Sausage and roasted red pepper rolls

1 lb. hot or sweet bulk sausage 
Dice several roasted red peppers( Pat to dry)
Mozzarella cheese cut into small slices.
Pizza dough

Sauté sausage until slightly browned and no visible  raw meat. Drain any grease. Add diced/chopped peppers and stir until warmed.

Drain meat of any excess grease.

Cut pizza dough in pieces.  I bought 2 large pizza size dough from our favorite pizza place. (I was able to make 16 small to medium rolls).

Using a rolling pin stretch dough to desired size .

Place about 2 tsp. of sausage mix on center of dough.top with small slice of cheese.

Prepare cookie sheets.

Heat oven to 350 degrees. Bake rolls for approximately 30 minutes.

Tuck sides of dough first watching not to get any juice on dough.
Roll like a jelly roll into sandwich size rolls or hamburger bun size. 

I didn’t fuss about size or shape.  They were delicious!

Spray your cookie sheets with cooking spray.


Space the rolls a good distance apart on cookie sheets making sure to allow for increasing size of rolls.

Note:  if you place them too close they will spread onto other roll.

Butter beans and ham

Hi:  

I love any type beans but butter beans are my favorite so after seeing a picture on my “We like to bake and cook group Facebook page I asked my foodie friend for her recipe. She happily obliged.

Below is her recipe.  My shortcut recipe is listed after her recipe.  You choose what recipe is best for you.




Here’s the original recipe.


Ingredients:
 1 Onion
 1/2 Stick of butter
 ham or bacon
 1 - 1 1/2 lbs. of beans
 Salt and Pepper (to taste)
 2 Goya Ham flavored concentrate
 Water (enough to cover)
Preparation:
1. Sauté onions in butter
2. Add salt and pepper
3. Add ham or bacon saute
4. Add beans
5. Add water enough to cover
7. Add Ham flavoring
8. Cook until beans are tender on low

***Here’s my shortcut recipe:





I - can Butter beans ( drained slightly)
1/2 cup chicken broth
I small onion grated
2T butter
1/4 cup ham diced
Pinch salt and several punches of cracked pepper 

Melt butter and diced onion in medium saucepan .
Sauté until onion is tender and translucent.  Add chicken broth.  Add diced ham and butter beans.  Cook on low heat for several minutes and serve.  Enjoy!

Quick Bruschetta






I made my bruschetta for tonight.

If your interested in making it ; I made it an easy way.

This was an amount for the two of us.

INGREDIENTS
4 to 6 Roma tomatoes ( remove pulp inside)dice
1 Tbsp extra virgin olive oil
1 teaspoon balsamic vinegar
2 small fresh basil leaves sliced or chopped
3/4 teaspoon kosher salt, more or less to taste
1/2 teaspoon freshly ground black pepper, more or less to taste
1 bag toasted baguettes 



 Fresh basil I had frozen in ice cube trays in water.  Very handy!



Cut and dice tomatoes, add remainder of ingredients snd toss.  Spoon into warm baguettes.  Note:  I made my bruschetta in the mornings.  Allowing ingredients to blend nicely.  I did refrigerate until I was going to serve. Toss well!

I’m going to warm the baguettes before I place the bruschetta on them.

Enjoy!

Note:  I made mine early the morning to marinate so the ingredients will blend all the flavors.

Toss before serving on toasted baguettes.

Prime Rib, A first!


Christmas Eve dinner.  My first attempt with success making Prime rib.  After so many years cooking somehow I was intimidated cooking one. 

 It was delicious!  Merry Christmas!



“ Prime Rib

You may want to try a standing Rib Roast first.   Your choice both delicious... boneless are a little more expensive $$$ but worth it... 

This year Standing rib roast was $5.99 a lb.

My roast was a Standing Rib Roast weighing  approximately 6 lbs.

Instructions:

Take roast out of Refrigerator at least 1-2 before roasting, pat dry, rub with olive oil... season well with kosher salt & cracked pepper.


Place fat side up in roasting pan  on a roasting rack.  I use a meat thermometer to test for desired doneness.. 

Set oven 450 degrees.

Roast for 15 minutes  @450 degrees.

Next:
Reduce heat to 375 degrees and bake until desired
doneness( check temp every hour for rare, med etc). 

***My roast took approximately 2 1/2 hours from start to finish. 

NOTE;  we like medium well. Slight pink no red!

Remove Roast , tent with foil to allow meat to rest (at least 20 minutes)... deglaze pan with water, scraping to lift up drippings for gravy !!!  

Mine made wonderful drippings so I just added some water and scrapped the pan well.  I heated drippings a few minutes.

Broccoli cheese muffins

Easy baking Broccoli cheddar muffins.







Slowly getting back into the swing of things.  It’s driving me crazy to stay in and today’s lunch was marinated varieties of olives,roasted red peppers and these muffins.  Yummy!

***FYI:Add more cheddar cheese.  Mine was mild cheddar and I thought it could have used more flavor.

***FYI:  I used muffin liners.  Easy clean up!


  •  1 package (8-1/2 ounces) corn bread/muffin mix
  • 3 cups frozen chopped broccoli, thawed and well drained
  • 4 large eggs, beaten ( I used a whisk)
  • 1 cup shredded cheddar cheese
  • 1 small onion, chopped ( I used onion powder)
  • 1/4 cup butter, melted



In a bowl, stir all ingredients just until combined. Fill greased muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans. Serve warm.
