Peach/Apple Pie for Dessert! Made two ways!


Sometimes dessert transpires in my kitchen when there are various fruits and ingredients I feel I must use quickly so as not to spoil.  Apples will keep for a long time but peaches will  not so that's how this really delicious pie came to be.  Several ripe peaches and a few apples in my refrigerator.

I love when easy ideas come to my mind..  Of course I am sure lots of these type pies have been made but none by ME!  It's a first time peach/apple pie from my kitchen to yours,



Here is my (easy) recipe:


2 cups peeled and sliced peaches(about 4)
1 cup peeled and thinly sliced apples (Granny Smith)(about 2)
1-pkg. refrigerated pie crust (Refrigerated pie crusts makes baking so easy).



Cover pie edges to prevent dark edges. (alum foil)


1 1/2 cups sugar
2 cups water
4 T cornstarch
2 T butter
1 tsp. lemon juice

Place sugar and cornstarch in pan and stir.  Add water and whisk slowly over medium heat until thickened.  Once thickened add fruit and continue to cook on low until peaches and apples are almost tender. Remove from heat, add butter and lemon juice and stir. Allow to cool before placing in pie crust.

Place peach/apple filling in unbaked pie shell.  Cover with unbaked pie crust and seal edges. Bake 425 degrees approx. 45 minutes or until browned and bubbly.  Serve warm with vanilla ice cream if desired. Enjoy :)

**Another easy suggestion for this pie.  You can make it a one crust pie by using one sheet of the pie crust and baking it according to directions.  Allow pie shell and topping to cool completely and then fill pie shell and top with real whipped cream or Cool Whip.   Another Fabulous easy homemade dessert.  Double YUMMY!!
