Cherry cheesecake tarts

I had some fresh cherries so I created an easy muffin cup tart.

My hubby was thrilled!

I package Pillsbury pie crust ( remove from refrigerator for 15 minutes)
Cherry pie filling(I made my own homemade) but cherry pie filling can be used.

Cheesecake filling
1-8oz. Softened cream cheese
1- egg
1/2 cup sugar
1- tsp..vanilla extract

Beat cream cheese, egg, sugar and vanilla until smooth.  Set aside.

Unroll pie crust one at a time.  Using a (on the rocks) glass
Press glass onto crust to make circles. 


Press pie crust circles (12 cup muffin pan) onto bottom of cups.  Spoon approximately 1 tablespoon +cream cheese mixture on each pie crust. ( fill 3/4 full)

Top with cherry pie filling or pie filling of choice.

Bake 350 degrees for approximately 25 to 30 minutes.

Remove from oven.  Cool completely and loosen sides gently of tarts and place on a large platter.  

Serve with whipped cream or ice cream.

Delicious!







*** I had extra filling , crust and topping so I made a small baking dish tart!

Pork cutlets

Several years ago when we were in Florida I shopped local and  they had pork cutlets packaged for sale and were delicious. 

Today I decided it was time to make some for our dinner.

Recipe as follows;


I lb. pork tenderloin (cut in medium size slices)
2eggs beaten 
1  1/2 cups seasoned bread crumbs
Salt and pepper. 
Vegetable oil as needed 

Directions:

Using a mallet I pounded (scored) both sides of the pork until the patties were thin.

In a bowl place eggs, salt and pepper. Whisk well.

 Dip the pork cutlets in beaten eggs seasoned with salt and pepper and then into the breadcrumbs to coat pork well.. (My  breadcrumbs were seasoned with Romano cheese too). 

In a large skillet add a few tablespoons vegetable oil.

 Place cutlets in pan and fry until lightly browned. If needed add a little more vegetable oil.

 The green beans were from my friends garden so I cooked the beans and potatoes until tender.  Drain and add minced garlic , olive oil and a little dried parsley.

Since I was in the mood to cook I made candied sweet potatoes too which really complimented this meal.

Note:  My mom always made candied sweet potatoes with her pork chops. 

They are yummy cold too!  I had a leftover pork cutlet for lunch (cold) yummy!

Note*** you can also use boneless pork chops for this recipe. ENJOY!

Dump Cake, short version


An easy dessert that can be eaten warm with a dip it two of ice cream or as is. Yummy!

2 cups fruit of choice ( I used frozen blueberries)
1-20oz.can crushed pineapple juice too!
1-box white or yellow cake mix (I used white)
1  1/2 sticks melted butter
Optional: additional coconut, chopped walnuts sprinkled over pineapple if desired.

Place berries in a 13x 9” baking dish
Add crushed pineapple juice too
Top with dry cake mix
Drizzle butter over cake mix

Bake 350 degrees approximately 45 to 50 minutes.

Crockpot steak Pizzaiola, my way

Gold mashed potatoes , pizzaiola garnished with pecorino Romano and mozzarella.  Side of buttered baby broccoli.  Yummy!

Round steak was used today for the meal.




A good recipe I created today with a pound of thick cube steak I had in my freezer.

Thaw meat or microwave on quick defrost.

***Note:for this recipe a cheaper cut of meat can be used.

Approximately 1pound round steak cut in medium size pieces.I.  
1 medium onion sliced thin 
Olive oil 
Chopped fresh basil (dried can be substituted)
Chopped fresh parsley(dried can be substituted)
1/2 tsp. Dried oregano ( I don’t care for it but if you do that’s your choice)
2or 3 minced garlic cloves 
Salt
Black or red pepper( ***if you like a bite to your sauce use red pepper)
1 -28 oz. can purée or crushed tomatoes

1.  Sauté onion in oil until it starts to brown and caramelize slightly.  Add minced garlic and cook slowly.  Toss basil and parsley into mixture slowly.  Remove from heat and place in a small dish.

2.  In the same pan you cooked the onion/garlic add the 4 (approximately)medium pieces of steak.  Cook on medium heat with some salt until slightly browned on each side.

3.  Add browned steak to crockpot.  Top with onion, garlic, basil, parsley mixture on top of steak and add tomatoes.



4.  Set crockpot heat on low and allow to cook approximately 6 hours or until steak is tender.

Serve over pasta or as I did smashed potatoes.  We had steamed Brussel Sprouts as our side.

Pudding cake




I use a basic cake using a white cake mix or flavor of choice. Follow instructions on box.

I large chocolate instant pudding 
3 cups milk whisk until pudding starts to thicken slightly.

8 oz. cool whip
Or real whipped cream

13x9 inch baking pan.  Do not grease.  Bake 350 for time noted on box.

Cool cake completely.

After cake is cooled pour slightly thickened pudding over top of cake evenly.

Allow to set in refrigerator about 1/2 hour.  Remove from refrigerator , top with cool whip and serve when set.
