Chicken strips: Buffalo Style

A wonderful recipe that can be used for an appetizer or a quick meal for your family at this time of the year when we don't want to spend all our time in the kitchen. They are really good and easy to make.  Using boneless chicken breasts and cutting them in strips,  and coating them in blue cheese dressing and crushed corn flakes makes these chicken fingers moist and tasty and they're baked not fried!

    I found this recipe in an old cook book and decided to try it!  I'm sure you could use ranch dressing if you don't care for blue cheese)   I served the chicken fingers with baked fries. I baked both at 425 degrees for 20 minutes so they were ready at the same time.  Enjoy!

2 cups crushed cornflakes ( Loved these!! they made the outside crispy)

2 tsp. dried parsley
1/2 tsp. salt
1 lb. Boneless skinless chicken breasts halves
1/3 cup bottled blue cheese dressing
2 tsp. water
2 tsp. hot pepper sauce
Celery Sticks
Bottled blue cheese dressing
Optional blue cheese crumbles

Preheat oven 425 degrees.  Lightly grease 15 x 10 inch baking pan.  Set aside

In a shallow bowl combine crushed cornflakes, parsley and salt
Cut chicken breasts into strips..In a large bowl combine 1/3 cup salad dressing, water and hot pepper sauce.
Add chicken; stir to coat.  Roll chicken strips individually in cornflake crumbs to coat; place in single layer on prepared pan.  Bake 20 minutes or until chicken is no longer pink and crumbs are golden..Serve with blue cheese dressing.. Add blue cheese crumbles if desired to dressing.


Nice easy meal! Everything baked!

Bake approx. 20 minutes at 425 degrees


Skin on  Sweet Potato and White Potato fries

Season with olive oil, garlic powder, onion powder, salt and pepper.  Bake 425 degrees turning occasionally.

Fettuccine Alfredo sauce:: Easy to make

I think I have progressed quite a bit since my early days of blogging but to let you gradually get aquainted with me I must show you how my blogging began. Slow tiny steps and photos that were not perfect to say the least.  Hope you will continue on my journey. I have got better...


Busy day, quick meal.  

One two three four ingredients and you are ready to serve.  Add a salad and it is a very good meal.  This recipe is for 1 lb. Fettuccine

1 stick butter melted

 1 1/2 cups half and half
3/4 cup Pecorino Romano cheese(you can add more if necessary)
sprinkle of dried parsley 
1/2 cup pasta water
1 lb. fettuccine pasta cooked according to directions




Melt butter.  Slowly add half and half and then grated cheese, stir and it's done.. Easy fast meal!

Note:  If pasta appears dry add a little pasta water to thin.






Add a salad if you like!

My Garden 2018











A few kitchen tools I feel are a must in the kitchen!


There are always handy kitchen tools(some may call them gadgets) that from day one as you can afford to buy them are always a good choice.  

I had posted these several years ago and I think you'd enjoy seeing some of my favorite kitchen items that I use on a regular basis.

The new version of a rolling pin...Much easier to handle and so much lighter




     Cherry Pitter..Makes pitting cherries a breeze..  A definite Gadget but I love it!!!


    Measuring cups and spoons...Accuracy in baking and cooking is a must.

    Small paring knife.

    Melon ball scooper.  Great for perfect size cookies, and meatballs..

    Meat/ Roast thermometer!

    A whisk or two and a spatula

    Hot pads.  Secure and comfy ones.  One or two that will cover your upper hand well..Burns occur very easily.

    Poultry scissors or kitchen sheers they make everything easier especially cutting small cubes (pieces)of chicken, beef or even fish.






    Hand can opener, icing spreader, tomato knife. ( I use the thin tomato knife for fileting too!)

      


    ********Helpful Kitchen Health and Safety Tip::



    Always keep two cutting boards..One for meats and one for fruits and veggies then you won't have to worry about contamination of foods..Hot soapy water to wash them is a must!

    Vodka with Lemonade

    Hello again!!! This drink is simple to make, pleasant and refreshing!  I just wanted something with a little hint of tart and sweet and that's what this drink is..  I am a light on the alcohol gal so here is my verison of Vodka with Pink Lemonade.  Enjoy!  Happy Entertaining!!!!!  Plus+ this...You can try cherry vodka with pink lemonade for a nice touch!

    1 oz.Vodka
    1 full tablespoon Pink Lemonade mix
    8 oz. water
    2 Maraschino cherries
    2 tsp. Maraschino juice
    Lots of ice
    Lemon slice
