Green Beans and Potatoes

I didn't get any photos of this side dish much to my dismay but I can assure you that it is a dish you will want to try. 



 

 We love sauteed green beans and potatoes.  This side dish was a favorite of mine and if you can get some nice fresh green beans this dish would be a nice addition to any meal.

My hubby's aunt made this dish as well.. She would do it a little different and it would be served as a cold side dish. After the beans and potatoes had cooled she would add a mixture of olive oil, garlic and vinegar and either serve it room temperature or refrigerate it for several hours.  This cooled version is a wonderful  addition to a hamburger or deli sandwich.




1 lb. fresh or frozen green beans
2 medium potatoes (pealed and cut in small cubes)
1 or two cloves garlic (minced)
1 tsp. parsley
salt and pepper to taste
about  1/3cup to ½ cup olive oil
salt and pepper to taste
red wine vinegar (optional)

In a medium size pot place beans and potatoes in salted water and cook until tender. Note:  Make sure potatoes are in small cubes.  Bring to a boil and cook on medium heat until fork breaks through potatoes and beans are tender..  Drain

In a medium pan place approximately 1/3 cup olive oil.  Place beans and potatoes and stir, add minced garlic and saute' on low heat for a few minutes more.  

This is one great side dish!
