Green Peppers stuffed with Ground Turkey!!

I've made Stuffed Peppers with Italian Bread stuffing and with ground beef so today it's a first try with ground turkey!

Wonderfully soft and tasty were these ground turkey stuffed green peppers. I made this recipe quite simple using ground fresh turkey, onion, egg, salt, pepper and added some yellow chopped peppers too!

1 lb or less ground turkey
1 egg
1/2 cup 90 second Uncle Ben's reg. rice (made it super simple)(used 1/2  of pkg).
1 tsp. salt
1/2 tsp. pepper
1/2 to 1 medium onion chopped
1 large can (29 oz) Hunts Sauce
3 T. canola oil
2 tiny orange or yellow peppers chopped (add to turkey mixture)


Mix turkey, egg, salt, pepper, yellow peppers and onion.  Add 1/2 cup rice mix.  Clean and hollow out peppers.  Fill with turkey mixture.  In a large pot place canola oil..On low to medium heat place peppers in oil and brown slightly on each side.  Add tomato sauce and a little water (clean out can and swish around) .  Add to peppers, cover slightly and cook on low until sauce starts to bubble.  Lower heat so as not to burn.  Simmer until peppers are tender an turkey is cooked.  Approx. 1 to 1 1/2 hours.
