Sausage/ Cornbread Breakfast or Brunch Bake:



Ready to serve! Maybe some Picante sauce if desired on the side)



Serve with fruit..





Yesterday I had made the stuffed tomatoes with sausage and I had some leftover un cooked sausage so I added some diced scallion, diced red pepper, parsley and olive oil to it and saute all until sausage was browned slightly, then sprayed a 9 inch baking dish (mine was a quiche pan), placed sausage mixture in dish and topped with Betty Crocker Corn Muffin mix,(mixed according to directions) sprinkled some grated cheddar cheese and garnished with chopped chives..Nice Saturday breakfast or brunch..Enjoy!  Happy Cooking!

¾ cup cooked sausage (I used Italian sweet but I think any flavor would work)
¼ chopped green or red pepper
1 tsp. parsley
2 chopped scallions
2 tablespoons olive oil
1 pkg. Betty Crocker cornbread/ muffin mix(follow directions for cornbread)
¼ cup sharp cheddar cheese shredded
1 tablespoon chives(optional for top
 Picante sauce(optional)

Heat oven to 400 degrees. Spray 9 inch baking dish with cooking spray.   In a separate pan sauté first 5 ingredients, spoon into baking dish. Top sausage mixture with 5 or 6 tablespoons cornbread mix.  Sprinkle with cheese and chives.  Bake approximately 15 minutes..   Serve hot! with fruit on the side.

Chicken patties

Are you looking for something different for dinner  today?

  Using cooked and shredded chicken and adding a few basic  ingredients this recipe can your dinner tonight.  ( Stire bought rotisserie chicken can be used for convenience)


2 cups cooked shredded chicken
2 eggs beaten
1/2 sleeve crushed club crackers
1/2 tsp.. Dried parsley
1/4 c grated onion
1/2 tsp. Salt
Pinch pepper
1/3 to 1/2 cup grated Parmesan cheese
3 T olive oil

Marinara sauce optional
Or topping of your choice


In a large bowl place all ingredients and mix together with your hands.

Shape into round shaped patties.(approximately 6 medium size)

In a large skillet place oil.  When oil has warmed place patties on medium  heat.    Brown lightly on each side several minutes.   Serve on a bun or with a side dish.  Enjoy!

Sweet Glazed Pork Cutlets!

Hi and Welcome!

Since eating Red Snapper the other night and enjoying the glaze they added to the fish I thought I'd try something similar topping our  pork cutlets with my version of the glaze.  It sure was easy and I didn't have to use many ingredients to make it sweet.  Some days things work out in my benefit and today is one of those days.  Enjoy!


I didn't have to go out to the grocery store to make this very tasty and very enjoyable dish.  I had the pork cutlets in the freezer( when I shop I usually buy a few extra meats to keep on hand for those days I don't feel like going out). Today was one of those days!!!! and I was able to  make my own glaze with ingredients I had handy in my pantry.  Enjoy!



Here is basically what you will  need and what you must do to make this easy peezy meal. You do not need any fancy BBQ  sauce.  The below basic ingredients you will be able to duplicate from your pantry.


Happy Cooking from my kitchen to yours,

Approximately 1 lb. boneless pork cutlets (tenderized)) using your kitchen mallet place pieces of tenderloin between two pieces of wax paper that pound away). Or boneless pork chops tenderized.

Ingredients;


cooking spray , vegetable or olive oil
salt and pepper
1/2 cup ketchup
1 to 2  T brown sugar
1/2 tsp. garlic powder 

Whisk kitchen softened brown sugar , salt, pepper and garlic powder in a bowl. Set aside.

Cooking over medium heat brown pork cutlets in olive oil with salt, pepper and a little garlic powder. Remove from stove. Place in a oven safe pan.

With a pastry brush  or small spoon turned over, lightly brush cutlets with ketchup mixture  Place in 350 degree oven.  Bake uncovered approximately 20 minutes or more basting every 10 minutes.

Cacio e pepe







Cacio e Pepe is a pasta dish from Roman cuisine. "Cacio e Pepe" means "cheese and pepper" in several central Italian dialects. As the name suggests, the ingredients of the dish are very simple and include only black pepper, Pecorino Romano cheese, and pasta. Wikipedia


12 ounces spaghetti
3 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
1 tablespoon very coarse freshly ground black pepper
1 3/4 cups freshly grated Parmesan, plus more for serving



  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package directions, reserving 1 cup of the cooking liquid before draining.
  2. Heat the butter and oil in a large skillet over medium-high heat until the foam from the butter subsides. Add the pepper and cook, stirring, until lightly toasted, about 1 minute. Add the pasta and 3/4 cup of the reserved cooking liquid, tossing to coat. Sprinkle the Parmesan on top and continue to cook, tossing, until the cheese is melted and the pasta is well coated, about 2 minutes. Add a little more of the cooking liquid to loosen, if necessary. Season with salt and divide among 4 bowls. Serve with additional Parmesan.  Enjoy!  

  3. Note:  A side salad would go along nicely with this meal.

Aunt Annie's Zucchini Soup Recipe (Meatballs added)


 A delicious soup recipe for a cold winter day.

I like to tell you a little about Aunt Annie.  She was such a sweet lady.   I met Aunt Annie when my hubby and I were dating.  She was a  sister to Alda (her twin) and Lil.  (Lil being my mother- in -law.)  Feisty and a right to the point lady who pulled no punches; she was, a say it like it is, peach of a lady, and a great cook!   Note:   I use her cheese ravioli recipe when I make my little pouches of cheese ravioli pasta.  This soup recipe is a favorite of mine and I managed to get the exact recipe last week from my sister in law..  Here it is:

1 medium zucchini washed and grated with skin on
3 cups chicken soup  ( You can use use your own chicken broth if you like)
2/3 cups cooked rice or 1/2 cup cooked pasta noodles
1 egg beaten
1 clove garlic minced, saute in small amount of oil
Italian meatballs
grated Italian cheese

Using the large side of your grater, grate zucchini skin and all.  Cook rice separately.  Saute, garlic in oil slowly, add grated zucchini, a pinch of salt and pepper to taste and cook a bit more. Add chicken broth.  Beat and add and approximately 1 tablespoon grated cheese. Whisk egg/cheese mixture through soup.  Cook for several minutes and serve.  Delish!  Note:   Her recipe  didn't have the exact amount of soup so I guessed and measured the amount I was using. 

I added some homemade meatballs to this soup and a few broken up pasta pieces.
