Pork chops with orange and thyme+ Cool Gift #3



New Recipe for those who enjoy pork chops!  A first try, quick and easy meal for those who would like to add a little something extra to the other white meat, Pork!  We loved it and I will definitely make this again..Love the white sauce topping!!!

adapted Relish 1 /2012

4 bone in pork chops
1/2 tsp. salt
freshly ground black pepper
1 large shallot sliced
1 tablespoons unsalted butter
1/4 cup fresh orange juice
2 tablespoons fresh lemon juice
1/2 cup heavy cream (forget the diet)
1/2 tsp.dried thyme
1 tsp. grated orange rind

Season pork chops with salt and pepper.  In a large skillet, melt butter over medium high heat.  Add chops and cook, turning once until slightly pink in side and slightly browned.  About 6 to 8 minutes.  Transfer to platter and cover to keep warm.

Add sliced shallot to pan and saute' 1 minute  add juices, stirring with a whisk to loosen any browned bits. Bring to a boil and cook until liquid is nearly gone 1 to 2 minutes. Whisk in cream. Boil until sauce reaches desired consistency.  Season with salt and pepper.  Whisk in thyme and orange rind.  Spoon sauce over  chops and serve.  Enjoy!!

Note:  I added brown rice and zima orange tomatoes with chives, oil and vinegar to compliment this dish.
