Several years ago I made these cookies and make them time and time again because the are so buttery and tasty loaded with fruit, nuts and white chocolate, you just can't get a better all around cookie..The recipe is perfect for just the right amount to serve without being overloaded with too many..Of course you can double or triple the recipe and freeze some..Love them and so will you! 1 cup all purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1 cup quick cooking oats
9 tablespoons soft butter
1/2 cup soft dark brown sugar
1/2 sugar
1 egg
1 tsp vanilla
1/2 cup dried cranberries
1/2 cup chopped pecans
3/4 cup white chocolate chips
Preheat oven to 350..Line a cookie sheet with parchment paper..Measure flour, baking powder, salt and oats into a bowl.. Put butter and sugars into another bowl.. Beat until creamy. Then beat in egg and vanilla extract.
Beat in the flour mixture, then fold in cranberries, pecans and white choc. chips..Roll tablespoons of dough into balls, then place them on your prepared cookie sheet..Squish down with a fork.. Bake 15 minutes until cookies are tinged a pale gold.. Remove to cool. Happy Baking!
