Sauteed Red Skinned Potatoes

This was the first time I paired red skinned potatoes with fresh spinach..and it compliments a meal..

3/4 lb. red skinned potatoes (5 or 6 small )
2 tablespoons olive oil
1 tsp. minced garlic
4 cups washed spinach(I'm sure you could use frozen, cook until separated before you combine with potatoes)
salt and pepper to taste..

Wash potatoes(do not peel)
Place in microwave safe bowl on high for 5 minutes(I covered them with a wet paper towel)


Heat oil in pan over medium heat..add garlic and spinach..cook until spinach starts to wilt.(several minutes).Transfer spinach to plate and add potatoes to pan and saute for 5 minutes to brown slightly..Spoon potatoes over spinach..Season with salt and pepper..What a side!!!!!!!!!!!!!!!!:) Happy Cooking!
