Pork loin in ricotta sauce




I+ lb. boneless pork loin
1- 15 oz. can diced tomatoes
1- 8 oz. can tomato paste
2 T. Ricotta
2 cloves garlic
1small sweet onion chopped
Salt and pepper to taste

Sear pork loin in 3 T of  olive oil.
Place in crockpot.

Add onion and garlic to same pot where you seared the pork and cook for a few minutes.

Add onion/ garlic, tomatoes and paste to crockpot.  Cover .  Cook on high for approximately 4 hours. Low 6 to 7 hours.

Remove from crockpot Slice. Set aside.

Add ricotta to pot and whisk until blended.
