Cannelloni Video and ingredients

Ingredients for filling:

1/2 lb. ground beef
1/2 lb. ground pork
2/3 cup bread crumbs
1/2 cup Italian cheese or more
salt and pepper
1 egg slightly beaten
1/3 cup chopped spinach
1 pkg. egg roll wraps

Pasta sauce

3 large cans tomato sauce
15 meatballs or country style pork spare ribs
4 T olive oil
2 cloves minced garlic
1 carrot cut in large pieces
1 onion or 1 tsp. onion powder
1/4 tsp. sugar
1/2 tsp. salt

In a large Dutch oven pot place olive oil, add onion and carrot. Saute for a few minutes.  Add garlic. Continue to saute a few minutes more.  Add sugar, salt. tomato sauce and meatballs. Simmer on low to medium approximate 1 1/2 to 2 hours slightly covered. Remove carrot and onion from sauce to serve.  Enjoy!

There are some days I cook or bake several things just because one, I'm in the mood, two, I have just gone to the grocery store and bought items I know will make some easy and delicious meals and three, I'm bored and love baking and cooking so why not?







I'm going to freeze some for later use.

Balsamic and peppers cube steak

Today was one of those days that I was in and out side but knew enough to take out a package of cubed steak.

For those of you who don't know what cube steak is. It is round steak that has been tenderized with a mallet to produce a more  tender piece of meat.  Round steak is a little tougher than a sirloin cut of meat so tenderizing it before helps to make it much more enjoyable to eat.

I made this meal very quickly using approx. 1 lb. round steak(cubed steak). 1 sliced sweet onion, 3 small variegated peppers, salt and pepper and balsamic vinegar.





Using a deep fry pan I placed about 4 T olive oil in pan. Placed my onion in the pan and added cube steak cut into bigger than bite size pieces.  Added my peppers and some salt and pepper and cooked on medium until the steak was browned pretty well and the peppers and onions were slightly soft.  At that time I added about 1/4 cup balsamic vinegar and about 1/4 cup or less of water.  Stirred everything with a large spoon and let it simmer until the balsamic started to reduce slightly.





Meanwhile in my microwave I place a 90 second package of rice.  When it was done place a good size scoop of rice on a plate and topped it with steak, peppers, onions and some of that great balsamic reduction.  Yum

Our side was baby spinach lightly sauteed in olive oil with a clove of mined garlic.  YUMMY

My Tiramisu

Off the top of my head simplified no Marcarphone Tiramisu. 

I didn't have a recipe to follow but I had heavy whipping cream that was close to expiration date so I knew I needed to make something with it.  Didn't feel like strawberry shortcake but did feel like something with chocolate so I fudged and made my version of Tiramisu without the marscarpone cheese. LOL



Being creative works at times and this is a super easy hit!  Try it...It's really tasty and serves a nice group.  I'd say 8 to 10.  Enjoy!

Note:  I did not plan on posting this recipe so I think my presentation could have been a lot better.  You can create easy desserts using ingredients in your home.  I do it often. 





1 pt. heavy whipping cream (Beat with 1 tsp. vanilla and 1/3 cup confectionery sugar) Set aside
1 pkg. lady fingers(APPROX. 8 OZ.)
1 small pkg. chocolate instant pudding
2 cups milk
1 cup cooled brewed strong coffee***( save 1/4 cup)
cocoa powder for garnish

In a medium bowl place 3/4 cup brewed coffee.  Dip each lady finger slightly on each side and place standing up in a nice trifle bowl or glass bowl.  A taller bowl is needed for the height of the lady fingers.  It also presents well in glass.

Whisk pudding with milk and coffee(1/4 cup).

As pudding starts to thicken pour into center of bowl.  Top with whipped cream and garnish with cocoa.  Refrigerate until ready to serve.  YUM

Sweet & Sour Chicken! over Rice

 New Recipe:

Quick, tasty and easy to make this sweet and sour chicken can be easily a week night meal.  It takes minutes to prepare and for those who like chicken, peppers and rice it's a keeper.

We loved it! 












1 LB boneless chicken breasts, sliced and seasoned with salt and pepper
1 cup minute rice
1cup water
1sliced red pepper
1sliced green pepper
1-8oz. Pineapple chunks drained
1-12oz. Jar sweet and sour sauce
Sliced almonds toasted (optional)
red pepper (optional)



Prepare rice according to directions

Hear 1 T oil .  Add chicken seasoned with salt and pepper.

Brown chicken and cook about 10 minutes.
Add peppers and cook until slightly tender.  Add pineapple and sweet and sour sauce.

Heat thoroughly and serve over rice.

Garnish with almonds if desired.

A little inspiration


 This video was made by me during my husband's high school golf banquet. He is golf coach at St. Joe's high school. I cut the video a bit but I think you'll get the message he was trying to convey to the young at our golf banquet. He wants to make a difference! Hope you enjoy and just maybe you can do something to inspire someone today or everyday.

My husband is golf coach at a local high school.  He is a very dedicated person and wants to make a  difference.  This video is just a little bit of who he is and I felt it was worth sharing.

I try to make a difference by sharing my blog with thousands of people.  It's my small part trying to inspire and motivate all around the world to help you make an effort to make some healthy meals for you and your family. It'll pay off with many great food and family memories.

Make your mark helping others in some way.  You'll feel good and you just don't know who you will help along the way!  I am sure last night his message was received by more than one.  Parents attended as well and I was very proud of him and it helped me understand all the hours he is away from home doing what he does really well.  He makes a difference!
