Pork chops n potatoes






Tonight’s meal had to be the easiest to make and it took about an hour from start to finish to serve it.

I browned in vegetable oil 4 thinly sliced boneless pork chops.  While they were slowly cooking I peeled and sliced a huge Idaho potato super thin.  I covered the sliced potatoes in salted water and microwaved them for about 10 minutes .  By the time the potatoes were done the chops were browned ( I seasoned with salt and pepper).





I added 1\2 can of cream of chicken soup to my baking dish, layered the cooked and drained potatoes on top of the lightly browned pork chops . Added some water to the other half of the can of cream of chicken soup ,stirred to mix it and poured it over the potatoes.  Covered the baking dish and baked about 45 to 55 minutes.

Hubby had coleslaw with his.  I had thin green beans with mine.  Delicious!  Ps I never have cream of chicken soup handy but by George I had a can and it was still 2024 dated!!👍

Christmas 2023

Merry Christmas!




Our day was just beautiful.  We started the day by taking our time relaxing and enjoying a quiet morning with coffe and my homemade biscotti.


The afternoon was spent enjoying our son and his family.

My daughter in law did a great job making lasagna, ham, turkey breast , fresh green beans and scalloped potatoes.

We enjoyed seeing our granddaughters and their boyfriends too.  With their jobs ;visits are pretty much obsolete so this year was really was special.









A surprise of oven roasted chestnuts made our day.  It’s an Italian trad.

Frozen Yogurt Birthday Party


Happy Birthday Judy!

My friend Judy passed away this past year.  She was the kindest person I have ever met.  She had many health challenges but never gave up in spite of so much going against her.

The latest was her biggest heartache as a mom.  Her 30 something son passed away suddenly from a heart attack.

He left his wife and two children ,one of which is  disabled.
 I believe that was her biggest heartache as one never recovers after loosing a child.

I know she is in heaven with her son feeling free of pain and sorrow knowing they are together.

Rest in peace my friend!



This was a birthday celebration for her 50 th  Birthday..



Crockpot turtles






Ingredients



  • Add both kinds of chocolate disks and chips and vegetable oil 
  • to crock pot and cook on low for about 1 hour, or until melted. Mix in pecans, stir to combine, and cook for an additional 15 minutes.
  • Line two muffin tins with paper liners and place an unwrapped caramel or rolo candy in the center of each liner.
  • Use a cookie or ice cream scoop to spoon about ¼ cup of the melted chocolate pecan mixture over each caramel.
  • Allow turtles to cool until solid, this can be sped up in the fridge.
  • Store turtles in an airtight container in a cool place.
