Milk Chocolate Banana Bread


If you are looking for a recipe that incorporates chocolate and banana flavor and isn't too sweet with too much chocolate this one's for you.  Easily eaten cooled slightly out of the oven or topped with butter or softened cream cheese this is a nice breakfast bread.

I love breakfast breads because they are easily made and freezer acceptable. This recipe is an adaptation of my regular banana bread/muffin recipe.  I made a few adjustments by adding the cocoa and adding more milk.  Baking time varies but take note it may take as much as 45 to 55 minutes at 350 in your oven.  Test center of bread to make sure the toothpick comes out dry.

Milk Chocolate Banana Bread
1 3/4 cups all purpose flour
6 T Baking cocoa
2/3 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt(if using salted butter eliminate it)
1 cup mashed bananas(2 medium bananas)
1/3 cup butter (softened)
1/4 cup milk
2 eggs
1/4 cup chopped walnuts(optional)


Combine dry ingredients.  Set aside..Beat eggs,sugar and butter..Add dry ingredients alternating with milk beating well as to incorporate cocoa well. 


..Add  mashed bananas..Beat slowly until well blended..Bake 350 degrees in loaf pan approx. 45 to 55 minutes..Test center with toothpick to make sure it is baked through.

Spanish rice casserole

New recipe!

I an trying to eliminate wheat from my regular diet.  That means no bread, muffins, cakes and pretty much all baked goods. 

Rice and potatoes I can have so today's new recipe has some rice in it.  It's healthy also because there is no added fat to it.  I browned the meat without any oil or butter.  You can eliminate the cheese or use fat free cheese if you are watching your fat calories.

A good meal and I can easily cut leftovers in squares and freeze for later use.  Yummy!









Fresh out of the oven

without cheese





2 lb. ground beef
1 medium onion chopped fine
1/4 cup red, green or yellow pepper chopped
1- 28 oz. can diced tomatoes
1/2 cup chili sauce
3/4 cup long grain rice
1 1/2 tsp. salt
1/2 tsp. cumin
1 cup water
pinch pepper
1/2 tsp. worcestershire sauce
1 cup shredded sharp cheese
fresh cilantro optional

Note:  The original recipe called for 1 tsp. of brown sugar.  I did eliminate it.  I thought it would be too sweet.


Preheat oven to 375 degrees

In a medium Dutch oven pot Brown beef and drain off excess fat.  Add onion, diced pepper, tomatoes, water, rice, chili sauce, salt, cumin, Worcestershire sauce and black pepper and cook over low heat. 

Let simmer on low for approximately 30 to 40 minutes stirring occasionally until rice is tender.

Transfer ingredients into a 13x9 inch baking dish.  Cover with cheese. Bake 375 degrees for approximately 10 minutes.  Remove from oven and let set for a few minutes. Cut into medium size squares.  A vinaigrette dressing served over a green salad would compliment this dish.  Enjoy!

Yummy Key Lime Cupcakes!

Key lime pie is one of my favorites so I had to try this similar cupcake recipe I found in Family Circle Magazine.  I doubled the recipe since the original was to be made in a mini cupcake pan and made regular size cupcakes to own liking.  I iced them with a light cream cheese icing and a sprinkle of green sugar or a lime piece. New cupcake flavor and a nice spring and summer must make.

Here is the single recipe:

1 cups flour
1 tsp. baking powder
6 tsp. softened butter
1/2 cup plus 2 tablespoons sugar
1 egg
1/4 cup Key lime or regular lime juice

Heat oven to 350.  Line muffin pans with foil or paper liners

In a medium bowl, combine butter, sugar and beat until creamy.  Add egg beating well.  Add flour mixture and Key Lime juice. Bake approximately 17 minutes until lightly browned.  Cool

Cream cheese Frosting:

1 to 2 cups confectioners' sugar
2 tablespoons softened butter
4 oz. softened cream cheese
1+tablespoon key lime juice (optional) You could use milk as well.  (Watch amount! start with a little at a time depending on desired consistency).

Beat butter and cream cheese until blended add confectioners' sugar and lime juice. Add more lime juice one tablespoon at a time.

Salted Butterscotch-banana Bundt cake (New recipe)

Recipes galore! Keep checking in to see what’s baking or cooking in my kitchen.  


Today was a free day so I decided baking would be a priority. I do love to bake and when I get in the mood you can't stop me. I was planning on baking the above cake but once it was done I went on to bake several more.

I'm visiting Mom next week and she loves all the meals and sweets I take to her so along with a social we will be going to tomorrow I figured I'd bake a few cakes. As in three!

This was the first and it's a new recipe that I found in Woman's Day magazine.  There are so many good recipes posted in magazines and although the internet is handy I love browsing magazines more.  Yes MORE!

FYI;  The other two cakes are a Pineapple Coconut Cherry Cake with cream cheese icing and a Chocolate/Cherry Cake with butter cream icing and garnished with toasted almonds.

Turkey Meatball Stew

You can make this in the crockpot too!


This easy peazy recipe for Meatball stew can be made for your family in a flash! Using fresh ground turkey or chicken for the meatball mixture I then potatoes and green beans to mine but you can add any veggies your family might enjoy. I cooked my veggies separately slightly to allow for quicker turnover.  The meatballs will cook quickly too and once in sauce so tender and tasty.

A Hearty Meal that can be spiced up if you like by adding some red pepper too!

1 lb. ground turkey or ground chicken
3/4 cup garlic /herb breadcrumbs or seasoned breadcrumbs
3/4 cup pecorino romano cheese
1 egg
1 tsp. salt
1/2 tsp. pepper
1/4 to 1/2 cup chicken broth
1/2 lb. green beans broken in pieces
4 red skinned potatoes cubed
2- large cans crushed tomatoes
fresh or dried basil
1 clove minced garlic
olive oil

Mix the first seven ingredients together.  Shape into large meatballs.  Bake in oven at 400 degrees until slightly browned.



In a separate pot place green beans and potatoes with a slight amount of salt.  Bring to a boil and cooked approx. 5 minutes.  Drain.




Place about 4 T. oil in a large Dutch oven pot add minced garlic.  Saute for a few minutes on low careful not to burn.  Add tomatoes and basil.  Add meatballs, green beans and potatoes.  Simmer slowly for approximately 1 hour.  Yummy!
