Sticky beef meatballs!

I’ve made sticky chicken with cubed chicken but never with ground beef so today’s recipe is just that.  Sticky chicken meatballs!

They’re good!  I have some for leftovers tomorrow.  I only drizzled the sauce on what I felt we’d be eating today.

***NOTE:  Ps.  You can substitute ground Turkey or chicken in this recipe!










1 lb. beef
1/2 cup breadcrumbs 
1 tsp.  Salt 
1/4 tsp. Pepper
1 egg beaten
1small grated onion or 1tsp. Onion powder 
1/2 tsp. Garlic powder 
2 tsp. Soy sauce
2 T brown sugar 
***Chopped Chives or scallions for garnish
***Sesame seeds for top

Mix  (but chives and sesame seeds)above ingredients just until incorporated.

On a medium size cookie sheet spray with cooking oil.

***Set oven temperature to 400°.

My meatballs are about the size a tablespoon of meat.

Place meatballs on cookie sheet and Bake for 15 to 20 minutes until
Slightly browned.

While meatballs are baking make the sauce.

In a small dish put

1/4 cup rice vinegar 
2 T honey 
2 T brown sugar 
2 T soy sauce 
1/8 tsp. Hot sauce
2 T water
2 T cornstarch 
Whisk all until blended 
Steamed rice (I used minute rice) for convenience 

In a small pot place sauce ingredients 
Cook on medium stirring constantly with whisk until thickened 

Remove meatballs from oven and place on cooked rice.

Drizzle sauce over meatballs.  Garnish with chives and sesame seeds.

Hasselback or Accordian potatoes





4 medium (Russet)baking potatoes washed and peeled
1/4 cup (1/2 stick softened butter)
1 clove garlic minced(I used garlic powder)
1/2 tsp. coarse salt(I used Kosher Salt) lots :)
1/4 tsp. pepper

Preheat oven to 400 degrees


Combine butter, garlic and salt and pepper in a bowl.


Note:  If worrying about fat content rub olive oil on potato when baking instead of butter. 

Slice potato crosswise, leaving about 1/2 inch at bottom still attached.


Smear butter mixture all over potato carefully working in between slices and coating all sides


Repeat on all potatoes.


Place potatoes on non stick baking sheet and bake 20 minutes or until golden brown.

Meatloaf again!













I just love playing with a meatloaf recipe.  My mom would never nor would my mother-in- law but me I’m adventurous….

Today I went against it all and used dried spices for the first time.  Shame on me !   

Seriously.  My original recipe calls for basic ingredients and fresh chopped onion for sure but today no to that and I added garlic powder which mom never did.

I made 2 loaves and a small mini loaf for our dinner today.  

The others I carefully made into loaves, wrapped in clear wrap and then freezer paper and labeled for later use.

Below are ingredients for 2 lb. of beef.

2 lbs. 93% beef
1 T salt
1tsp. Onion powder 
1 tsp. Garlic powder 
1 T dried parsley 
2 eggs beaten well
1/2cup milk
11/4 dried Panko breadcrumbs 
Chili sauce to coat top of meatloaf.

Bake 350 uncovered for 1 to 1/2 hours or until
Meat thermometer says beef well.

Top with chili sauce, ketscup or today I used a Thai sweet and spicy sauce.   So yummy!

Served with Beef r Roni and green beans.

Cavolfiore sauce with chicken


My version of Barbara’s ( one of our”We like to bake and cook group” foodies cavolfiore  sauce .  I used steamed riced cauliflower and sauté chicken with my homemade marinara but it was all her ingredients .


***( substitute your favorite Jar sauce if you like)

She used steamed cauliflower florets and anchovies whereas I
do not like anchovies so I substituted chicken,

The cauliflower had a slight crunch which both hubby and I enjoyed.  Served over spaghetti!

I will make it again!

1/2 bag riced cauliflower or 1/2 bag cauliflower florets ( steamed)
1/2 diced large onion
3 cloves minced garlic
1/2 quart marinara sauce 
Olive oil
2 thinly sliced boneless chicken breasts 

Sauté chicken in olive oil with salt and pepper in a medium skillet.  Just cook enough to slightly brown on each side then take off heat and place a lid on the chicken to finish cooking with heat off.

Note; I have found my chicken to be very tender using this method.

Place slight amount of oil in pan.  When oil starts to sizzle add diced onion and allow to sweat.  Add garlic and stir.  Add steamed cauliflower and sauce stirring continuously .

While sauce is simmering cook spaghetti to desire tenderness.  Drain.
Reserving 1/2 pasta water.
Toss with sauce, pasta water if sauce is too thick and top
With Parmesan and  freshly chopped basil.

How to make an easy meal with ground beef

Updated photos 3/19/2023 and ingredients.

Today’s Easy beef,cabbage with diced petite tomatoes and onions, salt and pepper.  I did not add sauerkraut to this recipe .
Cabbage and onion were sliced very thin.  Enjoy!




Hi:

Dinner! I  Seasoned (salt and pepper) ground beef  placed in a pot with a small amount of vegetable oil and added a whole sliced sweet onion.  After it was browned I placed it in crockpot with 1/2 cup sauerkraut , 1/2 head sliced cabbage and some of my marinara  sauce.  It took approximately  4 hours on high heat.  6 hours on low.

Note:  you can make this meal in a Dutch oven on top of the stove.  Varying heat.  Cover to allow cabbage to cook.

Over Freshly mashed potatoes.  Sooo yummy! Salt and pepper to taste!

And if you dare to add a green salad and some fresh bread and butter.  Mmmmmm mmmm good !
