Fresh Vegetable Seasoned rice







I love rice……so when I saw this recipe I knew It would be a must sooner than later.

Good as a side dish or as A rice /veggie lover a meal.

NOTE:  ***I used spice sparingly because I had never used (marjoram )before in a recipe.  I googled it’s flavor before I added it! I liked it.

It would be great with chicken , fish or pork.

1 tablespoon oil
1 onion shredded
2 garlic cloves minced
***1 large carrot( cut in small cubes) or grate on large side of grater)
***1 small bell pepper( I used variegated)
***1 small zucchini ( I grated mine large side of grater with skin on)
1 cup long-grain rice
***2 tomatoes   (small cubes)
2 tablespoons tomato paste
½ teaspoon sweet paprika powder
***½ teaspoon dry marjoram( I used 3 sprinkles)
2 cups chicken stock
salt and pepper
Chop the onions and the garlic very finely. Heat the oil in a pot and cook the onions until translucent. Add the garlic and cook for another minute. While the onions are cooking, cut the carrot into thin slices or half slices. Slice the pepper and the zucchini as well. Add the vegetables to the pot and cook for another 3-4 minutes. Add the washed and drained rice and stir for a couple of minutes. In the meantime, chop the tomatoes into small cubes. Add the tomatoes, tomato paste, sweet paprika, and marjoram to the pot stir well. Add broth and some pepper. Cover and let cook on low heat for about 20-25 minutes or until the rice is cooked to your liking.




 Notes:   I added chopped tomato and zucchini  last to the cooked rice before serving.

Peanut butter chocolate chip cookies

New easy cookie recipe for all of the peanut butter lovers.  

Chocolate chips make them even better!

  • 1/2 cup peanut butter (125 grams)
  • 1/4 cup butter (salted) softened (50 grams)
  • 1/2 cup brown sugar (100 grams)
  • 1/4 cup regular sugar
  • 1 egg room temperature
  • 1 +cup flour (130 grams)
  • 1 pinch salt*
  • 1/2 teaspoon baking soda
  • 3/4 cup mini semi sweet chocolate chips (130 grams)
Mix softened butter and peanut butter until creamy. Add brown sugar and beaten egg. Slowly add flour, baking soda and salt (*if using unsalted butter).  

Stir in mini chips. 

Heat oven at 350°.  Place (tablespoon )size balls on a parchment lined cookie sheet.  

Bake 350° 8 to 10 minutes.

Recipe yields approximately 24 cookies.

Watermelon, feta and mint salad







After seeing so many posts of watermelon salad I had to go out a buy a watermelon so I could make this salad.  I had fresh mint and all the other ingredients so I was really looking forward to this salad.

Cutting up a whole watermelon takes time and you definitely have to have time.  Fortunately today I did.



*** make sure when choosing a watermelon there is plenty of yellow on the outside.


I hadn’t had much luck so far this summer so far but this one was definitely a winner.

1/4 c. extra-virgin olive oil
2 tbsp. red wine vinegar
1/2 tsp. kosher salt
3 c. cubed seedless watermelon
1 c. medium cucumber, chopped(I scored cucumber and left skin on)
1 c. crumbled feta
1/2 c. red onion, thinly sliced( I used about 3 thin slices) * red onion can be overpowering).
1/2 c. coarsely chopped mint, plus more for garish
***Pinch of salt if necessary.  Taste test!

DIRECTIONS
  1. In a small bowl, whisk together oil, vinegar, and salt. 
  2. In a large serving bowl, combine watermelon, cucumber, feta, red onion, and mint. Add dressing and toss to coat.
  3. Garnish with more mint and salt if desired.

Easy hamburgers in gravy!

Today my grandson's went golfing with Poppy and Grammie  had lots of catching up to do with her cookbook orders so when Poppy called and said the boys were coming for dinner quick hamburgers in gravy came to mind. I make mine small so they cook quickly and make sure to brown them a bit so your gravy will be a nice brown color. Make sure to scrape bottom of pan with a wooden spoon to loosen bits of brown pieces while adding the water to the pan.  Easy recipe and gravy instructions below!

They love gravy!!!!!!!!!!!!!!

1 1/4 lb. natural lean beef ground
salt
pepper
parsley
onion powder
Vegetable oil
1 sliced medium  onion

In a large pan place some vegetable oil.  Mix beef with salt, pepper ,parsley and onion powder to taste.   Make several small to medium size patties.  Cook patties and onions until browned on each side making sure to brown so the bottom of your pan has some color.  After patties are cooked remove from pan and set aside.

To the pan add **2 cups cold water or 1 cup cold water and 1 cup beef broth ( **you can add all broth )a little more flavor with broth).  Stir well to loosen up any brown drippings.  Add 4 T flour in a small dish with some of the cold water whisk and  add to liquid.  

Turn heat to medium and continue to whisk u til mixture thickens. 

 Add cooked hamburgers and cook slowly in thickened gravy.  Serve over bread with potato or vegetable of choice.

New recipe for Turkey chili



I know it’s hot but thankfully we are comfortable inside.  I am making Turkey chili with every possible seasoning I thought might work.  My hubby turns his nose at Turkey anything except Thanksgiving where he’ll eat it.

Just a few of what I added to the lean but not too lean Turkey.

Fried it in a little vegetable oil.  Then I added a little powdered ranch dressing, onion powder, chili powder, cumin, salt and lots of pepper and a splash of Franks hot sauce.  2 -15 oz. Cans tomatoes which I put in processor and one can rinsed light kidney beans..  

It looks good.  Smells good.  We’ll see what he says.  It certainly is way different than the regular way I usually make chili and this Turkey is really fine so 🤞.  I’ll let you know MY opinion later.  HIS too!
***Our opinion this concoction I created was delicious!






Ingredients:

I lb. Ground lean Turkey 
Onion powder
Garlic powder
chili powder
Cumin
Salt
Lots of pepper
2 tablespoons dry ranch dressing or 1/2 package (approximate)
Several Splashes Frank's hot sauce 
1-4 oz. Can tomato sauce
2-14.5 oz. Diced tomatoes ( pulsed in food processor)
1-14.5 ox. Can light kidney beans ( drained)

I don’t have exact measurements other than tomatoes but you can just judge how you like food seasoned.

I think Turkey needs a good mix of seasonings.  My regular beef chili only calls for basic chili, salt and pepper.

Heavy hand amounts for great flavor!
