Oven to table chicken patties with peppers, onions and spinach!

If you prep your ingredients tonight this meal will be ready in approximately 45 minutes for tomorrow's dinner.



1 lb. natural ground chicken
1/2 cup bread crumbs
1 clove garlic minced
1 tsp. parsley
1/4 tsp. Italian seasoning
1/4 cup Italian cheese
3/4 tsp. salt
1/4 tsp. pepper
1 egg beaten
1 large red pepper sliced
1 large sweet onion sliced
1 bunch baby spinach (washed and stems removed)optional

Mix together with hands

Form into small patties


I used two separate pans to bake and then combine together

Clean and remove stems.  Sauteed separately

Finished and ready to serve.  You can make this even easier by making a sandwich on a large roll!



Prep:  Before you go to bed tonight in a large bowl combine chicken, garlic, bread crumbs, parsley, Italian seasoning,Italian cheese, salt and pepper.  Beat egg with about 2 T cold water.  Add to chicken mixture and form small patties. Cover and refrigerate.

Slice onion and red pepper (place slices in medium size sealed baggie) refrigerate

Wash spinach and drain (place in sealed baggie) refrigerate*

Meal time:  Place olive oil in a baking dish along with peppers and onions, salt and pepper to taste. Bake 400 degrees until tender and onions are translucent.(Cover with alum foil to keep warm).  Lower heat to 350 degrees and place chicken patties in oven and bake until there is not any pink showing approximately 30 minutes. Remove from oven and place chicken patties with onion and peppers, toss slightly and serve.

*Optional baby spinach (in a pan place 2 T olive oil and 1 clove minced garlic)on low heat.  Add washed spinach and cook until slightly wilted.  Toss with rice or serve over rice. You choose!
