ICE CREAM SANDWICH CAKE DESSERT!!

Our grandchildren are going to be here on the Fourth so as to make them happy I am making an easy ice cream dessert.  I don't remember who or where it came from but I remember the ingredients (I think I do) so I'll add this easy recipe to my easy and summery desserts..Enjoy!  Feel free to use any add-ins you may like.  Examples, cookie crumbs, peanut butter chips, chocolate chips, health bar crumbled, toasted almonds, peanuts, hot fudge, chocolate syrup and so many yummy additions.  Happy Summer! I'll add the peanuts to mine when I serve.  Those little buggers don't like PEANUTS! 






Keeping Cool in my kitchen,








I added finely chopped peanut butter crunchy crumbles



Place layer of ice cream sandwiches on bottom of dish.  Top with 1/2 container of  cool whip, add cookie crumbles, caramel syrup etc. , place another layer and top with melted hot fudge, add remainder of cool whip and garnish with chopped nuts if desired.  Refrigerate several hours or overnight.  Yummy!









2 boxes ice cream sandwiches (approx. 12 in a box)
1 large container Cool Whip
1 jar hot fudge topping(melt 1/2 bottle in micro until soft)
1 jar caramel topping or caramel syrup
Toasted almonds, peanuts, cookie pieces, candy bars broken up or whatever you care to add in this wonderful ice cream delight.

13 x 9 in(1 box) or larger(2 boxes) pan or disposable aluminum casserole size pan.  I used the later.  It goes quickly so make enough :)

Strawberry Creamcheese Roll-ups! Yummy!

 I was browsing through my favorite blogs and came across a recipe that caught my eye.  It seemed easy enough so I thought I'd try it my way.  The blog I am referring to is: CinnamonSpice&EverythingNice.com. Thank Reeni :). I adapted the recipe to our liking so hubby would also enjoy it. He loves strawberries.

Note:  This recipe is super easy and you can easily make as many as you'd like and I used a whole loaf of bread and froze a bunch(without topping of course)for later microwave heat up on the go breakfast yums. 






As I was checking out my frige I noticed I had a whole container of strawberry cream cheese and I also had some of my homemade strawberry sauce.  I figured this was going to be fun meal.  Breakfast, lunch or dinner, you choose, It's an anytime meal and it really was quick and easy too!. I decided to use the strawberries because I already had made the sauce but I'm thinking next time I'll use Honey nut cream cheese and maybe top it with maple syrup.  Yummy!!









Ingredients

10 slices regular bread, cut or trim crust
2 eggs
1/2 cup milk
1 tsp. cinnamon
1 tsp. vanilla
1 small container strawberry cream cheese.  (note:  I let it out on my counter for about 20 minutes to get it  really soft so it would be easy to spread.

Homemade strawberry sauce (you can use strawberry pie filling, fresh strawberries or any fruit combination you think would work) or just sprinkle some confectionery sugar on them.
whipped cream (optional)
powdered sugar (optional)
butter

On a clean cutting board trim edges off bread.  With a rolling pin (I use my pamperchef easy to clean one)

Spread cream cheese on flattened bread, approx. 1 to 2 tsp.

Roll from widest to end.  It looks like a mini jelly roll.  Place each on greased dish until all are made.

In a separate bowl, place eggs, milk, cinnamon and vanilla,  Whisk well. 


Roll the bread up and repeat until they're all filled.


After all are rolled, place one at a time in beaten egg mixture(I used my fingers) and onto a buttered fry pan.  Cook until browned.  Several minutes and they are ready to eat.

Top with strawberries and whipped cream or Cool whip if desired.  Note:  You can even sprinkle with powdered sugar and serve with fresh fruit on the side.  Enjoy!!!!!!!

Sweet Tooth Cravings: Sweet and Salty Treat!

 I made these Pretzel Turtles with chopped pecans but I have also made them with pecan halves.  Both are yummy!

Check this out!


Mini Rolo's (You can use regular size Rolo's)
Snap Pretzels
Pecan Halves (I had some chopped pecans and opted to use them instead of going out and buying the halves)

Turn oven to 300 degrees.  Place parchment paper on cookie sheet, line pretzels, add small mini rollo.  Bake 3 to 4 minutes.  Just enough to soften Rollo. Take out of oven and lightly push pecan into chocolate.  Cool completely before storing.

Pepperoni, Provolone Monkey Bread




My daughter made this today and I thought I share her recipe. Picture of it to follow!

Here's a little something I make for the Daytona 500...my version of the Pepperoni and Cheese Pull-Apart Bread....

2 cans pizza dough
1/4 lb deli provolone cheese
1/2 lb sandwich pepperoni
2 tsp parsley flakes
1/3 cup olive oil
1/2 cup grated Pecorino Romano cheese

Instructions:
1.) Preheat oven to 350 degrees


2.) Cut pizza dough in slices and then into quarters


3.) Cut pepperoni and provolone cheese into small pieces


4.) Mix all ingredients in large bowl with hands and toss so olive oil is spread evenly throughout and on each piece of dough.


