking thoroughly
Add meat and allow to thicken slightly.

Makes about 1 cup gravy

It will thicken faster if you make the gravy on the stove top.

Serve with potato and vegetable.  Enjoy!




Approximately 1lb.  Round steak
Olive or vegetable oil
Salt and pepper
1 large onion sliced
11/2 cups beef broth

Sear round steak in oil with salt and pepper.

Place in crockpot with sliced onion on top.

Cover, cook low 6 hours or high 4 hours.


Serve with mashed potatoes, side salad or vegetable.

Salsa Chicken


 As I promised I am going to post at least twice a week some new dishes for the health conscious person.

Hubby and I are trying very hard to maintain (he) and me (lose) and not be deprived of any dishes that we find interesting yet healthy so I will attempt to do this everyday and post a few of the recipes twice a week.


This simple crockpot meal is one that you can easily prep the night before and cook while you are out working or shopping.  

We were out all day from 11 to 6 and came home to this wonderful dish.

I decided to quickly make some cornbread to enjoy with it for a nice change. 

 While he set the table I through a package cornbread mix and in less than 20 minutes we had dinner.  You can easily substitute rice or a salad if you choose.

 1  1/2 lb. boneless chicken breasts
1 green pepper sliced thick
1 red pepper sliced thick
1 medium sweet onion sliced thick
1 cup low sodium chicken broth
1 cup bottled Salsa (I used pineapple salsa to add some sweet to the recipe) but your favorite salsa will work fine
 1/2 cup diced lite peaches in it's own juice add juice too! (optional) 
1 package cornbread mix baked according to directions.


In a slow cooker(crockpot) place chicken, peppers and onion.  Stir chicken broth, diced peaches and salsa together.  Pour over chicken..





Cover and cook on low setting for 7 to 8 hours or high setting for approx. 5 hours. When chicken is cooked I removed approximate 1/2 cup of juice and added 2 T flour to it to make a paste.

  Once the paste was smooth I added it to the chicken mixture to slightly thicken it.  It will not be a heavy sauce but just enough to add a little more texture.

Serve with cornbread or rice.
