Butternut Squash with brown sugar and toasted coconut!

A little change to cooked Butternut squash to serve as a side with your grilled chicken or pork for a nice alternative to sweet potatoes.  Enjoy!

Happy Cooking from my kitchen to yours,

2 cups diced Butternut Squash , cooked and drained
1 T butter
1 T brown sugar
2 tsp. toasted coconut

Cook diced or cubed squash in lightly salted water until slightly tender.  Do not overcook! . Drain, add butter.  Toss gently and sprinkle with brown sugar and toasted coconut.  Nice addition to pork or chicken.
