Apple etc. pie


This is a recipe I developed with items I had in my refrigerator.  It is an alternative to high fat ingredients and low in sugar.  I must say though that the pie crust is not low in fat.  I think it is very tasty but slightly tart pie.

You can add more sugar if you like OR A SWEETER TYPE APPLE..EXAMPLE: Cortland apple or Gala apple are good for pies.












1-5.3 oz. plain or vanilla Greek yogurt
1-5.3 oz. fruit on the bottom Greek cherry yogurt
1/2 cup sugar
1 egg
1/2 tsp. cinnamon
4 apples peeled and sliced
1 small peach peeled and sliced
pinch salt
1 pkg. refrigerated pie crust
light whipped cream optional



Cut apples and peach in large bowl.  Add sugar, cinnamon, cornstarch and salt.  In a separate bowl mix yogurt and egg. Fold yogurt/egg mixture into fruit mix.

In a pie dish place one of the refrigerated pie crusts.  Pinch top and poke with a fork bottom and sides.  Bake 10 minutes.  Remove from oven.  Let cool.

When cooled pour ingredients into baked shell.  Top with other crust.  Seal and pinch sides and make a few fork pokes on top and sides.

Bake 400 degrees approximately 40 to 45 minutes.Cover crust edges with foil or a crust protector.  Crust will be brown.  Cool completely.  Refrigerate overnight if possible.

Happy Father's Day! The Menu and Meal (Pictures Included) 6/19/11

To celebrate the day I decided to make one of my husband's favorites.  STEAK! Other than Italian food  he loves a good steak. As an added surprise LOBSTER TAIL..Usually a NY strip steak but today it'll be Filet's (didn't find any nice strips). OK.. so here we go:

Filet from the Market and Lobster Tail(I boiled and then brushed with butter and a dash of paprika and broiled them until butter was bubbly).
Red leaf lettuce with strawberries and toasted pecans(lite orange dressing)
Baked Idaho Potato/butter
No rolls today(watching our waistline)

For Dessert: Fresh baked biscuits with homegrown strawberries(just did on a whim)(Did I mention this is his  FAVORITE DESSERT)!!!!!!!!!!!

I may add to this that I like a good filet on occasion and I do so love LOBSTER so I 'm happy about this menu as well!

Note:  Just finished our dinner and it was of great quality and taste and my hubby said I get an A+...not really but he said it was perfect and thanked me so I guess I did good.

Homemade Roast Beef and Gravy from my kitchen to yours,

 I promised my grandsons I make a beef roast with potatoes and gravy.   They love anything in gravy(brown gravy).  Today for this meal I bought an eye round roast (my mother- in- law favorite) choice.    Mom used  bottom round or chuck roast.


This particular roast was about 3 lbs..I put about 4 tablespoons canola oil in my small roaster, poked a few holes in the roast and put little pieces of sweet onion, salt and pepper.  I cut up the rest of the onion(medium onion) and put the pieces in the roaster along with the roast..

I browned the roast first on top of the stove on each side(that will make the stock a nice color) and then added about 2 cups of water.. In the oven it goes(covered) for about 3 hours.


 I tested it after 2 hours with a meat thermometer.  It should read 180 for beef well and I wanted my roast to almost fall apart.  It still wasn't up to that reading so I left it in the oven another hour.  Note:  Buy a oven food thermometer..it is worth it..takes the guess out of cooking roasts.  Also your roast will only be as good as the quality of the meat you buy..So buy your meats from a good grocer or butcher. 

 After the roast in done I take the onion pieces out and take the roast out to slightly cool and slice to desired thickness.I love my electric knife so that is what I used today.

 To make gravy ..Take 1 cup of drippings and 1/4 cup water(you should always use cold water for gravy) I use 2 tablespoons flour per cup.. Mix the flour with the water first and add to drippings.  On medium heat stirring constantly cook gravy until it thickens. I served the meal with creamed corn, their favorite veggie...Good Stuff!
