Buttery Pound Cake: Plain or topped with fruit!!

 I make a pound cake often. They are the easiest of cakes to make and have many uses.  My Mom made them frequently and Dad loved topping a slice with fresh strawberries.  He loved anything Mom made and when she'd ask how it was he would reply everything you make is great so don't change a thing.  She did like to play around with recipes and her 7 up cake was one of the best.  I have given that recipe to many many friends.  It too is a another great pound cake recipe. 

The recipe below was hidden way back in my recipe box..  Buttery and so tender, wonderful to eat by itself or top with pureed fruit. A definite keeper!! Serve with a cup of coffee or tea...I'm having a slice with a cup of coffee tomorrow.......Versatile and delicious..

Out of the oven

I wanted to try something different (mango and banana) yummy!!!


2 cups sugar
1 cup unsalted butter softened
5 eggs
1/4 cup sour cream
1/4 cup milk
1 tsp. vanilla or other flavoring (orange or lemon may be a nice change)
2 1/4 cups all purpose flour
1/2 tsp. salt
Powdered sugar, if desired
Fresh fruit( optional)
whipped cream (optional)

Heat oven to 350 degrees.  Combine sugar and butter in large mixer bowl.. Beat at medium speed, scraping bowl often until creamy(2 or 3 minutes). continue beating, adding eggs one at a time, until well mixed.. Add sour cream, milk and vanilla..Continue beating, scraping bowl often, until well mixed about 2 minutes).

Reduce speed to low.. add flour and salt; beat just until moistened.

Spoon batter into greased and floured 12 cup Bundt or 10 inch tube pan.. Bake for 55 to 60 minutes or until
toothpick inserted in center comes out clean.  Cool 15 minutes; remove from pan.  Cool completely.. Sprinkle with powdered sugar, if desired..

Serve with desired fruit (I used raspberries) pureed in mini chopper. I also pureed mango and banana for a nice change!!!

Note to all:  We just had a slice.....A great pound cake and a definite keeper...plain or topped!!
