Smothered beef with onions, potatoes, cheese and peppers!

If you like lots of everything smothering chicken or beef this will meal will appeal for sure.

My pantry is pretty well cleaned down to a very minimum and my refrigerator has only milk, butter, a few eggs and a bit of cheese..Condiments are down to basic and all the almost outdated items gone so today I made, using the last of what I had left a smothered beef dish.   I had to cave in and buy some lean natural beef to make the meal complete.  We're having a smothered with everything easy meal. Note:  You can use ground beef, chicken or turkey and fry loosely too!  We enjoyed having the large patties.  You choose!  Happy Cooking from my kitchen to yours.    Enjoy!

1 baking potato (microwave a few minutes) skin on (sliced after microwaving)
3/4 lb. all natural ground beef(shaped into 2 large patties)
2 onions sliced thin
1/2 lb. shredded cheddar and Vermont Cheddar cheese
2 tablespoons canola or olive oil
mushrooms optional
green and red peppers optional ( I used some peppers I had cooked) Sliced pepper rings would be nice too!

In a large pan, saute onion until slightly browned, add sliced potato, salt and pepper, turn occasionally until browned and crisp on each side..  In a separate pan, saute beef with a slight amount of olive or canola oil.  After cooked to medium transfer beef onto onion /potato mixture..Add shredded cheese. Cover until cheese melts..Enjoy!

In Canola oil gently saute' 2 sliced onions..Add 1 baking potato(leave skin on) sliced in 1/4 inch sections. Add red and green peppers sliced thin.  In a separate pan saute beef patties in a bit of oil adding salt and pepper .  When onions, potato and peppers are  tender add beef patties and cheese.  ( I used cheddar)