5.) Place all ingredients in bundt pan and bake for 35 min or possibly a little more. Note: If t isn't baked long enough your center might not be totally cooked.
  It's a hard call. I'd press it toward the inside and if it springs back it should be done.

6.) Flip over onto plate while still hot

7.) Serve with marinara or pizza sauce

Hostess Gifts~~ Munchies! Sweet and Salty

 Easy munchies for the snack lovers...Here are a few suggestions for your holiday entertaining! These also make cute hostess or teacher gifts.


Caramel Puffs, Spiced Pecans and Salty and Sweet Trail Mix


1. Toss together dried cranberries and an equal amount of  pecans, cashews and even adding some mini chocolate chips and Reese's pieces.(Buy $1.00 boxes or pretty decorative plastic containers at Dollar Store). Add a tie and you have the cutest hostess gift that is budget friendly.

2. Toss equal parts of chocolate covered raisins and roasted salted almonds and small pretzels

3.  Mixed nuts and dried cherries or blueberries..

You can make these yourself and buy in bulk and save money..   Try Costco and Sam's..

Happy Entertaining!  Adding corn chex, pretzels and anything dry will make it your way!

Rice Krispie Treat! Using Biscoff Spread

Biscoff Spread is described on their label as "a delicious European alternative to peanut butter". It is sweet and spreads easily on toast, in a sandwich with jam, or even on apples..

A few months ago I posted about it when I was using it on light wafers as a quick snack.  Today I thought I'd like to try something a bit different using it.. My grandchildren will be here for Christmas and they like easy to snack on goodies..A quick and easy treat suggestion and if you haven't a lot of time to bake..Try these..No baking needed. You can cut them easily into bite size pieces...Enjoy!

Here is the easy recipe (adapted from Rice Krispie Box)

6 cups Chocolate Rice Krispies
1- pkg. 16 oz.. marshmallows
4 tablespoons butter
1/2 cup Biscoff Spread (I found it in our local Giant Market)
1/4 cup semi sweet morsels (melted) add a bit of skim milk and blend for drizzle

Line a 13 x9 inch baking dish with parchment paper..Lightly spray with cooking spray..Set aside

Melt butter in large pan over low heat..Add marshmallows and Biscoff Spread, stirring until all is melted..Add rice krispies, making sure to coat all with the melted mix.  Press mixture in baking dish..  I use a large spoon or you can use some wax paper to press it in the dish.  Drizzle with chocolate.  Cool completely before cutting into small squares..Yummy! and the Biscoff spread gives it a slight hint of brown sugar to the chocolate.

Candied Honey Pecans: Seasoned with some bite!

Great Super Bowl or anytime Snack!   I made them with pecans but you can do them with walnuts too!  

It's that time of the year when roasted chestnuts, an open fire and Mom's Spiced Pecan's Recipe come to my mind.  It's a tradition along with pumpkin and apple pie.  I vary my menu but for sure the pecans will be made.

It has become a tradition to make these easy sugary delights for Thanksgiving and Christmas and sometime in between.

This year I'll be making her recipe just in time for Christmas but today I thought I'd try this new Candied Pecan recipe.




I saw this recipe in a magazine recently and it called for you to saute or fry in butter with lots of good spices, sugar and salt, pecan halves.  This recipe seemed so easy I thought I'd give it a whirl today.

Lightly sweetened with just the right amount of seasoning hubby and I finished the whole two cups I made.  Note:  They are addicting so maybe you should double or triple the recipe.  They'll be gone 1 2 3!!!  They were absolutely wonderful!! The touch of honey really enhanced the pecans flavor! 


 If you like spicy add plenty of cayenne pepper for sure. I thought I'd make a few cups to give it a try for something a little different but still easy to do!


2 T unsalted butter
2 cups pecan halves(unsalted)
4 T granulated sugar
Generous pinch of ground cinnamon, paprika, cayenne pepper and Kosher salt
4 tsp. honey


Cook in skillet over medium heat, adding butter,  pecans and sugar, then spices and salt.


Melt butter in skillet over medium heat and add butter, pecan halves and sugar. Cook or (fry) slowly while adding spices and salt.
 Toss the pecans to coat them well and cook (fry) until they start turning shiny and brown.  Approximately 5 minutes.

Remove from heat .  Wait 30 seconds, then add 4 tsp. honey, tossing well to coat the pecans.  Spread on plate and Cool.. Note:  I used parchment paper on the bottom of a cookie sheet for less mess!

Easy Munchies for you or to give as gifts

I decided to make my own Munchie Mix today!  Toss them altogether in a zip bag and you've got a great trail mix.. Super good and easy to do! Happy Entertaining!






I small can cashews pieces
1 small bag toasted almonds
1/2 bag mini chocolate morsels
1 small bag sunflower seeds
1 small bag cranberries
1 box Reese's pieces
