Blueberry buttermilk pie.


This pie was delicious but much too sweet for my taste.

*******The original recipe called for 2 cups of sugar.  I cut back to 1 1/2 cups and I felt it was still too sweet.

I would imo use 1cup of sugar next time.

Read my notes to see where I adapted the recipe.

• 1 - 9-inch pie crust, homemade or store-bought
• 3/4 cup blueberries, fresh or frozen and thawed
• 3 large eggs
• 1 cup buttermilk***(I use I tsp. Vinegar in 1 cup
Milk to make my buttermilk)
• 4 tablespoons butter, melted
1/2 tablespoon lemon juice ***( I used 1tsp.lemon extract)
• 1 teaspoon vanilla extract
• 2 Cups sugar(*** I used 1 1/2 cups of sugar)
• 1/2 cup all-purpose flour
• 1/4 teaspoon salt
Instructions
1. Preheat oven to 325 degrees.
2. Scatter blueberries evenly in prepared pie crust***.(fork sides so crust doesn’t shrink)
3. In a large bowl, whisk together eggs, buttermilk,
melted butter, lemon juice, and vanilla extract.
4. In a medium bowl, whisk together sugar, flour, and
salt to get all clumps out.
5. Add flour mixture to egg mixture and stir until
smooth. Pour mixture over blueberries
6. Bake for 50-60 minutes or until golden brown and it
just has a little jiggle in the center when you shake
it.
7. Cool pie on the counter for 30 minutes and then
refrigerate for at least 2 hours before serving.

***Check pie after 45 minutes.  Every oven is different.

****Note:  I put all ingredients except blueberries in my blender and pulsed until all liquid.  I then poured it over blueberries in crust.


***I adapted this recipe for my convenience and what I had in my pantry and refrigerator.

The White House ornaments

So very thought of him.

Easy Gnocchi!

2 or 3 cups (room temperature )mashed potatoes 
2 eggs at room temperature 
3  1/2 + cups flour ( approximate) you may need more.

By now you should know I love gnocchi and I have made them several different ways.  Sweet potato gnocchi with brown butter was fabulous!  Gnocchi, using ricotta cheese instead of potatoes was wonderful!  My favorite are potato gnocchi with my traditional red sauce.

Today I played around with refrigerated mashed potatoes and I have to say these were by far the easiest.
  
***I used a 1 lb. pkg. (16 oz.)of refrigerated mashed potatoes at room temperature,an egg and approximately  3 1/2 cups of flour.  

That is all it took 3 ingredients and I used my freshly made red sauce. If you don't have some feel free to use your favorite jar sauce. 

The next time I make the yummy gnocchi they will be swimming in some pink vodka sauce.  You can be sure I'll be looking for sales on refrigerated mashed potatoes because I can never have enough gnocchi.  My freezer will be stocked.

Note: You may like to make some of these and top with butter and grated cheese for the kiddo's.   Something I think they'd enjoy!! :)

Bring a large pot of water to a boil with a bit of salt, add gnocchi, stir , turn down heat to medium, stir again and when gnocchi come to top let simmer for a few minutes and drain well.

Thanksgiving 2022

Today was hubby and my Thanksgiving dinner!

I had bought a 5# Turkey breast and decided today (Saturday) was our Thanksgiving feast.  

Since we are back to (2) on Thanksgiving we chose to eat at a local restaurant Thanksgiving day which was delicious and hit a movie.  It was a nice day!  

We both miss family but we’ve had many years enjoying the children and grandchildren and now with jobs and moves it’s either get on airplane and fly or enjoy FaceTime with them.  It’s all good! 

Homemade everything but dessert.  I bought an caramel apple cheesecake!

I made my moms recipe for fresh cranberry sauce and sage stuffing which is my all time favorite Thanksgiving side.  I coujd make it a meal! Seriously!!!

Sausage in red sauce






1 lb. Hot sausage links
1 lb. Sweet sausage links
2- 28 oz. Tomato purée
1-28oz. Crushed tomatoes 
1-15oz. Can tomato sauce
Olive oil
2 garlic cloves minced
1tsp. Onion powder 
1tsp. Crushed dried Basil
I carrot (cut in half)
Salt and pepper to taste(I’d start with 1teaspoon of salt and less pepper.

***Optional pinch of baking soda(baking soda will neutralize acidity). I DON’T ADD BAKING SODA UNTIL I TASTE.  I do not taste sauce until it has been cooking for at least 3 hours. If sauce tastes raw add the baking soda.  It will foam so stir until it dissapates. 

1.  Sear sausage links on all sides.  Place purée, tomatoes ,and sauce in crockpot on high while you are searing the sausage.  Add bail, salt, pepper ,minced garlic , carrot and onion powder.

Cook on high 2 hours.  Turn heat to low ,cook approximately 2 hours more.

Enjoy tossed with your favorite pasta.

****Note sometimes I add variegated pepper and onions to this sauce.
