Farmhouse- Apple Cake

This dessert is somewhere between a cake and a tart..The apple slices are bound by a custard that caramelizes on top..Cooking it in a springform pan allows you to unmold it for a beautiful presentation..but you could bake it in a 10 inch round pan; you just won't be able to unmold it. Note:  I suggest baking it in a 10 inch round pan.  I did the springform  pan and I felt a lot seeped out the bottom..

1 tablespoon unsalted butter for greasing pan, plus 7 tablespoons
1/2 cup whole milk
5 Golden Delicious apples
2 large eggs
1 1/4 cups sugar
1/2 cup flour
1 tsp. vanilla extract
2 tsp. baking powder

Heat oven to 400 degrees
Butter 10 inch springform pan and wrap bottom in foil so it doesn't leak.
Measure the milk into a microwavable measuring cup.  Cut the 7 tablespoons of butter into pieces and add to the milk..Microwave for a minute until he butter is just about melted..Set aside to cool.

Peel, core and quarter apples. Slice into thin slices.
Beat eggs and sugar in a large bowl with a wire whisk until sugar is dissolved.  Stir in flour, then add milk butter mixture and vanilla..Blend thoroughly. Quickly stir in baking powder then fold in sliced apples.

Pour mixture into pan and place directly on the gas oven floor for 10 min..Transfer the pan to center rack and bake until cake is well browned for about an hour longer. Test to see if it is done by inserting a knife in center..It should come out clean.   If using electric oven, place the pan on the lowest rack for the entire cooking time.

Place on cooling rack...When cool enough to handle run a thin knife around the cake and remove the springform ring...Serve warm or refrigerate ..

Wisk egg and sugar first

Mix apples thoroughly.

Pour into pan and bake!
