Chicken Salad for Two:

I make this often and switch the nuts from toasted pecans to toasted almonds..It just depends on the day and what I have in my pantry or freezer..Note:  As not to have your nuts go rancid, keep them in your freezer..that is what I do to guarantee that they'll be fresh when you want to use them.

1 whole chicken breast (split)
1/2 cup either toasted almonds or toasted pecans
1 cup diced celery
1 cup seedless grapes
3/4 cup Miracle Whip
1/4 cup sour cream
1 tablespoon Dijon mustard
salt and pepper to taste

Cook chicken in enough water to cover it..Add a bit of salt, celery flakes..Cook for about 1 hour at medium heat..Take off heat and cool. Take chicken out of pot..Note: the chicken broth can be strained and saved to be used at another time.  You can add the stock to other recipes..and you can freeze it as well.

Cube chicken and add celery.  Combine Miracle whip, sour cream, Dijon mustard and a pinch of salt and pepper..toss.  Add grapes and nuts and serve on a croissant  or a bed of lettuce.

Ready to eat!
